Aren’t Sundays the best? They’re the best! They’re the days I like to keep mostly free to get myself organized and do important things like paint my nails the color of sparkly Cheetos.

This morning, I woke up on the early side and made a good, fancy breakfast. Sometimes it’s fun to pretend you’re a princess.

FRENCH TOAST WITH SEARED APRICOTS, BANANAS, AND BERRY COULIS
Serves 1 LVP Princess
Ingredients:
- 2 slices whole grain bread
- 1 egg (can substitute 1 flax egg)
- 1/2 cup milk of choice
- 1 teaspoon chia seeds (optional)*
- 1/4 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 2 small apricots or 1 large, quartered
- 1/2 banana, sliced
- 1/3 cup mixed berries, fresh or frozen
- maple syrup, honey, or agave for dipping (optional)
Whisk together egg, milk, vanilla, cinnamon and chia seeds (if using). Set aside.
Heat a non-stick frying pan over medium-high heat. Place apricot quarters flesh-side down and sear for two minutes. Flip over and cook for another minute or two, until both sides have begun to brown.
Coat each slice of bread in egg/milk mixture and place in frying pan with the apricots. Cook about 1 minute, or until bottom side of egg has browned slightly. Flip and brown other side of bread, and add your banana slices.
Meanwhile, heat your berries in the microwave for 40 seconds. They will be more liquid, like a sauce, but still hold their shape.
Once toast has finished cooking, arrange on plate with apricots and bananas. Cover with warmed berries. Pour syrup in a small dish, if using. Sit down, relax, and enjoy your breakfast!
*I added chia seeds to the egg/milk mixture for added Omega-3s. Not mandatory for flavor, but it gels nicely!

After breakfast, I did age-appropriate things like read the newspaper cover-to-cover and listen to NPR. I also thought these bananas had finally ripened to ideal banana-bread-making blackness, so I played around with a few ingredients and tried out a banana bread recipe.

Sadly the experiment was a bit of a flop, and ended up being one of those dense “brick breads.” It was okay, but not really a recipe worthy of sharing.

This banana bread boat, however, is a match made in heaven: banana bread + Greek yogurt + ripe banana+ almond butter.

So I’ll just be in my apartment, eating endless stacks of these, keeping cool and reading books. There’s no better way to spend the day.

What a yummy breakfast! Lazy Sundays are pretty darn wonderful! Bummer about the bread- but glad you’re making it work as a delicious snack. I cleaned a little this morning, took a walk with Josh and went to dinner with his parents. Now I’m contemplating a nap

Hahaha I love that orange color! My sundays are usually church, followed my lunch with friends, then running errands! I love Sunday afternoons!
I just got bright yellow on my toes and I’m loving it. I was a little nervous but it turned out great.

That banana bread boat looks amazing! After a run I spent my Sunday relaxing and watching sport on TV while pottering on the internet followed by some reading. A pretty perfect Sunday really! You have just reminded me how I miss buying the Sunday papers and reading them with a cup of coffee!
my favorite part of this recipe is “serves 1 lvp princess.” i haven’t cooked myself a special breakfast in a long time, and i really should. it’s amazing how much of a difference it makes when you start your day with something special (which begs the question, how do people survive without breakfast!?). i spent my sunday on the beach, eating ice cream, and cooking a delightful dinner. it’s all made monday a lot more bearable.
