This morning I had some things to do before work so I woke up at 5, headed to the gym for 30 minutes on the elliptical, and came home to git ‘er done. I had a delicious breakfast cookie waiting for me when I got home; I made a similar mixture last week and it was so good that I had to try it again!
- 1/3 cup oats
- 1/2 mashed banana
- 1/2 scoop vanilla protein powder
- splash skim milk
- 1 tbsp chocolate PB2
- 1 tsp chia seeds
- toppings: goji berries, Greek yogurt, pumpkin, dried fig, agave
I brought an orange and apple to work… I’m always paranoid about my apples being too noisy, so today I sliced it beforehand. Did the trick!
I also had a slice of Gluten Free Bran bread… I love more each time I have some! This recipe is a keeper.
My lunch salad did a good job of cleaning out the fridge…
In the mix:
- mixed greens
- steamed broccoli
- celery
- grape tomatoes
- goji berries
- dried cranberries
- TJ’s Vegetable Marsala burger (I missed these!)
- Goddess dressing (mixed in at work)
Danielle had bought a package of Lemon Poppyseed Heart Thrive bars and wasn’t a fan, so she gave me the remaining bar. I love these! They were great snacks when I was in Russia, and just as good today.
Dinner required little planning, but worked out perfectly.
I made SELF’s Creamy Lemon Shrimp, halving the recipe and making a few substitutions:
- Greek yogurt in place of plain yogurt/ sour cream
- celery in place of chives
- agave in place of sugar
- spinach in place of arugula
It may not look so pretty, but I really enjoyed this! It was healthy, voluminous, and filled me right up.
I packed half for lunch tomorrow; I love when I don’t have to think about what to prepare for the next day.
Dessert was Banana Soft Serve with a melted square of Bakers chocolate.
A superoon may have also sneaked its way in

I’m a little late in responding to the run you had and the happiness project, but I really wanted to get a few words out!
I’m not a runner so I don’t know how helpful this is, but I really find taking a break sometimes works. I know you have a 13 miler coming up, but perhaps after that, it might work to take a break and pursue a few small other interests you have and see where it takes you. You may want to start running again, and that’s good because it probably means you do want to keep doing it. I just think a break could be a good thing, instead of something to punish yourself over!
P.S. That creamy lemon shrimp really makes me want to cook again during my free time!

The TJ Masala Burgers are the best! I used to be addicted to them until I realized I had to stop eating gluten. Such a sad, sad day!!

why have i never thought to slice my apple before work? i crunch away at one daily, and in addition to the noise, there is the juice running down my hand factor.
btw, on yesterday’s post – i just wanted to tell you that i think you’re being incredibly mature and level-headed about the whole situation. whatever we do in life – not just running, but everything – should be done for ourselves. running is something you do to keep your body healthy, and if it’s not having that effect anymore, both mentally and physically, then you’re right in reevaluating. maybe you just need some time away, not only to remember why you enjoyed it in the first place, but also to let your knees heal a bit. taking a break is totally ok! we don’t have to be runners all the time, or yogis all the time, or even perfect healthy people all the time. going through phases is completely normal. perfect timing for our month of yoga, right?

I also have that dilemma with apples, I tried to eat one the other day in class (most people eat lunch during class because it’s long through lunch) and I couldn’t even enjoy it I was so worried about the noise!

hahaha i’m ALWAYS afraid of my loud apples where ever i am! i think thats a big reason why i’m obssessed with cutting them. i’ve even got to the point of cutting them at work with a plastic knife. yep not fun.
that shrimp recipe caught my eye as well! i think it may have to make an appearance soon. soo glad gossip girl is back, i’ve missed it.

Def take the running one day at a time. It’s the best way to do it. If it hurts, take a few days off and actually, if you’re really worried, i don’t know if you have access to a gym/pool but you can try aqua jogging. I did it to sub out my running when i hurt my calves years ago. worked like a charm!

Yeah, I totally can’t deal with cooking dinner every night AND packing up separate b’fasts and lunch to take to work the next day, so I always like to cook a couple servings at a time, then lunch is a no-brainer.
I was all set to go to bed now, but then I looked at your banana soft serve and…maybe I’m not going to bed now anymore.
