Pancakes For One

Thanks so much for your tips on how to strengthen my lower back and ease the pain! I’m going to work on your suggestions over the weekend.

I woke up to the sound of raindrops pounding on the window and dark skies.

So much for a nice, leisurely run outside! I bribed myself with a special breakfast as long as I got out of bed and hit the treadmill. 3 miles later, I was back home and ready for pancakes.

PUMPKIN GRANOLA PANCAKES

Serves 1
Pumpkin Granola Pancakes.JPG

  • 3 T Stonewall Kitchen’s Granola Pancake & Waffle Mix
  • 3 T pumpkin purée
  • 1 T chia seeds
  • 3 T almond milk

Ingredients.JPG

Whisk ingredients together. Heat pan about a minute, then coat with cooking spray. Spread batter evenly on pan. It will be very thick, so smooth over to avoid any holes.

Cook about 1 minute, then flip with a spatula, cooking about 1 minute more or until edges are golden. Plate and serve with desired toppings.

I’m currently obsessed with warming frozen blueberries and mixing them with Greek yogurt. This is the perfect topping for pancakes, because when the berries are heated the they form a nice little blueberry syrup! As the icing on the (pan)cake, I drizzled a little Nuttzo over the whole thing. Dee-vine.

Speaking of Nuttzo, it’s on sale! Two jars are now $22 instead of $25. Still pricey, but so worth it.

  • Okay, that looks pretty amazing. But I have two questions: does the addition of chia seeds change the texture any? And I’m assuming the amount of milk is a typo, and it’s not actually supposed to be three cups??

  • Pancake looks so good! I had frozen blueberries and greek yoghurt for breakfast this morning – I mixed the blueberries with the yoghurt and left them in the fridge while I was at the gym, they were perfect to eat by the time I got home – I love how the greek yoghurt gets a bit frozen like ice cream!

  • i feeel like if i had a waffle maker i would definitely be more of a waffle person but for now i guess i’m a pancake person! i do love a solid belgium waffle when the opportunity arises though!

  • I’m a pancake fanatic! It’s our Saturday morning tradition to make them :) My two favorite kinds are Blueberry-Banana-Walnut and Pumpkin-Pecan. I love making warm bluberry sauce to serve on top!

  • That’s a lot of almond milk! A typo? I miss making pancakes. I make do with buckwheat waffles from the dining hall!

  • wow- these are beautiful. The melty blueberries look perfect. I have some frozen blackberries and raspberries in the freezer…may need to use them to top some breakfast for dinner tonight. I like both waffles and pancakes but probably make pancakes a lot more often. Happy Friday!

    I’m more into pancakes than waffles, and love to top mine with sliced banana, plain yogurt, and maple syrup. A few chocolate chips are good too.

  • I think I am more of a pancake person, as there is much more room left for error in the cooking process:) I like to top them with fresh berries, or pumpkin butter + walnuts!
