50% of my fridge was filled with fruit. Delicious, seasonal fruit, locally grown in nearby farms and delivered weekly to my CSA. But even having 2-3 apples and pears a day, I couldn’t eat them fast enough.

Something had to be done.

I chopped up five different kinds of apples and two pears, but left the skins on.

Pretty soon, the whole apartment smelled like the way you always hope apple pie will taste (but it rarely ever does).

And the best part? It takes four ingredients, baby! Well, five, if you’re counting water. And you can pretty much sleep while it cooks.

PEAR-APPLE COMPOTE
Makes 4- 5 cups
Ingredients
- 7 cups chopped apples + pears
- 2 cups water
- 1/4 tsp sea salt
- 1/2 tsp cinnamon
Put apples and salt in a big soup pot and cover with water. Bring to a boil, then reduce to a low simmer. After about 10 minutes, add pears. Keep simmering for another hour and a half, stirring occasionally. Add cinnamon and cook 30 minutes longer.

This tastes just like pie filling, and it’s still perfectly sweet without any added sugar! I’ve been eating it plain, but I’m also planning on putting it on pancakes, in yogurt parfaits, with peanut butter toast… endless possibilities.

Oh, that looks good! I have been getting pears and apples in my organic produce box every weeks too, and this week we got grapes and pomegranates too!
That looks fabulous! When I was in Tbilisi, compote referred to a fruit-juice-like beverage, and for some reason I’ve never run across it anywhere else (except in books). You inspired me to spend 5 seconds on wikipedia to sort out that, yes, indeed, in Eastern Europe it refers to a drink, while elsewhere it is your delightful concoction (which seems so perfectly fallish–I know you said pancakes, but what about as a crepe filling?)! On the what the heck do we do with all this produce yet, I’ve commandeered our last head of cabbage and am attempting sauerkraut (directions: chop, brine, wait).
I love compotes, I still have 2 bags of it in my freezer! I love it with a crumbled muffin and yoghurt or even blended into a smoothie or stirred into oatmeal, Yum!
This is my absolute favorite thing to make with tons of apples. Super easy and so delicious!
