Breakfast was inspired by Brandi! I saw her banana split oatmeal the other day and couldn’t wait to try it out myself.

I topped my banana with 1/2 cup oats cooked in 1/2 cup water and a little rice milk and cinnamon, 1 prune & 1 fig, warmed frozen strawberries, agave and peanut butter. De-lish!

My throat hurt since I woke up, and since I didn’t have any cough drops thought these peanut butter ginger chews would be the next best thing. These are so good… I love anything with ginger.

Of course, good ole Vitamin C can’t hurt, either.

Desperate for vegetables, I grabbed this aging bell pepper on my way out the door. I recently figured out a better way to cut a pepper, and thought I’d share it with you guys!
How to Cut A Pepper
Lie your pepper on its side.

Slice off the top and bottom, or “hat” and “butt” if you will.

Pop the stem out so you can eat the hat.

Slice the body from top to bottom and remove seeds and white insides.

Unroll.

Slice and enjoy!

Lunch was a treat! Hannah met me at one and we picnicked outside.

I had sweet potatoes leftover from Passover (one of my favorite dishes of.all.time.), leftover salmon and couscous with cherry tomatoes, and a green bell pepper.

I LOVE being able to eat outdoors again!

After work, Danielle and I walked through the Park.

Everyone was out, enjoying the gorgeous weather!

We may have chased a Pug or two.

We met some people for Happy Hour (Budlight & 1 Vodka) for a little while, then I went home to make dinner and watch Grey’s Anatomy with Ari. You may think it’s strange to fantasize about a sandwich, but I was literally thinking about how good it would be all day long.

I had a toasted Ezekiel English muffin with a spicy chik’n burger (these remind me so much of college), an egg, and slice of Asiago cheese. And bring on the ketchup! I also had a juicy grapefruit.
Well… I’m in a bit of a rush now, I have yet to pack my bag for the weekend! Have a fantastic day, and happy Easter if you’re celebrating!

New York in the spring is SO beautiful!!! Lovely!
Never have thought of the top of the pepper as “the hat,” but that makes sense, lol.
Wow! The park pictures look gorgeous.
I LOVE chik’n burgers with egg. I’ve never tried it with asiago cheese, but that has to be delicious.
I love that you called the top and bottom the “hat” and “butt” … I will never look at a bell pepper the same way again. :p
<3 <3
That bagel sandwich looks really good! All I could think of when looking at your pictures of the bridge in what I assume is Central Park was how many times people died near it on Law and Order.

I don’t like bananas, but that’s a really cool way to eat them!

i love how the world emerges when it’s wonderful out, it’s my favorite part of spring.
Just checked out your blog, found it through Erin at Care to Eat. I love that banana split oatmeal breakfast! I think I just may make that for breakfast when my son has a sleepover. Then the ginger peanut butter chews…oh those sound so good!

Happy weekend to you
the weather and outdoor pics are glorious, katie!
re the insoles, so, i am thinking that i am preferring my harder/firmer ones but i really fear i have to get customs made as my plantar fasc just keeps bugging in!
re your ITB injury…those can be so persistent, I would say with yoga to try any kind of stretches that push your particular injury up to “it’s edge” and then back off. Stretching it, getting into those muscles can help, but then again for some ppl, rest is better. Just let your pain be the guide. so sorry you’re suffering!
That banana split oatmeal looks awesome! Such a cute breakfast. Hope your throat feels better!! Fun lunch out- the sweet potatoes look so good. And you are just such a pretty lady
