Shroom Sandwich

Last night I took a shower before bed so I’d be able to sleep in a bit this morning. Because I like to keep my hair a little tousled, it actually ends up looking better after I’ve slept on it! Win-win.

I brought my breakfast to work, and for the second day in a row, forgot some of the ingredients! This time, not only did I leave the baggy with granola, but I also forgot peanut butter. I guess I’ve been a little scatterbrained lately.


Luckily, they use tahini in the kitchen, so I asked for a little bit to mix into my yogurt! I also had a Trader Joe’s granola bar, so I crumbled that in, too.


  • 2% Chobani Greek yogurt
  • 1/2 banana
  • tahini
  • Trader Joe’s trail mix granola bar <—– way too sweet for my liking

Despite not having a headache after my night out, I felt a little off for most of the day. (I learned my lesson for the nth time.) I asked my manager to make me a bitters-and-seltzer (a tried-and-true hangover cure), and he made his special recipe using muddled orange and a teeny bit of orange soda. Worked like a charm!

  • spinach
  • shredded cabbage
  • grape tomatoes
  • black-eyed peas
  • lemon juice, sesame oil, chili flakes
  • tomatoey rice, from Family Meal at the restaurant

After work, Ari and I had a date for a little P90X action. I did about 20 minutes of the 60 minute plyometrics video (lots of jumps and squats), but it just wasn’t really my style. I tried to do a little yoga instead, but I had jellylegs from all of the jumping and squatting. After two tries, a long workout just wasn’t meant to be.

Instead, I got started on dinner. Inspired by Jessica, I’d been planning on making a cheddar-mushroom grilled cheese sandwich for a couple weeks now.

Ari and I were both home for dinner, and he happens to be a huge mushroom fan, so I made sure these were extra-tasty. I sautéed the shrooms in a drizzle of oil and little red wine, salt and pepper, and cooked them down until they were nice and tender and tasted divine.

In the same pan, I warmed two slices of bread, each topped with Kerrygold aged white cheddar.

… then each smooshed down with another slice of bread, flipped until crispy, topped with more mushrooms, and plated with steamed kale. Definitely a winner! Sandwiches are so underrated but so delicious. Don’t you agree?

We relaxed a little and watched Nurse Jackie before bed. We’re only on Season 1, and really like it so far! Nice to know we have a lot of episodes to look forward to!

  • My dream sandwich would be thick wholemeal bread with a spicy veggie burger, onions, ketchup and vegan cheese, I’m drooling just at the thought! Saying that a good old pb and jam is almost unbeatable. I hope I can find an apple like that at the market when I visit NYC! Going to drop you that email sometime in the next couple of days x

    Looks delish and I’m not even a big fan of mushrooms. I’ve been watching America’s Next Great Restaurant on NBC and had the Meltworks guy made something like this, maybe he wouldn’t have been denied by the investors!

  • “(I learned my lesson for the nth time.) ” <—- I said that last weekend!! haha oh man!!! Nights out are so disruptive, but I don't have LATE LATE ones very often, so I think it is okay!! I am still lagging and feeling Saturday's night out, since I only got 4 hours sleep and never was able to catch up!! (Hopefully tonight? Or tomorrow?!)



  • as soon as i saw the title of this post i starred it to make this sandwich soon! mushrooms are one of my favorite things to eat. when i’m at a restaurant, any entree with mushrooms in the title is a strong contender for my order. :)

  • I can’t remember the last time I had a proper sandwich. I prefer my bread straight up, so I’m more likely to have a salad and fat slice of bread on the side, than shove my veggies between my bread. But that mushroom sandwich looks fine! Like a dinner sandwich, not a take to the office for a quick lunch sandwich.

  • I’ve never heard of a bitters-and-seltzer ! Glad it helped that yuck feeling though!! And your lunch bowl looks awesome. A fun combo of flavors. My favorite sandwich? Probably mozzarella, tomato & basil with a little olive oil….perfection! I haven’t had one in so long!

    I love lots of different sandwiches but I’m very meticulous when I make my own! I like all of the toppings evenly spread throughout the sandwich. I HATE buying a sandwich that has all the crap just piled up in the center with dry crust all around it. I often take my to-go sandwiches apart and rearrange them, lol.

  • Cheese is always part of my sandwiches! One of the best sandwiches I’ve had was an asparagus panini, if asparagus gets a little cheaper at the store I’d love to recreate it! I love mushroom though so your sandwich looks amazing!

    I rarely make my own sandwiches, but I feel like they taste so much better when someone else makes it. I feel like they always turn out so wimpy when I make them! I’m always craving the veggie sandwich that they have at Lenny’s… the bread is the best!
