Oatless Oats

My sweet tooth has been in full swing this past week; it’s been demanding cakes and cookies like it’s the end of the world.

I’ve made a couple different things trying to satisfy it, starting with this Deep-Dish Cookie Pie (made in mini bundt pans). It was pretty good, but I don’t know if any of my friends would be tricked into thinking it was a pizookie. I think I prefer it in batter form.

I also tried this Peanut Butter Chocolate Lava Cake For One… while it’s pretty, it didn’t have a whole lot of flavor. I think I may have skipped a step, too, because it came out super dense.

My favorite “mini dessert” turned out to be Vitalicious’ mini fudge cakes, topped with Greek yogurt and cinnamon. Perfect breakfast or lunch dessert! (Because why should dinner get to have all of the fun?)

For those of you who haven’t tried Vita’s products, I know what you’re going to say, and I agree! It’s tempting to think it’s just a packaged cake filled with artificial ingredients. But it’s actually got pretty good stats. (There’s also a sweepstakes going on: one person will win a treadmill, and ten will win the same 48-pack of mini cakes that I received from the company.)

Another new obsession? Popcorn.

I always tease my mom because when my dad’s away, she often subsists on scrambled egg and popcorn. But, she pops her own corn using one of those old-fashioned poppers with the handle, and she showed me how to do it. I made my own chocolate peanut butter version, and I was not messing around: each kernel was coated with melted chocolate chips, peanut butter, nutritional yeast and salt. Bam.

My favorite new taste of the week, however, was Mama Pea’s Teriyaki Tofu (from her book). The recipe made a lot of extra sauce, so I’ll be eating it for quite some time! I halved the sugar- it still tasted great- and served it with her Thai Crunch Salad (also from the book).

Leftovers were scrumptious layered with steamed vegetables (kale, sweet potato, edamame), sweet brown rice, and sesame-chili sauce (from this recipe). I’ve really been digging rice bowls lately!

Finally, as promised, here’s my method for oat-free oats. I’m fresh out of oatmeal, so this was a perfect morning for me to whip up a batch!

OATLESS OATS

based on this recipe

serves 1

  • 3 egg whites
  • 1/2 cup pumpkin purée
  • 1/2 cup milk of choice (I used flax milk)
  • 1 t chia seeds
  • 1 t ground cinnamon
  • 1/4 t ground ginger, optional
  • 1/4 t ground cloves, optional
  • toppings of choice

Combine all ingredients in a small saucepan and cook, stirring constantly, over medium heat. Once the eggs turn white and the texture thickens, your “oats” are ready to eat (5-10 minutes).

  • I threw chopped up Butterfinger into brownies and oatmeal cookies this weekend and it was the best decision I’ve made all year. I’ll share my next batch with you!

  • i’ve been waiting for this recipe! it’s on my to-do list for sure haha, although i feel like it wouldn’t hold me over! do you like it as much as a real bowl of oatmeal or is it kind of really eggy?

    btw you have been FIERCE in the kitchen lady! and i need to come over for your mom’s popcorn. airpopped on the stove top reigns over all other ways

    and flavored popcorn is the best! I love that there are so many things you can do with it!! chocolate, PB, caramel, cheesey, parmesan, garlic, savory, sweet, etc etc.

  • I’ve been loving big bowls of popcorn, I made some at the weekend with braggs and cocoa powder, sounds weird but was lush! I guess its like salted chocolate? yum x

  • Mama Pea’s Thai Crunch salad is one of my favorites too! I’m glad to hear the Teriyaki Tofu is just as delicious with half the sugar; I’ll be trying it this week, as I have two packages of tofu in my fridge waiting to be eaten.

    Another must try? Oatless oats. Um, yum! Do you think the chia seeds contribute significantly to the volume? Or can I get away without using them?

  • I made some chickpea chana masala Sunday night. It was a little spicy for me yet still delicious.

    I haven’t tried the fudge cakes yet, but I have had chocolate vitatops. Luckily, they’re on sale at my grocery store this week. Woot!

  • I like the sound of your oarless oats, but that sounds like a lot of whites. What do you do with the eggs? Or do you just buy egg whites?

  • Made your version of oatless oats yesterday! I was skeptical, but amazed with the final product! It was so similar to oatbran, and it made a huge portion. Kept me full for a full 5 hours, too, which plain old oatmeal would have never done!

Physical exercises are extremely essential to avoid obesity and preventing yourself from getting stomach fat. • Addiction: An addiction to alcohol lowers metabolic activity, which increases obesity. . Calories gained from excess alcoholism are often accumulating into stomach fat. ‘Beer belly’ is a term specially used in those who are addicted to drinking. Smoking can encourage accumulation of stomach fat. • Weak or Improper digestion: Improper digestion leads to a number of gastrointestinal problems, which results into the accumulation of stomach fat. Not eating food regularly interferes with proper digestion of food. Moreover, lying in bed immediately after taking supper without any physical activity also increases storage of stomach fat. • Slow metabolism: Lower rate of metabolism causes the calories to burn slower which increases fat accumulation around the belly. • Menopause: Women face several health problems during menopause stage which includes stomach fat accumulation. . Hormonal changes after menopause lead to accumulation of stomach fat in many women. • Incorrect posture: A sloppy body posture can give your stomach the appearance of a ‘pot belly’. Using correct body posture while standing or sitting makes your body look healthier. It is difficult to lose belly fat.
