The other morning when I was counting my thousandth sheep, hoping to fall back asleep, I found myself fantasizing about breakfast. It was 5 AM, and while I certainly could have eaten then, I was more interested in sleeping. Still, my brain was focused on exotic oatmeal concoctions, and I slowly, dreamily, developed this one.

Like Carrot Cake Overnight Oats, this really tastes like a lemony, coconutty cookie treat. And what better way to celebrate a new day than with a special breakfast goodie?
LEMON-COCONUT MACAROON PORRIDGE

- 1/3 c. rolled oats
- 2 T Wheatena or oat bran
- 2/3 c. water
Bring to a boil, then reduce to simmer and add:
- zest of 1/4 lemon
- 1 teaspoon coconut oil
- 1/4 teaspoon almond extract
- 1/3 c. non-dairy milk (I used soy)
- small sqeeze of fresh lemon juice
- 1 teaspoon chia seeds (optional, for thickening)
Stir well, and poor into bowl. Top with:
- pinch of shredded coconut
- additional lemon zest
- fruit of choice (I used 1/2 banana and a sprinkle of goji berries)
- 1 tablespoon almond butter

We both ran a few errands this morning, but made sure to get outside and enjoy the spectacular spring day.

We stumbled upon Ovelia, a cute cafe with plenty of outdoor seating.

Their sandwiches are served on feta-stuffed pita; our waiter helped me out and created one with just vegetables (cucumbers, tomatoes, avocado, onion, cheddar).

It came with a side salad which I nibbled for extra veggies (I skipped the feta), and was very generously portioned. I packed half of it up and will bring it to school for lunch.

One day, I hope to live in a house with a big porch for dining on. For now, I’ll take any sidewalk cafe I can get!

How about now? I put colors in my hair!

I was ready for some kind of change, and thought this would be fun. It’s just hair, after all, and because I’m still in school and don’t have the kind of job where purple and blond streaks are frowned upon, I thought, “Why not?” A few of you have asked you if my hair color is natural or if i dye it; it’s naturally this dark, and I’ve never dyed it in my life. It’s too dark to absorb color without bleaching, and I wasn’t keen on the idea of putting bleach in my hair, so I just got a few extensions (purple and blonde on one side, blonde on the other). The extensions last for up to 4 months, and I can always take them out if I get tired of them. I’m not totally used to it yet, but I think I like it. I was kind of going for a Rogue-from-X-men look, you know what I mean?
In less drastic beauty news, I went to my $18 mani-pedi place and put forest green on my toes, and an orangey-peach on my fingers.

I have a terrible habit of wrecking my manicure the very same day I get it- usually within a couple hours- and today was no different. While I was peeling vegetables, I slashed a HUGE gash in my finger and nail… I’m going to try and keep it bandaged so I don’t lose the whole thing. Yikes. Can’t take me anywhere!

I have to get back into the school groove again, so I snacked on an apple and caught up on some psychology reading. Yes, I’ve been on Spring Break, and yes, I waited until the very last minute to do it

Ari and I went to the gym together, but split up when we got there. I went on the CrossRamp for 30 minutes (for some reason I find this machine to be a lot more tolerable than the elliptical, which I get so bored on!), followed by a few combination arm/leg moves and some ab exercises.
When we got back, I worked on a soup recipe I’ve been mulling over for a couple days. It was a success, so I’ll be posting the recipe later today! I also sautéed some swiss chard + spinach in garlic and oil with a little vegetable broth and dijon mustard, and toasted a slice of sunflower-raisin bread (from a bakery upstate).

The King’s Speech is finally out on DVD, so we ate dinner while we watched. Have you seen it? I really enjoyed it and thought the acting was excellent, but don’t know that I would necessarily give it the Best Picture title. Just my opinion!

Off to school… I’m interested to see if I fall asleep in my math class (I almost always do) now that I’m not reliant on coffee to wake up in the morning!

