You Can’t Eat Money

Evening and happy humpday! Even though this is a four-day week, it definitely felt like a steep climb towards Wednesday.

This morning I did not want to get out of bed.  I snoozed and snoozed, finally rousing myself at 7:20 to put a pot of coffee on.  Showering at night saves so much time! I made a bowl of Tutti Frutti Nutti Oats and climbed back into bed to watch the news.

  • 1/2 cup oats made with 1/2 cup water
  • 1 tsp chia seeds
  • 1 tsp unsweetened coconut
  • 1 banana
  • 2 dried apricots
  • 1 scoop flaxy peanut butter (almost finished with the jar!)
  • cinnamon
  • stevia

I was pretty busy today, but I managed to snack on a Fuji apple during a calm moment.

At 1, Danielle and I took our lunch outside to eat.

I had a bowl of Moroccan Gazpacho with pita and a small salad with romaine, mushrooms, green beans and tomato (they’re under there, I promise!).

This soup is a keeper! Instead of using pine nuts (as the recipe calls for),  I used chopped almonds.  And because I’d made this soup on Monday the raisins were nice and plump, and the sweet spicy flavor was really brought out.

When I got back to my desk, I had a vegan energy bar. So much for waiting until later in the afternoon! It did hold me over for the rest of the day, though.

After work, Leslie and I met at Galaxy Global Eatery for dinner.  I’ve passed it hundreds of times and had no idea what it was.  Even when inside, Leslie and I couldn’t quite figure out what kind of atmosphere GBE was going for! It was sort of like a combination dive bar, old-school diner, and health-food restaurant.

We shared an order of sweet potato tamales with cilantro butter, which came out less than two minutes after we ordered them.  They were okay, but I definitely prefer Peacefood‘s. The cilantro butter definitely made the dish!

Leslie and I ordered the same entrée, thte Starlight Caesar Salad with romaine hearts, frissé, fried caper blossoms, cornmeal crusted tofu, avocado, lotus crostini & vegan hemp caesar dressing.

Galaxy Global Eatery may not have been my favorite restaurant, but the company made it memorable.  We’ll have to get together again soon, Leslie!

I was more than ready for dessert when I got home, and headed straight for the freezer before I even took off my coat.  I had Naked, Mint Galactica, and Chocolate Hazelnut Fudge Coconut Bliss Ice Cream, eaten straight out of the carton, topped with chipotle and cardamom hot fudge.

It’s almost 9:30, and my goal is to be in bed having showered, made tomorrow’s lunch, watched Grey’s Anatomy (from last week) and practiced light yoga by 11.  Doable? You know it!

  • Ummm… 11? ;) Nah, it’s not every day, I think it’s me. I appear to have a very low tolerance for stress. :p

  • 11 p.m.? HA! I haven’t seen 11 p.m. on a weeknight in MONTHS! There’s something intriguing about those tamales, but a bummer that they came out so quickly. You just KNOW they were pre-prepared!

  • I have very little tolerance for stress so my average day is usually pretty high! For some reason though today I am feeling around a 7. I am calm for a change. :)

  • You always try the yummiest looking restaurants. I have to ask – where will you be going for restaurant week?

  • I’ll usually go from being super stressed out at one moment to completely calm the next. I guess I should learn to relax :)

  • Stress. Check. Most days 10 out of 10. I love subbing almonds into my pestos. I also like to make a version that subs in parsley. Super fresh tasting and soooo much cheaper than basil!

  • Yum, that Moroccan gazpacho looks delicious! I will have to try this one soon. :)

  • I’m pretty lucky, for now. My stress level is about a 2 to a 3 on most days. But when I was working in law, easily an 8. And when I had colicky newborns, about a 12!

    Love that ice cream sundae!!!

  • Avg day’s stress ranges from 2 to 10. Depends on how much yoga i have to teach, childcare arranged, food needs to be prepared or not, if skylar is having a good day :) never know.

    i just bookmarked that soup recipe, totally my style! my days aren’t that stressful – i think the most stressful part is those 30 minutes before i need to leave for work, when i realize i have to do my makeup, hair, get dressed, and clean up the kitchen…which i could have started earlier if i wasn’t sitting at the computer reading blogs. like now. :)

  • I’ve been showering at night ever since high school, and I would never do it any other way. Sure, sometimes my hair needs a little work after having been slept on, but the extra sleep is totally worth it!

    My average school day is something like a 7. When there’s a test or project due, it’s more like a 9 or 10. Sadly, those cruel days come at least once a week.

    Two thumbs up to night showers – I couldn’t imagine trying to take a shower in the morning. I’d freeze my hiney off!!

    What a fun blogger dinner! That tamale sounds like it could be amazing, too bad it wasn’t that great.

    My average day = 5 but there are some days that are OFF THE CHARTS! Hope you have a stressfree day :)

  • Oh my gosh– I LOVE, LOVE, LOVE tamales! I want to try to make them, but they really intimidate me! Have you ever made them yourself?

  • gahhhhh your ice cream concoctions literally make me want to lick the screen. soooo good! and i am pretty sure coffee is one of the only things that gets me up in the morning. for real.

    average day…i would say between a 5 and 7 – maybe nearer to 7. unless something tragically goes wrong, i am usually in a good mood :)

    I handle stress pretty well, most of the time very low stress , I try to nt stress, life is too short, and there is always someone with bigger problems than me, I try to keep positive : )

  • Hey chica! Sorry I haven’t commented in so long, I had an insane month!

    I hope as time continues your work routine gets easier! It just takes lots of careful planning :)
    My days stresswise average a 3. Towards the end of the semester its an 8. Which is awful. I am only taking 14 credits though this semester, so hopefully I will be less busy with school!

  • Galaxy is nearby my office so I’ve passed by there a bunch of times and always wondered what it was like! Your salad sure does sound super interesting even if it didn’t rock your world. Might need to check it out!

  • Looks awesome! I love the sound of that ice cream and sweet potato tamale. yumz!! My day varies, some days its an explosive 11. Most days thoug hon average about a 6 or 7. But Ive been working on destressing alot. Or trying to! Take care sweetie!

  • For me my stress level is usually around a 8 sometimes 10 when I’m at work (that’s so bad!) we are always SO busy and I never stop running around until break time!

  • When I used to teach, my stress level was often about a 14. Of course, I taught at an all boys’ high school and I taught anatomy and physiology. It’s really difficult to talk about body parts with high school boys without being interrupted with crude comments, icky jokes, etc.

    Now? Well, I’m a stay-at-home mom for a bit, hoping to resume teaching again (most likely in Fall 2011, realistically, although, after reading the above paragraph, I’m not sure why I want to return! I kid…it was great on most days). So, most days, my stress level is a lovely 1 or 2 (my kid is usually pretty well behaved, despite what my recent posts might say).
