Grilled Peach and Avocado Salad

Guys, it’s September. That happened overnight! Fall- my favorite season- is just around the corner, but I’m not quite ready to let go of summer yet.

It’s still been in the 80s (the sun browned my arms in a beautiful Farmers Tan when I ran outside yesterday), and although school’s already started and I’m drowning in biology and chemistry homework, I’m holding tight to these last few weeks. Grilled Peach and Avocado Salad.JPG

Mother Nature hasn’t gotten the hint that it’s time to get a move on, either. Each week my CSA share brings more and more seasonal bounty: heirloom tomatoes, crisp green and yellow cucumbers, and pounds and pounds of peaches. So, in summer’s honor, I’m sharing one of my freshest recipes yet.

GRILLED PEACH AND AVOCADO SALAD

Serves 1

Coat a grill pan with cooking spray and place two peach halves face down over medium- high heat. Once the peaches have started to soften and grill marks appear (about 10 minutes), flip and cook an additional 5 minutes or so.*

*Do you have a grill pan? I’ve wanted one for years. As with other cooking utensils and appliances, though, storage space in New York City apartments is precious. Lucky for me, my dad purchased one of these last year… there will be many paninis and grilled fish in my near future. If you don’t have one, you can use a regular skillet, just monitor the peaches closely so they don’t scorch.

Take two big handfuls of your favorite green (I used swiss chard) and tear the leaves into bite-sized pieces. Drizzle with 2 T white wine vinegar, 1 T olive oil, and 1/2 t honey. Toss to coat evenly.

Dice half of an avocado.

Top greens with avocado and peaches. Sprinkle with a pinch each of cayenne and sea salt.

  • That looks like one tasty salad! Its actually been quite summer like in the UK today after feeling autumnal for a few weeks! I’m happy for the autumn to come in now, just so I can eat all things squash and cinnamon flavoured!

  • I love The Wackness and especially enjoy the soundtrack. Early 90s rap is my favorite and I could listen to A Tribe Called Quest all day.

    I wish it were still summer here. Sadly, fall has already arrived in Copenhagen and I’m wearing cardigans, boots, and scarves. I’m more than a little sad that my tan is already fading.

  • My summer’s already over. :( I’m too busy to enjoy cause school!!! Grilled fruit is so delicious!!! Especially grilled or fried plantains, the cooking bananas. :)

  • Grilled peaches are sort of amazing!!!! And it helps that peaches are in their prime right now (well at least here they are!)

  • i feel like the first couple of weeks of fall is always so bittersweet. like fall is so lovely but summer ending is SO depressing haha. anyways that grilled peach and cado salad looks dewiiiishious! i’m excited for squash and tomatoes to be in season and i can’t wait to get out east to score my major box of tomaters!

  • I love this idea! I’ve tried grilled peaches before, which are delicious, and want to keep this salad in mind while the weather is still warm.

    This weekend I have been spending as much time outside as possible, canoeing and running and hiking. It’s ideal.

    i am doing a whole lot of nothing for the last few days of summer… and i’m perfectly okay with that :) hoping to hit up some hiking trails in the hudson valley in late september when it’s cooler out, which seems much more sensible.

  • I’d love to say it’s the last few days of summer but unfortunately I live in Florida and it won’t feel like fall until the end of October-if we’re that lucky.

  • fall is my fave as well! i’m hitting the last few days of summer in the dirty south on the beach! it’s coming to an end tomorrow though and i’ll most likely return to rain and temps 20 degrees cooler boo! however, i’m looking forward to busting out my boots soon!

  • Fall is my favourite season too! As long as it’s not super cold like it was last year (seriously, it was like winter from October-June for us!)
    My last days of summer include bike rides, lots of ice cream, gelato and sorbetto, and long walks in the late afternoon sun, outdoor meals … oh and that studying thing too ;)
