Bite-Sized

Good morning, friends, and happy Friday! How has your week been so far? I hope you have some fun things planned for the weekend! My week has been pretty good so far, filled with work, friends, school, and tasty treats. The weekend will be spent working and seeing friends, studying and getting ready for the next week. For me, it’ll be the perfect mix of productivity, rest, and social time. Thanks for all of your muscle relief suggestions… somehow, the ache is gone already! Must have been the rest + Tiger Balm :-) .

Yesterday saw the end of a jar of almond butter, and a fun new flavor of overnight oats! Chobani recently sent me samples of their new flavors, which included their new, kid-friendly line of Greek yogurt, Chobani Champions. The yogurts are made with 2% milk, contain no synthetic growth hormones, preservatives or artificial flavors, and have 8g of protein per 100g container. The Honey Nana flavor was lightly sweet, and had a lovely banana taste.

Even though this breakfast is perfectly portable, I decided to sleep in a little later and eat at home. Usually I like to get to school a little early to settle into “learning mode,” but it’s also nice to dine in a cozy and familiar environment sometimes.

Between classes, I headed to my doctor’s office for a minor procedure (nothing serious, I just have a small headache and am not supposed to exercise for a couple days). My mom met me there, and after the appointment, we enjoyed a nice afternoon together before my next class.

We stumbled on a real lunch gem, a Japanese restaurant in Murray Hill called Hiroshi. They had GREAT deals! We split a couple things, and our total bill was $16. In New York you can get some pretty amazing deals during lunch!

After lunch, we wandered around the neighborhood looking for a little sweet treat.

Lucky for us, we didn’t have to search long before we found Baked By Melissa, a bakery specialized in bite-sized cupcakes.

We got the 6/$5.50 special, and chose: (top row, left to right) Peanut Butter Cup, Cookie Dough, Cookies & Cream; (bottom row, left to right) Red Velvet, S’Mores, Peanut Butter & Jelly.

Teensy-tiny bites of goodness! See how small they are? Our favorite was the Peanut Butter Cup, but they were all delicious. I love being able to have six little tastes!

We parted ways; I went back to school and my mom enjoyed the rest of her afternoon. After class, I went home to relax and read. I just started reading Lit by Mary Karr, and I love it! I bought her first book, The Liars Club, years ago, but finally decided I’d rather just start this one and not worry about the chronological order.

Dinner was eaten while watching Get Low (a film I’d wanted to see for a while, but was a little disappointed by). We had the last of the Rutabagas, Buckwheat, Black Beans & Kale… still delicious after four days!

I also made us a quick side of Garlicky Mushroom Greens to satisfy Ari’s “mushroom tooth.”

Ingredients:

  • 1/2 bunch kale, torn into 2-inch pieces
  • 1 bunch broccolini
  • 8 oz button mushrooms, sliced
  • 3 cloves garlic, coarsely chopped
  • 2 T olive oil
  • 1/3 cup vegetable broth
  • 1 T soy sauce

Heat oil in a large skillet over medium-high heat. Add garlic and cook 2 minutes until fragrant. Add mushrooms, stirring until slightly brown, about 2 minutes. Pour in vegetable broth and add broccolini and kale. Stir a couple times, then cover and cook for two minutes or until kale and broccolini are bright green. Add soy sauce and cook 30 seconds more. Remove from heat, serve, and enjoy!

Serves 2-4

For dessert, dark chocolate and macaroons.

It’s been a few weeks since my “week of positivity,” but I’m still making an effort to begin every day by focusing on the small, positive things that add up to happiness and joy. Today, I’m excited to attend a fun seminar (which I’ll tell you about later!) and have a great night at work.
