Hubba Hubba (giveaway)

Morning! Who’s ready for the weekend? I know I am, although I stayed up a wee bit too late last night watching the two hour season premiere of Grey’s Anatomy. Did you guys watch? Intense! But I’m not sure it needed to be so long….

I was craving cold cereal yesterday, so I had my usual mix of Kashi GoLean, banana, plum, pecans and almond milk.

I ate lunch early and mixed a few things together… I was craving protein.

  • bok boy leaves dressed in olive oil, balsamic and sea salt
  • 1 whole egg + 1 egg white
  • 1 heirloom tomato
  • hummus
  • sea salt

I was a hungry beast all afternoon… that often happens when I stay up too late and don’t get a lot of sleep. Cheddar popchips and Greek yogurt w/ banana and cinnamon:

Right when the light was changing from afternoon to evening, I went for a quick 2 mile run in the park, followed by a little upper-body strength training and ab work. No time to go the gym, but I better start making it there more often to justify the monthly withdrawal in my bank account!

For dinner, I made White Bean and Parmesan Baked Orzo . Instead of the orzo, I substituted farro (a chewy grain similar to wheatberries and freekeh). I also used zucchini and bok choy instead of spinach.

Hubba, hubba!  It was so comforting and hearty. And healthy! You can have cheesy goodness and do your body good at the same time :-) .

It was so good that I couldn’t stop digging into the leftovers, though…

Speaking of hubba hubba, I finally got a chance to utilize all of the gorgeous plums I’ve gotten from the CSA with this Rustic Plum Crostata with Lemon Thyme.

With the exception of meat, I will make anything Melissa Clark creates. Her recipes are always unique but simple enough to make, and sure to impress both your mother and a table full of guests. This tart/pie/crostata was no different. The crust was fabulous, the plums perfectly sweet-tart, the lemon thyme adding a wonderful complexity to what would ordinarily just be a very good dessert. And it made the house smell delicious!
