<p>I did not, as planned, practice yoga last night.  Instead I caught up with my little red-headed, snuggling in bed with the phone.  It felt just like high school again!  Some friendships will always stay strong.  I set my alarm for 6:30 and got up to do a <strong>20 minute hip opening flow</strong> on <a href="http://www.yogadownload.com">Yoga Download</a>.  I was still pretty tired so I kept my eyes shut the whole time; it felt amazing! My hips have been really tight from sitting in a chair all day.</p>
<p>Breakfast was a big bowl of <strong>oatmeal</strong>, eaten in bed while watching <em>Grey&#8217;s Anatomy</em>.</p>

<p>After I finished eating, I peeled back the covers and &#8220;slept&#8221; for another 10 minutes.  It probably didn&#8217;t do anything to take away my drowsiness, but it was too comfy to resist.</p>
<p>I acted as courier and dropped a package off for my boss for someone in my neighborhood; I&#8217;d anticipated getting to work late as a result, but I arrived only 20 minutes later than usual!  I <em>love</em> when the subways run on schedule.  Running around seemed to stimulate my metabolism, so I snacked on an <strong>orange</strong> to soothe my hunger.</p>

<p>I was <a href="http://lilveggiepatch.com/2010/01/10/getting-my-act-together/">scheduled</a> to do <strong>speedwork</strong> at the gym today, and I&#8217;ll be honest: I really didn&#8217;t think I was going to make it.  As I&#8217;ve mentioned, it&#8217;s incredibly difficult for me to stay focused and motivated while on the treadmill, and even if I cover the screen with a towel, I keep peeking to see how much time has gone by.  Tedius!  But, I made it through the session and logged my miles.  Speedwork is great because it forces you to keep changing things up!</p>
<p><strong>Mile 1: </strong>warm-up at 5.8 mph, 0.5% incline</p>
<p><strong>Miles 1.1-4.0: </strong>intervals: 1600 (.25 mile) @ 6.9 mph, 800 (.125 mile) @ 6.2 mph. Continuous repetition. 0.5% incline</p>
<p><strong>Mile 4.0-4.75: </strong>5.8 mph + two 7.2 mph sprints @ 0.5% incline</p>
<p><strong>Mile 4.75-5.0: </strong>3.5-4.5 mph</p>
<p><strong>Total time: </strong>48 minutes</p>

<p>When I got home, I went straight to the kitchen to start making dinner.  The upside of your boyfriend being <a href="http://theupwelling.com/tour-dates">gone</a> a lot of the time?  No one cares if you&#8217;re a sweaty mess!  Unfortunately, no one was here to eat this dinner with me.</p>

<p>I&#8217;ve gotten several e-mails asking me about <strong>tempeh</strong>! How to eat it, does it need to be cooked, my favorite recipes, etc.  Tempeh is one of my favorite proteins, but I didn&#8217;t even really start eating it until about a year ago!  Now, I eat it all the time: in salads&#8230;</p>

<p><strong>But what <em>is</em> tempeh, exactly? </strong></p>
<ul>
<li><strong>Tempeh is made from fermented soybeans</strong> and is often produced with other <strong>grains</strong>.</li>
</ul>
<ul>
<li>It has a firm texture and a slightly bitter taste; if the taste bothers you (I don&#8217;t mind it), you can always boil it in water for a few minutes.  Boiling it allows it to more easily absorb the flavors of whatever sauce you choose to marinate or top it with, if any.</li>
<li>It&#8217;s a protein powerhouse! One serving of tempeh can have as much as <strong>18g of protein </strong>(not to mention it&#8217;s free of cholesterol).</li>
</ul>
<p><strong>How I eat tempeh</strong></p>
<ul>
<li>Like tofu, I often just dice it up and eat it as is on top of a salad.   I realize this isn&#8217;t for everyone and I didn&#8217;t love it at first, but now it&#8217;s one of my favorite proteins! It technically is already &#8220;cooked&#8221;, so you don&#8217;t <em>have</em> to &#8220;do&#8221; anything to it.  Again, the taste can be a little strong, but I find a good salad dressing with a good mix of sweet and spicy components really compliments this bitterness.</li>
<li>Grill it! Simmer the tempeh for about 10 minutes, then marinate in your sauce of choice (<a href="http://glidingcalm.wordpress.com/gliding-calm-tofu/">Gliding Calm&#8217;s tofu rub</a> works wonderfully) for anywhere from 20 minute to 1 hour, depending how much time you have.  Then plop your tempeh on the grill (or Geoge Foreman, if you&#8217;re an apartment dweller like me) and cook until grill marks form. Switch sides.</li>
<li>Toss it in a stir fry or curry!</li>
</ul>

