Dancing Shoes

Morning! How are you today? I hope that right now, wherever you are and whatever you’re doing, you’re happy and content. Thanks for all of your yoga mat advice… and sorry some of you thought a real “Matt” had passed away. I just have a habit of naming things :-) .

My new shoes from Swirl came… I’ve been wanting a pair of funky, versatile, and comfortable oxfords for some time now, and the price was right! They’re by Boutique 9, and they fit perfectly. Win!

I shopped my closet yesterday and found an old sweater/tunic/stripey dress that I bought at my favorite thrift store in the Twin Cities when I was in college.

At work, I had my usual yogurt bowl combination:

  • Chobani Champion Greek yogurt
  • 1/2 banana
  • Quaker Oatmeal Squares
  • Ambrosial Muesli
  • almond butter

Snacked on an apple:

I did something unusual for lunch: I bought a salad at the grocery store. Ordinarily, I have so many veggies and random ingredients that all I really have to do is throw them in a tupperware and call it a day. But for the past week or so, I haven’t done one big grocery shop and instead have been buying a couple items at a time as needed. The other night when I was out buying apples, I saw a few freshly made salads and picked one up. I went with the Greek (romaine, tomatoes, olives, feta) and topped it with cooked chickpeas and a Wild Rice & Arame Salad I made on Sunday from Clean Food. Instead of the pre-made dressing the salad came with, I used some tahini sauce from work.

After work, I went to the gym for 30 sticky minutes on the CrossRamp. I stayed interested in my workout by doing some Psychology reading… I’m out of new magazines!

Dinner was a mix of new and old. The new: Chopped Kale with Hot Pepper Vinegar from the June 2011 issue of Food & Wine. Everything about this recipe appealed to me: the kale (one of my favorite vegetables), the heat, the sauté. However, due to time constraints and what I had in the kitchen, I made a few adjustments:

  • didn’t soak the vinegar peppers overnight, just for a couple hours (lack of time, impatience)
  • only had half the called for amount of olive oil, so used half vegetable
  • used apple cider vinegar instead of white, as that’s all I had
  • used much less caraway (all I had), and didn’t grind it up

The verdict? It was good, but not as good as it should have been after all that chopping and prep-work. I also may have overcooked it (I was doing a few things at once), and it probably would have tasted better had the vinegar sat in the fridge overnight. BUT, I am excited to use the leftover dressing for something later in the week!

In addition to the kale, I had leftover socca pizza (added white cheddar and extra roasted peppers) and steamed carrots.

While I worked on some math, I had a small glass of wine. You might say that drinking alcohol while working on an already frustrating subject is inadvisable, but it was necessary. And it really was a baby glass. AND I’m now finished with my math assignments for the Spring semester! All I have left is a math test (Thursday) and the final (next Thursday). I do have a lot of studying to do between now and then, though.

For dessert, a little break from algebra and Raw Chocolate (Blueberry) Fudge. I haven’t even been adding sweetener to these: with the frozen blueberries and the coconut, it’s sweet enough! I love topping them with salt and goji berries, for a sweetsaltycrunch.

Off to work, then straight to studying! What have you got planned for the day?

I need some recipinspiration! Have you found any great new recipes lately? I have a few days off between semesters, and I’m looking forward to spending some quality time in the kitchen!

  • cute shoes! i’m a big fan of buying funky shoes to make the outfit memorable! totally obsessed with jeffrey campbell, seychelles, miz mooz stuff. i’ve been making a lot of mint flavored things lately lamb with mint chutney, mint ‘faux shamrock shake’ mint-avocado pudding with chocolate chips :)
