Last night I took a shower before bed so I’d be able to sleep in a bit this morning. Because I like to keep my hair a little tousled, it actually ends up looking better after I’ve slept on it! Win-win.
I brought my breakfast to work, and for the second day in a row, forgot some of the ingredients! This time, not only did I leave the baggy with granola, but I also forgot peanut butter. I guess I’ve been a little scatterbrained lately.
Luckily, they use tahini in the kitchen, so I asked for a little bit to mix into my yogurt! I also had a Trader Joe’s granola bar, so I crumbled that in, too.
- 2% Chobani Greek yogurt
- 1/2 banana
- Trader Joe’s trail mix granola bar <—– way too sweet for my liking
Despite not having a headache after my night out, I felt a little off for most of the day. (I learned my lesson for the nth time.) I asked my manager to make me a bitters-and-seltzer (a tried-and-true hangover cure), and he made his special recipe using muddled orange and a teeny bit of orange soda. Worked like a charm!

- lemon juice, sesame oil, chili flakes
- tomatoey rice, from Family Meal at the restaurant
After work, Ari and I had a date for a little P90X action. I did about 20 minutes of the 60 minute plyometrics video (lots of jumps and squats), but it just wasn’t really my style. I tried to do a little yoga instead, but I had jellylegs from all of the jumping and squatting. After two tries, a long workout just wasn’t meant to be.
Instead, I got started on dinner. Inspired by Jessica, I’d been planning on making a cheddar-mushroom grilled cheese sandwich for a couple weeks now.
Ari and I were both home for dinner, and he happens to be a huge mushroom fan, so I made sure these were extra-tasty. I sautéed the shrooms in a drizzle of oil and little red wine, salt and pepper, and cooked them down until they were nice and tender and tasted divine.
In the same pan, I warmed two slices of bread, each topped with Kerrygold aged white cheddar.
A scoop of mushrooms for each piece of bread…
… then each smooshed down with another slice of bread, flipped until crispy, topped with more mushrooms, and plated with steamed kale. Definitely a winner! Sandwiches are so underrated but so delicious. Don’t you agree?
For dessert, chocolate peanut butter ice cream with warmed frozen blueberries.
We relaxed a little and watched Nurse Jackie before bed. We’re only on Season 1, and really like it so far! Nice to know we have a lot of episodes to look forward to!