<p><em>Inspired by <a href="http://www.101cookbooks.com/archives/tempeh-curry-recipe.html">this</a> recipe.</em></p>
<ul>
<li>1 small sweet potato</li>
<li>2 small yukon gold potatoes, or other potato of choice, peeled and diced</li>
<li>1-1/2 t salt</li>
<li>2 T coconut oil</li>
<li>1 small yellow onion, peeled and chopped</li>
<li>8 oz tempeh, diced</li>
<li>1/4 t turmeric</li>
<li>1 t allspice</li>
<li>1/2 t garam masala</li>
<li>1/2 t ground ginger</li>
<li>1/2 t cayenne</li>
<li>1-15 oz can crushed tomatoes in thick purée</li>
<li>2 handfuls spinach</li>
<li>2 T plain nonfat yogurt</li>
<li><em>optional garnishes: cilantro, mint, or parsley </em>(whatever you have on hand), <em>shredded coconut, agave nectar</em></li>
</ul>
<p>Bring a pot of water to boil.  Place potatoes in steamer basket and sprinkle with 1 tsp salt; steam until they are tender, 20-30 minutes.  The sweet potatoes may take a shorter length of time; if this happens, remove them from the basket when they are done and continue to cook the yellow potatoes.</p>
<p>Meanwhile, heat coconut oil in a large skillet until it shimmers.  Add onion and sauté over low 5 minutes, or until tender.  Add spices.  Stir.  Add tomatoes and remaining 1/2 tsp salt.  Stir in yogurt until mixed well.  Add tempeh and cook 5 minutes, stirring occasionally.  Add spinach and cover about 5 minutes or until leaves begin to wilt.  Once potatoes finish cooking, add them to the skillet and remove from heat, stirring to combine.</p>
<p>Serve, garnishing with agave nectar, cilantro (or other fresh herb), and shredded coconut.</p>
<p><em>Serves 4.</em></p>
<p>I enjoyed my curry with <strong>Turkish rice</strong>.  It was fabulous! I definitely recommend a light drizzle of agave or maple syrup&#8230; it really brings out the flavor.</p>

<p>Dinner was enjoyed with a glass of <strong>&#8220;3 Buck Chuck&#8221;</strong> from Trader Joe&#8217;s.  It was delicious! I would have had <em>no </em>idea that it only cost three dollars.  I&#8217;m glad I know it&#8217;s good&#8230; I&#8217;ll have to stock the wine rack with it!</p>

I sprinkled my bowl (AKA Tupperware container <img src='http://lilveggiepatch.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':-D' class='wp-smiley' /> ) with <strong>cinnamon</strong> and <strong>chocolate chips.</strong></p>

<p>Last night while I was working in the kitchen, I thankfully had the foresight to whip up enough oatmeal to last me the week.  I had enough time to make<strong> steel-cut oats; </strong>it really only takes 25 minutes total, and it&#8217;s definitely worth the extra effort.</p>

<p><strong>This morning I reheated a portion and topped it with warmed frozen berries, ground flax, agave and almonds.</strong> For some reason I prefer whole nuts to nut butters when I eat steel-cut oatmeal&#8230; it must be something about the <em>nutty texture</em> of the grains.</p>

