Making a deal with myself to try to keep my coffee intake to days when I have school + work (it’s just too miserable to go without on these days), I continued my coffee experiment yesterday. The previous two days I had an iced coffee with skim milk, which prompted stomach pains and churning. This time, I tracked down a deli that had soy milk (it wasn’t easy! and was more $$$) and tried that. And…

No tummy trouble! I wasn’t uncomfortable at all after drinking it. So I’m going to continue to experiment with milk in my hot tea, but only on days when I’m not having dairy yogurt. I’m still unsure as to whether the yogurt is the problem, but this morning, for example, I’m planning to have Greek yogurt and green tea. We’ll see how that goes!

For breakfast, I had a pretty bombdiggity jar of overnight oats. I’ve been holding off on using the end of this almond butter jar for a rainy day, and today was the day!

  • 1/2 cup oats
  • 1 cup almond milk
  • 1 T chia seeds
  • 1 T nutritional yeast
  • 1/2 square unsweetened dark chocolate
  • stevia
  • vanilla extract
  • cinnamon
  • almond butter dregs!

I was inside almost all day, but whenever the door opened and customers walked in, it felt like a radiator was directing hot air at us! To cool down, one of our managers made us the best strawberry limeade I’ve ever had. So fresh! So flavorful! So summery!

For lunch, I had my last green bowl portion. I’ve enjoyed these easy, nutritious lunches, but I’ve finally grown a little tired of them. I didn’t eat the quinoa at the bottom of my bowl today, and instead had some of the spanish rice the chefs put out for Family Meal.

When I got home, there were a few household chores to be done: namely, raking grass outside. Right as I finished, the sky opened up and started pouring! I’d been in my exercise clothes and was about to head out for a workout, but instead stayed at home for Jillian Michaels’ 30 Day Shred: Level 1 instead. It’s been months since I’ve done it, and I am sore today!

For dinner, I made Melissa Clark’s Pan Seared Asparagus Salad with Frisée and Fried Egg. Do you read her weekly column in the New York Times’ Wednesday Dining section? I look forward to it every week!

I followed the recipe to a T, with the exception of swapping kale for frisée and doubling it. I haven’t been getting enough green veggies lately, and besides: I love kale! This was so delicious: flavorful, simple, but different. Although I was home alone, I kept Mmm!-ing all through the meal.

I also had a small sliver of leftover ziti. I’m no ziti connoisseur, but I thought it was pretty good!

For dessert, I had a mini coconut almond ice cream bar. It was good, but because I’ve been eating a little less sugar lately, I found it to be very sweet! I could definitely have done with a little less of it.

  • Glad you’re able to pinpoint the dairy issues more and more. I have similar stomach troubles with dairy, as it sometimes bothers me, but not always. [Like one cup or tea or coffee with milk is okay, but two is a no-go.]

    I love So Delicious products! I have a carton of their vanilla coconut ice cream in the freezer, which I’m saving for a dinner with a friend who can’t eat ice cream. Those bars look delicious.

  • Wow, your meal looks almost identical to the picture in the paper! Those limeades look and sound amazing too. I’ve been loving my big bowls of protein ice cream but raw chocolate has been enjoyed quite a lot recently too! I don’t have much on this weekend which I’m quite thankful for, I fancy some relaxation time :-)

  • I know I suggested this before…hate to be a Mom and stickler ;) but maybe a good idea to go get an allergy test with your doctor? That strawberry lemonade looks AWESOME! And so does dinner. What a cool dessert! Sweet treat fav= frozen yogurt! This weekend? Time with my parents, friends & Josh! And teaching

  • i love melissa clark’s writing/recipes!! the canal house cooking book set is one of my treasures =) the photos are so beautiful. i dont subscribe to the ny times unfortunately, but i would totally look forward to the wednesday section if i did!!

    dairy has always caused a lot of tummy troubles for me – coffee is fine for me though – hope you work your problems out!

    i dont know if youve tried it but if you find the ice cream pops too sweet, i think so delicious now makes an unsweetened coconut (dairy-free) ice cream! i saw it yesterday in the grocery store but i havent tried it myself!