I’ve never dyed my hair, and have never even put in highlights. My friends and family used to ask f I wanted to when I was a teenager, but it just never seemed like me. I wonder what I’ll do when I turn gray one day though.

I LOVE the new hair. It looks great on you!! I dyed my hair blonde one summer while I was in college. Ok, twice, but only because it came out orange the first time. I had a really short hair so I kind of looked like Sisquo who sang “The Thong Song”. It looked cool until it started to grow out and I was too lazy, and broke, to get a haircut. Years later I’ve returned to the same short haircut, since I don’t like to brush my hair, but its my natural dark brown color. I’m not sure if I had more fun as a blonde but I definitely enjoyed it.

Love your hair! I ruin plenty of manicures and pedicures, mostly because the salons tend to tell you it’s dry when it really isn’t. Good salons check by gently touching the nail with the back of another nail–if there’s no “tackiness”, it’s dry.

Ive added color to my hair since I was 16 to give it some body because it is so fine….but I prefered highlights so I didnt have to do it too often….roots dont show so much….now I like highlighting because I havent gone all grey yet and I like to show that off while I can

I used to dye my hair bright red and put blue streaks in when I was at school but now I just dye to cover and brighten my few grays! Love your streaks they look really cool and I’m completely lusting after that forest green nail colour!

i’ve done auburn highlights a few times (basically just accenting the color my hair gets in the summer), and like i told you, i attempted red streaks once and blue another time, but it didn’t quite work on my dark-ish hair. i’d like to play with color again, but considering i spend $100+ just to get a good cut…it’s not quite in the budget. le sigh.
I have what I like to call “Hair A.D.D.” About once a year I get a brilliant idea to do something drastic to my hair (cut or color or sometimes both). I’ve been every color under the sun (including a stint with pink in junior high) but for now I am trying to grow out my last hair mistake (an angled bob that looked HORRIBLE on me) and just rolling with good old fashioned honey highlights for my color.
I love it! I truly believe that it’s ‘just hair’ as well. My mom is a crazy nut about her hair (she’s a bit of a hippy) and was more upset when I dyed my hair dark brown than when I got a tattoo. Hair is not permanent and can be so fun to play around with, especially when you don’t have to look professional. For summer, I dyed it back to dark blond and am letting it grow. It’s now a change to let it do its own thing.
I love the extensions! Super cute! I dyed my hair various shades of blonde from high school, college and until just recently my life, My hair is naturally “dirty blonde”. Then, last fall, I took the plunge and dyed it dark brown, which always seems a little “warm” because my hair pulls a little red. I love being a brunette! I think I will stay that way for a long time. I wish my hair was naturally like yours! Dark hair is so dramatic, and your skin complements it well.
I’ve been dying my hair since I was 13!! It’s naturally a mousy, dirty blonde that’s just really bleh, so I get highlights. I haven’t seen what my hair looks like au natural for 8 years, but I can’t imagine myself without blonde hair!
Love it! So cute. The only time I have ever colored my hair when I when brunette in August 2009. It faded out pretty quickly but you can still see a faint line about halfway down my hair- the lower half is still a little bit orangey! Whenever I get my hair cut, I can always sense the stylist is a bit horrified by it but I don’t really care. I’d rather just let it grow out.

I’ve been getting highlights since I started going to Ouidad — five years, maybe? You can’t really tell a difference from one visit to the next, but if I compare the color of my hair now to what it used to before I ever did anything to it, it’s gotten so much lighter!!

I agree about The King’s Speech. It was wonderfully done, but now that I’ve seen it I probably won’t ever think about it again, though I probably will think about/re-watch Inception or The Fighter or 127 Hours.
Love the streaks! I have almost-black hair, and was always envious of my blond friends back in my punk rock high school days, cos they could change colors easily. I’ve dyed it in the past. I kinda want to dye it now, just because the ends get weirdly lighter that the rest of my head! I’m not crazy about that.
