Where The Fruit Is

50% of my fridge was filled with fruit. Delicious, seasonal fruit, locally grown in nearby farms and delivered weekly to my CSA. But even having 2-3 apples and pears a day, I couldn’t eat them fast enough.

Something had to be done.

I chopped up five different kinds of apples and two pears, but left the skins on.

Pretty soon, the whole apartment smelled like the way you always hope apple pie will taste (but it rarely ever does).

And the best part? It takes four ingredients, baby! Well, five, if you’re counting water. And you can pretty much sleep while it cooks.

PEAR-APPLE COMPOTE

Makes 4- 5 cups

Ingredients

  • 7 cups chopped apples + pears
  • 2 cups water
  • 1/4 tsp sea salt
  • 1/2 tsp cinnamon

Put apples and salt in a big soup pot and cover with water. Bring to a boil, then reduce to a low simmer. After about 10 minutes, add pears. Keep simmering for another hour and a half, stirring occasionally. Add cinnamon and cook 30 minutes longer.

This tastes just like pie filling, and it’s still perfectly sweet without any added sugar! I’ve been eating it plain, but I’m also planning on putting it on pancakes, in yogurt parfaits, with peanut butter toast… endless possibilities.
