Yesterday i decided to try something a little different for breakfast, so I made a kind of porridge out of freekeh.

Greenwheat Freekeh sent me a couple of boxes of freekeh to try out. Freekeh is a whole grain rich in protein, vitamins and minerals, with a low glycemic index, low in carbs, and high in fiber. The memory of delicious freekeh risotto still fresh in my mind, I dove right into the cracked grain freekeh.

I cooked 1/3 cup dry freekeh in about 1 cup of almond milk and 1 tablespoon of chia seeds, until it started to get thick. When the grains were cooked through, I topped my bowl with cinnamon, almond butter and Hungarian sour cherry compote. It has a nuttier, richer flavor than oats, but it was good and tasted really hearty! Next time I’m going to try cooking it a little longer so it’ll get really creamy.

While I didn’t give myself a “spa day,” I did get myself to my new gym, plunk down cold hard cash and pay for the initiation fee and first month. One thing I am so excited for about this gym is that it has classes! I haven’t been to a gym with classes in a long time, and I love knowing that there are fun workouts I can join in on almost any time of day. I was most excited to try Spinning, but unfortunately my gym doesn’t have an actual Spin class. Other locations do, and I fully intend on trying them out! In the meantime, though, one of the trainers showed me how to use the eSpinner.

It’s a Spinning bike with an interactive screen and virtual trainer, so even if you can’t take a class (or want to Spin solo) you can still pedal away. I tried Spinning once before, three years ago, and loved it. So many people have told me I’d enjoy it, and I have to say: even though I wasn’t in a group setting, I had so much fun! The 35 minutes went by quickly and I felt like I got a really good workout in. It also didn’t hurt that the virtual trainer looks just like Eric Northman ;-) .

When I came home, I enjoyed some Peacefood leftovers for lunch. This fall I’m going to make my own chickpea fritters… I think they’re just made with chickpea flour and spices, and boy are they good!

I took a trip down memory lane as I went through some of my old stuff… like my dad, I have a hard time parting with everything from trinkets to random pieces of paper. I’m a nostalgic girl, what can I say. Anyway, I found this huge bag of ticket stubs from high school and part of college… I used to go to concerts multiple times a week!

I need a new band to love, do you have any suggestions? I think I’ve played Adele’s “Rolling In The Deep” enough to scratch the MP3…

My dad took me to dinner at Sura , one of our favorite Thai places. They have fabulous lunch and dinner deals, and also have a lot more on the menu than pad thai. If you’re ever in the neighborhood, you should give it a try!

We shared a trio of appetizers: coconut-crusted shrimp, Thai crêpes (stuffed with peanuts and basil, I think), and a tofu summer roll.

For dessert, I had a cup of black cherry Chobani and a piece of chocolate-covered peanut brittle my mom brought back from her trip Indiana.

Well, I’m off to the airport! The next time I see you, I’ll be in Minnesota kicking off the Green Giant Valley Visit !

  • Haha, Eric Northman would be enough to motivate me :-) I keep all my old concert tickets – plus plane tickets when I travel, all sorts of stuff. I bet radiohead where amazing live.

    Does your new gym have Zumba? If it does…do it …dont care what you look like….just have fun…it really is a Dance class that works up a real sweat if you have a good instructor

  • it’s funny, when i was home last weekend i found an old book where i used to paste all my ticket stubs, plane tickets, business cards from restaurants, bracelets from bars, etc. it brought back such a flood of memories and made me want to start a new one! your concert-going was just as frequent as my theater-going back in the day.

    ps: curious which gym you joined! i have a month pass to two different gyms and it would be fun if one was the same as yours!

  • my DREAM is to see The Strokes live. I’ve been very impressed when I saw Tokyo Police Club, The Kills, The Sounds, and Grace Potter and the Nocturnals. sometimes I’m a little let down when I am disappointed by a band’s performance (Spoon :( ) but I love going to just about any concert. at the last Grace Potter show I went to, Kenny Chesney popped out of nowhere and played with them. I’m not a huge fan of country but it made for a good show!