  • I wish I could make deals with myself when it came to iced coffee. But sadly, my deals are usually, lets limit this habit to 3 times a day! LoL

  • I got dark chocolate ice cream with raspberries last night! So good. I’m sorry you can’t eat dairy without pain, and I once had some dairy free ice cream that was called Purely Decadent. I found the link to the brand’s website here. I tried cookie avalance and it was wonderful, not too sweet!

  • My husband has long had issues with dairy but just didn’t care for soymilk. When we discovered So Delicious Coconut Milk, it was a dream come true. Healthy and delicious!

  • i’m glad you are figuring out what works best, it really makes life so much easier/better when you’re not having tummy troubles. i struggled for months until i got it straight! i love granny smiths, cold and crisp in the summertime! i used to be really sore from the shred but have you tried any bodyrocktv workouts? OH.MY.GOD. you will define a new level of soreness, i promise!

  • Love the looks of that recipe! I regularly read the dining section of the NYT (as evidenced by today’s post), but somehow I missed that one!

  • I made that recipe too this week—with kale. And I couldn’t resist adding a little tahini on top along with a bunch of leftover roasted cauliflower (which is like crack to me lately). Weirdly, I’ve not been into dessert at the end of the day this week. If I didn’t have reason to know it’s impossible I’m pregnant, I’d be worried! It’s probably just the weather.

  • Whoa, that ice cream looks sooo good. Now I’m craving ice cream!

    I’ve been eating lots of sweet, fresh mangos. With cayenne, and sometimes a squeeze of lime. I love spicy-sweet!

    My weekend is going to involve lots of movies at home, and forcing myself to stay on the couch! I’m trying to heal my silly foot for a long-planned hiking/camping trip next weekend! Alas, dunno if I will ready for that, but. We shall see!

  • Hah, that salad truly looks like a ray of [green] sunshine (I see now that that joke didn’t really work out…). I will however, take those ice cream bars off your hands if they’re too sweet for you! ;) I’ve yet to find any coconut milk ice cream bars anywhere, but maybe I haven’t been looking hard enough.

    PS I’m glad you’re figuring out how to treat your tummy better! I know what you mean about not having coffee.. I nearly died this morning not having my normal cup of joe.

  • What a perdy salad :) and I’m totally with you on having a new sensitivity to sweetness. I used to take like 1 T sugar in my coffee, and now I can’t take any at all!

    My favorite sweet treat right now would have to be Oreos. Hands down. No apologies.

    This weekend I am wrapping up rehearsals for my show, and then I’m off to Canada on Monday for two weeks to perform!!

  • Yesterday my grandparents and I went out for my favorite sweet treat–self serve frozen yogurt! And I bought my first carton of ice cream in well over 3 years on Wednesday. Mmm… Denali Moose Tracks is my favorite, but I’m just beginning to explore ice cream flavors (hopefully Ben and Jerry’s soon!) This weekend is going to be pretty chill. I’m really hoping I can figure out a “meal plan” to relieve some stress next week!

  • That kale and fried egg look SO good!! I’ve been having an amazing long weekend with my soon to be parents in law- lots of amazing food, drinks, and a show tonight!

  • oh! i can’t pretend that i’m not enjoying your dairy chronicles haha. i’ve cut out dairy (for the most part) except for maybe once or twice a week i’ll have lactaid cottage cheese and i can for sure say my stomach has felt muuuch better

    i never really get the ny times because its so ‘expensive’ hahaha but i do love the post! they should put a foodie section in the post. i get my daily foodie fix on the grub street email :)

  • glad you may have found the problem, dairy is something that always gives me tummy problems…although can tolerate goat and sheep based products every once and in awhile

    things I have been enjoying lately – spending time with my parents :) they are in town visiting