<p>I said it a week ago and it still rings embarrassingly true: we need to go grocery shopping.  However, while we don&#8217;t have a lot of fresh produce, we <em>do </em>have ingredients that, with a little creativity, can make up a pretty good meal.</p>

<p>When I was living in France, I noticed that a lot of people had lentil salads for lunch or to supplement their dinners.  <strong>Lentils are high in protein, fiber, vitamins and minerals.</strong></p>
<p><strong>Lunch-Break Protein Salad</strong></p>
<ul>
<li>3/4 cup canned lentils</li>
<li>1/3 cup frozen edamame, thawed</li>
<li>1 tbsp crumbled feta</li>
<li>1/2 tbsp olive oil</li>
<li>1 tbsp vinegar</li>
<li>crushed walnuts</li>
</ul>
<p><em>Gently stir ingredients together.  Serves 1.</em></p>

<p>This lentil-edamame salad was all made with ingredients that had been sitting in my fridge, pantry or freezer for at least a month.  I should shop here more often!  I also brought <strong>carrots, hummus</strong>, and a <strong>honey-flavored Oikos Greek yogurt</strong> with me.</p>

<p>Today was my first day at work on my own, without being trained or supervised.  It was a little overwhelming, but a lot of fun.  There&#8217;s a lot of information being thrown at me, but I&#8217;m taking lots of notes, asking questions, and doing my best.</p>
<p>New York has a lot of hidden gems, many of which are public parks like this one.  Surrounded by office building, they have waterfalls that drown out traffic and city noise, open plazas and cafe tables for socializing, and trees to bring a little zen into your day.  I spent my lunch in on of these parks today to clear my mind and recharge.</p>

Whatever it takes!</p>

<p>This morning when I woke up at 8:30, I panicked for a few minutes before remembering that my boss (at my internship) had canceled work for the day. I was up and ready to go, though, which things to do and people to see!</p>
<p>I was excited to try these<strong> goji berries</strong> with my breakfast.  I&#8217;ve only ever tasted these chopped up and mixed into other things, but when I snatched them right up when I spotted this bag on sale for $2.19 at the food co-op <a href="http://lilveggiepatch.com/2009/11/22/dos-and-donts/">this weekend</a> (they&#8217;re usually almost triple that price).  <a href="http://altmedicine.about.com/od/completeazindex/a/goji.htm">Goji berries</a> are rich in antioxidants, and among their many benefits they are touted to improve eyesight (they&#8217;re rich in beta carotene), boost immunity, and spice up your sex life <img src='http://lilveggiepatch.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' /> </p>
<p><a rel="attachment wp-att-6180" href="http://lilveggiepatch.com/2009/11/24/belly-full-o-pasta/img_2472/"><img class="alignnone size-large wp-image-6180" title="Goji Berries" src="http://lilveggiepatch.files.wordpress.com/2009/11/img_2472.jpg?w=1024" alt="" width="486" height="362" /></a></p>
<p>I tossed them in with <strong>Greek yogurt, 1/2 toasted Trader Joe&#8217;s Berry Mango muffin, warmed frozen berries and flaxy peanut butter. </strong>The goji berries are firm but chewy; the texture really complemented the rest of the mess.</p>

<p>This held me over for a <em>really</em> long time.  The rest of the morning was spent reading, researching, and waiting until I was digested enough to go for a run.  I warmed up with a 20 minute <a href="http://www.yogadownload.com/OurClasses/OurClassDisplay/tabid/183/prodid/142/default.aspx">hip opening flow</a>, then set out for an easy 2 mile run.</p>

