Rainy Days

It’s funny: right after I declare myself a morning person, I have had the hardest time getting up these past two mornings! It also seems that I’ll be blogging in the AM occasionally.

On Monday night I channeled my inner Betty Crocker and baked Elana’s Gluten-Free Rye Bread with Flax.  I first discovered Elana’s Pantry a year ago when I was  looking for vegan chocolate recipes to make for my Blogger Secret Valentine.  The candy turned out really well- a lot of it involves almond butter, check it out!- and I’ve been a devoted fan ever since.

I’ve never made bread with almond flour before and I was expecting it to be dense and heavy but this was light, fluffy and was the best rye bread I’ve ever had.

Part of the reason I had a hard time getting up yesterday (and today as well, for that matter) was that it was pouring.  I was never very good at science, but I know that barometric pressure can really throw you off! I didn’t have time to log my two mile run at the gym, and in fact didn’t even have time to dry my hair.  Definitely ponytail weather!

For breakfast I had a bowl of yogurt with 0% Fage, a banana, and a scoop of Maranatha Cashew Butter; I also had a slice of rye bread with Smart Beat and honey.  I love eating breakfast in two parts!

I had a meeting during lunch yesterday so I made sure to eat both of my morning snacks (orange + apple) before.

Lunch, at 2, was leftover Soba w/ Grilled Shrimp atop a bed of spinach and carrots; I also had a mixed berry yogurt.

Late in the afternoon I snacked on a Hickory Smoked Primal Strip.

After work I met my friend Ilena at the movies to see Shutter Island. We’ve been planning this forever, and it did not disappoint!  I LOVE twisty thrillers.  Ilena and I always see scary movies together; speaking of being 15, when The Ring came out and we were in tenth grade, Ilena and I went to see it on Halloween.  It was great, but scared the you-know-what out of me.  I had to spend the night on my parents’ bedroom floor! Fifteen is a little old for that, right? Apparently not!

I didn’t get home until after 9, so I made the quickest meal possible: sweet potato w/ cinnamon, agave & maca, rye bread w/ Smart Beat & honey, sauerkraut, and a Sunshine Falafel burger with hummus.  It was a pretty brown dinner!

The falafel burgers were a little disappointing.  I was expecting them to be amazing since I’ve heard such great things; just not as good as the real thing.  It was pretty dry, and needed something… lemon? I guess I’ll just have to get a “real” falafel soon!

Well, off to get ready for work.  It’s still raining, and everything still feels a little off.  Hopefully I’ll have time to dry my hair this time! Have a great day :-)

  • I rented the ring at some point, and watched the first 3-5 minutes and turned it off because I was too scared. I am SUCH a baby!!

    Loved Shutter Island though, Leo’s acting skills blow my mind.

  • I bought falafel balls at Costco and they were quite dry, too, as were the ones I got at a local Mediterranean restaurant. :( Maybe one day I’ll find out what all the fuss is about.

  • Rain really does ruin everything. I’m just happy because it’s melting all of the snow that’s sticking around here and making parking a mess!

  • I hate ponytail weather… so depressing! But it’s supposed to turn to snow tonight, so maybe you’ll have no troubles getting up tomorrow. ;)

  • Love the way the honey is oozing off the rye bread…that is SO the right way to eat honey (I’m German I would know…we love honey and homemade bread haha).

    Sorry the falafel burger wasn’t good, I’ve had my fair share of cruddy falafel. But if you are ever in DC, remind me to give you the name of the best falafel place like ever. It made me a total convert!

  • Uh oh are the Sunshine Burgers “overrated?” I have been trying to find them but no luck. Maybe I should just go get some real falafel too?

    The rain is headed here too…defintely a ponytail day.

    That bread looks great!

    I watched Shutter Island friday night, and I definitely agree it did not disappoint. One of my friends went to see it later on and fell asleep during the movie!!! I couldn’t believe it!

    I love falling asleep to rain its so relaxing but I hate waking up to rain! Rain just makes me sleepy.

  • I just spent 15 minutes browsing the recipes on Elana’s blog- everything looks incredible!

    I had no idea about the bariometric pressure…explains my sluggishness today. I want some summer sun!

    Sorry about the felafel flop- I love felafel, but haven’t heard great reviews about the Sunshine patty.

    getting up in the rain is near impossible for me — bed is just TOO cozy.

    sweet potatoes are among my favorite quick and cozy meal components, just so good.

  • My job made me a morning person but it’s still never easy to get up at 6. I used to sleep in all the time when I was in school but now on Saturdays I can’t sleep in past 7:30.

    Yum I’ve seen almond flour at TJ’s and wanted to try it. Good to know it doesn’t change the final product too much!! Was the movie SUPER scary? I love scary movies, but really can’t do them too well. I just get too dang freaked out!

    Oh the 18 rabbits Im excited to try that bar, I was so excited when I found it!!! I am hoping to try other flavors too, that one sounded delish!!!

    Starla is great!! How sweet of you to ask!! She is doing AMAZING with potty training, we are really lucky!! I have been really consistent with her and that is key!!! She is sleeping and snoring right now, lol!! She eats dinner soon, its too funny , I will say the magic word ‘ Hungry Time’ and she will pop up out of her deep sleep and start jumping around like crazy! lol! She is the cutest!!
