Guess who went to bed at 9:30 last night? Yep! But apparently that wasn’t enough sleep for me, because when I woke up this morning to run my 7 miler, I just couldn’t get out of bed. I ended up sleeping until 7AM! I’ll admit that my fear of running such a long distance on the treadmill made it easier to pull the covers over my head and go back to bed! But tomorrow… tomorrow I will get my run in.
Breakfast was an old favorite: a yogurt mess with 0% Fage, a crumbled Blue Bran Vitamuffin, banana, chunky peanut butter and honey. Never gets old!
At work I snacked on an apple and orange…
…and had a bit of an unconventional brown-bag lunch: shirataki noodles with a Gardein Tuscan Breast, Black Cherry nonfat yogurt, and mixed greens with tomato and raspberry vinaigrette.
I heated the noodles and the “chicken,” and mashed a laughing cow wedge on top. Hello fake chicken parm!
Danielle is pretty tolerant of my interesting food choices.
My snack drawer was running pretty low (I’ll give you a tour once I’ve re-stocked) so I had to dig into my last “bällchen” from that I got in Germany eight months ago. It nearly cracked my tooth!
I debated whether or not to go to the gym after work, but I decided to try again in the morning and conquer my fear of the closet instead. Please don’t judge me… observe Ari’s tidy area, with clothes on hangers that neatly keep to themselves.
Now on to my space…
This isn’t even supposed to be my shelf!
Doesn’t your food processor live at the foot of the bed?
Yes, some people would call this “hoarding,” but there isn’t any other place to put this stuff!
I’m really not a slob by nature, and having clutter around really stresses me out. Things are hard to find, clothes are wrinkled, and there just isn’t as much space as there could be! So, in honor of The Happiness Project and my promise to Ari, I cleaned the closet.
It’s not perfect, but it’s a start! I even cleared Ari’s shelf out again.
Satisfied with my hour of domesticity, I decided to make myself a nice dinner. While I was preparing my meal, I snacked on some baby carrots to hold myself over until it was ready.
I made Gourmet’s Buffalo Salmon with Sautéed Watercress, substituting almonds for pine nuts. I also had a slice of toast.
Tempted to save time and money, I almost used a frozen salmon patty from the freezer, but I ended up stopping at the store for a fresh filet. Boy, am I glad I did! It was tender and felt special and indulgent, even though I made it for myself at home. There’s nothing wrong with making yourself a nice dinner every once in a while! I tried out my new fancy spatula; when you squeeze the handle it opens like tongs so you can grab things easily without making a mess. Thanks again, Mom & Dad!
I enjoyed a dessert plate while watching Grey’s Anatomy for the first time on TV; I usually have to watch it on the computer weeks later! The plate had a medjool, apricot, prune, fig, 85% dark chocolate and chocolate almond butter. Holy yum, this is going to make for one fabulous batch of oats in a jar!
I’m off to get ready for bed… wishing and hoping I’ll get up in time to run tomorrow! I can do this…
Does your stress level lower over the weekend? Are extracurricular chores just as difficult for you?
Don’t forget to ask me anything!

Love the organized closet. I would have loved to do it for you. My most favorite thing in the world to do is clean and organize a closet. Because I have mental problems, clearly!
I agree on the salmon, there is nothing like fresh versus frozen.
My closet is starting to look the same! The husband and I live in a pretty small house so space is limited and I store kitchen appliances in random places…
That fake chicken parm looks really good!
I’ve pretty much given up on being a morning workout person. The days I manage it I love it, but it’s a rare occasion.
Holy YUM!
All your eats amaze me… Hahaha. I loved specially your breakfast bowl, hehe
Well, about waking up a bit late… Well, your body probably know what he needs. If you feel tired, get some rest! Right?!
;D
Brazilian XOXO´s,
Gabriela
Great job with the closet! You are so right to fix a nice dinner.
Sometimes it’s nice to clean closets with a friend–makes the job more congenial, and there’s someone to offer keep/ditch opinions–might even want something you’re ready to give away. You have to return the favor though.
I love your yummy dessert plate! I think I need some chocolate almond butter in my life now too.
This weekend my stress will probably be at a high. :/ I have tons of homework, a project, a 4 hour dance practice, and some scholarships. God help me. I will prevail though! I always do…somehow. Gosh, I can’t wait for a break.
I also need to clean my room. Good job with the closet. I wish I had the time/motivation to do that!
Oh, and now I am craving oats in a jar. Thanks.
Haha, kidding. No harm intended. Only love.
I love organizing my closet!! It always gives me such a sense of accomplishment when I’m done.
Your dessert plate looks delish!
Your closet, pre-clean, is what mine would probably look like post-clean. I’m not kidding when I say it’s a scary scary place!!
<3 <3
Oh my I love the food processor behind the bed. Hilar. Apartment living at its finest!
Loved chatting with you yesterday- you brightened my afternoon !
Hope your run went great today!!! Good job tackling that closet, now you don’t have to worry about it over the weekend
I haven’t tried that “chickn’ parm”, is it good???
my closet is the bane of my existence. i have no problem folding clothes, but i HATE hanging them up.
sigh. at least i cleaned the kitchen last night.
I have 2 vita tops left from my trip to NY… I want to eat them but I want to save them (for what?)
I am such a neat freak when it comes to my kitchen (major food hoarding problem, but my cupboards and fridge are all aligned so it’s like a grocery store). The rest of my apartment has piles of stuff everywhere because I don’t have anywhere to put it, and also I need things all the time- currently sitting on the sofa with 4 notepads, 3 books, a binder, calculator and 3 pens next to me. No, I am not in school. Lol. The one chore I put off as long as I can is laundry- HATE IT!
Congrats on the closet clean out!
I definitely love to unwind in the kitche, hence why, in my work out clothes after a 9 pm dinner, I still wanted to stay in the kitchen and make peanut butter cups when I should have been getting ready for bed. Oh domesticity indeed!
Hi Katie!!!!!!!!!!!!!!!!!!!!!!
Hope your day is great and tgif !!!! So glad weekend is here!!!
So glad you got sleep last night and went to bed early, I wish I did but I was watching the Olympics : p I think after the olympics are over I will work on getting to bed earlier!
I love the breakfast mess, vitamuffins rock and I never tried the blueberry kind, i will have to!!
Wow that salmon dish you made looks amazing!! I love salmon so much, I need to get it more, I like it fresh, pricey like you said but worth it here and there to treat yourself!!
I can honestly say my closet used to look like that, but the past couple years I turned into a little neat freak, lol!
Have a great weekend! xoxo
I have weekends that at the other end I feel relaxed and weekends that I don’t.. this weekend is a stressful one… we have jam packed way too many things into our weekend to have time to relax.. not good.
