Bonjour! How are you this morning? I’m feeling pretty good- weekendweekend!- although I need to invest in some new pillows. I woke up with the worst crick in my neck!
Breakfast was hot stovetop oats, eaten in my cozy sweats and fuzzy socks. Along with the paper, it’s the best way to start the morning. (Interesting article about practicing Mormons trying to balance their religion with hipster culture.)
whole grain blend, almond milk, chia seeds, pear-apple compote, cashew butter, goji berries
I spent most of the morning and afternoon working on a problem set for my Statistics class… did you have to take Stats in school? It’s so strange to me! It’s math, but it’s also not math…
Lunch was a big salad with mixed greens, roasted Brussels sprouts, avocado, leftover tuna burger, red wine vinegar and olive oil.

I spotted this recipe for Pumpkin Softies and thought they would make pretty good snacks for school, because they’re a) homemade, b) extremely portable, c) already portioned out, and d) don’t make loud crunching sounds! (I always want to munch on apples, but I don’t think the other 500 students in my lecture hall would appreciate it.)

Hungry-Girl recipes aren’t usually for me (most of them call for items loaded with chemicals and artificial ingredients), but with just a couple substitutions, I made it work for this LVP. I used real eggs for the fake ones, and chocolate chips instead of raisins. Because, well, chocolate > shriveled grapes. They turned out well! Like a lighter slice of pumpkin bread. Perfect snack.
Packed up a mug of green tea with fresh mint + a pumpkin softie to take to class.

It turned positively frigid overnight (and it’s supposed to snow on Saturday!), and I don’t really know how to dress for it. I can’t bear pulling out my wool coat just yet, so I put on pretty much everything else. Ever wondered what five layers of clothing looks like? Puffy!

And this is what a wet diggity dog looks like as he cozies up on my pillow after our walk. (Don’t think I’ll be putting my face on that anytime soon.)

After class, I came home and assembled a quick dinner out of all of this week’s leftovers: sautéed kale, baked sweet potato, Green Giant veggies, roasted apples + tempeh, wild rice. It didn’t really do it for me… I need to do some cooking this weekend (time permitting), as my old standbys are getting b-o-r-i-n-g.

For dessert: apple, manchego, dark chocolate. I felt so European! And weird but good? A bite of manchego with the chocolate. Trust me.

We’re just hours away from the weekend! I have plans I’m excited about, and… it’s Halloween! Are you dressing up? Taking someone trick-or-treating? Baking something orange? Do share!

You are so beautiful!
After a month of events we are going to have a very low key halloween! Likely a bit of baking and some scary movies!
I think I’ll be eating my weight in pumpkin and adding it to every conceivable meal this weekend, I wish we really went for it and celebrated Halloween like you guys in the states here in the UK. I love how cosy you look all wrapped up!
Your dog pictures always make me smile. Such a cutie : )
I’m heading to spend the weekend at my parents’ house—my mom’s giving a talk tomorrow on staying healthy during the holidays, so I’m going to help out. Weather permitting (hah, snow), we’re going to this outdoor event tomorrow where they have thousands of jack-o-lanterns lit up. I think Sunday will involve brunch with some of my friends from “home” before heading back to the city.
oh my gosh, wild rice reminds me of when i was a toddler and lived in st paul. my mom used to make it all the time!
this weekend is all about my architecture project. :/ super lame. no halloween for me!
I’ll be at the beach helping a friend close up her cottage for the winter. Looks like it will be snow, wind, rain, and a good book. No swimming. In The Big City, kids trick or treat everywhere–on Broadway, in stores, restaurants, dry cleaners, Kinkos–everywhere. It’s wonderful.
There are also a few streets totally blocked to traffic which are basically Halloween fairs where the restidents dress up, scary music can be heard, and apartment lobbies are turned into haunted houses. Adults and kids have the most fantastic costumes. Then there’s the Village Halloween Parade. You just have to be there because it cannot be described.
That looks like great wild rice. I really like wild rice but always forget about it.
I’ll be dressing up for a party tomorrow. Pretty lame costume, but at least it’s better than not dressing up at all.
oh! i bookmarked the hungry girl recipes from yesterday! i love crusting my tilapia with panko crumbs thats a winner and her other pumpkin recipes sounded pretty interesting! glad you made them and liked them! we need a date soooooon
let me know when you think you’re free lady!
I had to take 2 semesters of statistics and had the same terrible teacher for both. I literally didn’t learn a thing and the only way I passed was memorizing the practice tests she would give us! I think I’ll bake those pumpkin softies to be festive but that’s about it!
love your trench! hween is my bday! im celebrating with a fancy night out on saturday to a place called ‘eleven’ you know, ive been seeing a lot of blogs run by morman girls who are all hipster..it’s seriously like the same model families too: husband wife and baby or pregnant with said baby. it’s almost like the morman church is doing a PR stunt or something. i read this stuff and i’m like is this real life?!
How do you make 5 layers work and do it so well? You look gorgeous!
Hey there! I couldn’t help but notice that article….where did you find it? I am a member of the Church of Jesus Christ of Latter Day Saints as well and would love to read it!
Thanks
AMEN on the hungry girl recipes. I cannot praise a recipe that is 50% chemicals! Glad you found some subs that worked for you! Lunch salad looks awesome. Its been way too long since I last had brussels! Have a good weekend!
oh thanks for the link to the article. since i live in mormon country and my whole fam is mormon, i am interested in reading it.
Argh, I’m debating taking on more stats-related course (econometrics) before graduating, just so I can read the quantitative social science studies that I think are mostly bunk (yes, I mean you Paul Collier!). We’ve taken a turn for the colder here, too. From a record high of 80 on Monday to several inches of snow on Wednesday. Re: Halloween–pumpkin edibles have just shot to the top of my to-do list (following finishing 1Q84).
We eat similar things, it’s cool to see that. I usually end my night with chocolate too.
Even though I live in Southern California, I still dress in layers because I always run cold in the morning and in the evenings. The only time I don’t have layers on is during lunch time when I try to dine outside.
P.S. Yes, I took statistics and actually loved it. I even took extra classes as an elective (nerd alert!) I like math and that’s why I’m in that field.
Been a busy month at school so I skipped Halloween and opted for a low-key dinner with friends. The oatmeal looks great and your dog looks so cute.
Right after study a handful of in the weblog posts on your web-site now, and I definitely like your way of blogging. I bookmarked it to my bookmark internet site list and might be checking back soon. Pls verify out my internet web site also and let me know what you assume.
