In lieu of a regular post tonight catching you all up to every single thing I ate in the past 48 hours, I‘m going to take this opportunity to invite you all to give my mom a virtual toast in honor of 20+ years of time and hard work to make the world a better place. I know that’s a bit vague, but trust me: she’s the tops!
Because this is a food blog, I’ll share with you the best new recipe I’ve come upon in a while: Food & Wine’s Barley-and-Spinach Salad with Tofu Dressing. It has the perfect balance of grains and veggies, sweet and sour, chew and crunch. And it’s easy to make!
I’ve also been enjoying this fabulous assortment of Futters Nut Butters and Chocolate Tortüz that Liz sent me a few days ago. The Tortüz (vegan dark chocolate, caramel & pecans) were long since devoured by Ari and me, but these nut butters will be pleasing our palates for a while to come! The chocolate hazelnut spread really takes the dessert plate to a new level. Thanks again, Liz

Have fun! I don’t think I’m doing anything special this weekend… next weekend is my Birthday however.
This Monday is actually a “floater” for us, meaning I can work it and keep it as a leave day. I think that’s what I’m going to do and save it for a trip to visiy my mom next month.

I have a six day weekend because of all of this snow sha-bam! I intend to be in the kitchen cooking a lot, working on scholarship essays (i dont know if i can write another) and then reading my stockpile of books ive checked out from the library.

My daughter turns two on Friday, so most of the long weekend will be spent indulging in wretched excess…too many presents, too many sweets, too many DVDs. I think you’d be proud of me, however, that I’m making my girl chocolate-zucchini cupcakes for her birthday. (I’ve got to sneak the veggies into her and my husband, since they are both veg-phobes.)
