Hi guys! This is going to be snappy because I’m a gal in desperate need of beauty sleep. I do have a recipe for you, though! It’s a pretty good one, if I do say so myself.
Breakfast was an old favorite that knows no seasons.
- 1/2 cup oats cooked in 1/2 cup water
- splash almond milk
- 1 banana
- pumpkin
- key lime curd
- almond butter
- cinnamon
- stevia
Washed that all down with The Secret Diary of A Call Girl… it was a pretty classy meal
I ran a few errands, then took a stroll through Central Park, walking from the East Side to the West.

You can see where the East Side and the West Side merge. I will always be a West Sider
I was really thirsty, but hadn’t brought my water bottle. I did have a juicy grapefruit that quenched my thirst, but got me quite sticky!

When I got home, I was hot and mighty hungry, so I whipped up a quick, healthy salad. It’s going on the recipe page!

It’s my new favorite. It’s packed with protein, healthy fats and fiber, and is delicious and incredibly filling. You probably have most of the ingredients in your pantry!

LVP-style Mediterranean Salad
Tuna Salad
- 3-oz can tuna, packed in water
- 1/2 avocado
- 1/8 cup dried cranberries
- 1 T chopped walnuts
- 1 oz goat cheese
- salt + pepper to taste
Dressing
- 1 T olive oil
- 2 T balsamic vinegar
- 1 t agave nectar, honey or maple syrup
- 1 tsp large-grain mustard
2 cups leafy greens
Mash tuna, avocado and goat cheese together in a small bowl until well combined. Stir in nuts and cranberries and season with salt and pepper. In a salad bowl, toss greens with 1/2 dressing. Top with tuna salad and drizzle with the rest of the dressing. Enjoy!
Serves 1
Also had a couple chocolate chip/almond-stuffed prunes. So. good.

Later in the afternoon, I met the little redheaded girl for a monster cookie at Levain bakery. These are, hands down, the best cookies in the city. And don’t let the photo fool you: it weighs .25 lbs. You can bet your bottom dollar that I ate it all by myself, too! It took me a good 1.5 hours to do so, but it was worth every chocolatey, nut-and-buttery bite. I have been craving these for weeks!

To be honest, I really wasn’t hungry after the cookie (a bit too close to dinner!) but knew I had to eat a real meal. I received a coupon from Foodbuzz to use towards Buitoni’s Riserva pasta line. I tried out the Wild Mushroom Agnolotti last year as well, and liked it so much that I bought it again!

The nutrition statistics are not my favorite… that’s quite a bit of sodium to pack into one serving.

I didn’t do anything fancy with it tonight, just grated some cheese and cracked some pepper. On the side, I had steamed swiss chard with rice wine vinegar + sesame seeds and a small sweet potato with a little butter + cinnamon. Plain, simple, good food.

Munched on an apple while catching up (and tearing up) on the season finale of Grey’s Anatomy…

I’m going to have to try lime curd on my oats sometime – I love that you combine it with pumpkin.
I love eating citrus fruits as a snack too – but they are quite messy. I’m thinking of packing little hand wipes with me now whereever I go.
I get so jealous of your NYC photos – I’ve got to live there someday. I grew up not far from the city, but always want to spend more time there. Actually, I have the summer off, and have been thinking of visiting friends of mine when I’m down there…may have to organize a food blog get together!