<p>Most of my runs are going to have to be in the morning now that it&#8217;s getting dark earlier; I&#8217;ll have to crank out some long runs on the treadmill when I&#8217;m in Russia, however.  I&#8217;m a little nervous that I won&#8217;t be able (psychologically) to run 7 miles on a treadmill&#8230;. <strong>What are you tips for making it through a long treadmill session?</strong></p>
<p>Lunch was pretty basic (and very <span style="color:#003300;"><strong>green</strong></span>): the last of the<strong> <a href="http://lilveggiepatch.com/2009/11/22/dos-and-donts/">spinach and rice soup</a></strong> and a <strong>crunchy salad</strong> (spinach, broccoli slaw, celery, roasted almonds; sesame oil/rice vinegar/sesame seed dressing).</p>

<p>My interview was at 3:30; when it was over I hopped right back onto the subway and headed home.  I had 1/3 of a <strong>Key Lime Pie Larabar</strong> on the ride back:</p>

<p>I found myself in one of the rare instances when I didn&#8217;t have anything to read on the subway&#8230; it was completely disorienting.  I <em>always</em> have a book with me (sometimes two!); I would have brought one to prom if it had fit in my clutch!  <a href="http://theupwelling.com">Ari</a> calls me his <strong>word nerd</strong>.</p>
<p>When I got home, I went straight to the kitchen to unwind and get dinner started.  I&#8217;ve had my eye on <a href="http://www.marthastewart.com/portal/site/mslo/menuitem.76d5d3769e1fc1611e3bf410b5900aa0/?vgnextoid=c479cf380e1dd010VgnVCM1000005b09a00aRCRD">Martha Stewart</a>&#8216;s recipe for <strong>Roasted Cauliflower with Pasta and Lemon Zest</strong> (in the November 2009 issue) for quite some time&#8230; a little <em>too</em> much time, because the head of cauliflower I&#8217;d bought in anticipation a couple weeks ago had started to mold.  But have no fear! I just sliced off the offending areas. I&#8217;m frugal, what can I say?</p>

<p>While slicing onion, I remembered what one of my cooking teachers always said: always cut out the middle greenish part of an onion.  I can&#8217;t quite remember why that is; I think it has something to do with it not being fully developed yet and causing stomachaches.</p>

<p>I was eager to try out this pasta&#8230; <strong>Nature&#8217;s Place </strong>is Hannaford grocery store&#8217;s natural, minimally processed brand.  Fresh (not dried) pasta always tastes so much better to me.</p>

<p>When the veggies finished roasting (perfectly crispy!), it was all I could do to keep myself from eating them all right off the baking sheet.  I&#8217;d already made quite a dent in the cauliflower while I was chopping it&#8230; if I wasn&#8217;t careful, I wouldn&#8217;t have any ingredients left for dinner!</p>

<p>There wasn&#8217;t too much room in my tum for dessert, but in the words of Tim Gunn, I made it work.  Dried figs and prunes stuffed with dark chocolate chips are <em>so good</em>&#8230; and they just keep me going back for more.  They kind of look like frogs, right?  I seem to have successfully eaten nuts in some form or other for every meal and snack today.</p>

			<content:encoded><![CDATA[<p id="top" /><strong>Are you an &#8220;all or nothing&#8221; type of person?</strong> My body seems to be.  My internal clock is so out of whack right now!  For the past week, I&#8217;ve alternated between going to bed early and getting more than a full night&#8217;s sleep (10+ hours) and getting less than 6 and feeling completely wiped.  This morning was the latter.  Last night, even though I was exhausted,  I could not get myself to drift off.  I knew I had to get up early to get ready for an interview, and the pressure of knowing I needed to sleep only made it worse.  I dragged myself out of bed, bleary and blurry eyed (I&#8217;m blind as a bat), not even stopping to put on my glasses.  I had one mission, and one mission only.</p>

Yes, please!</p>

<p>I had two back-to-back interviews starting at 9 (which I think went well); afterward I needed to unwind a little with some teasing retail therapy (AKA touch everything, buy nothing) at J.Crew and Anthropologie.  How is it that a store (or two) can be filled with only <em>perfect</em> things?  But my bank balance remained stable, and I left satisfied with the clothes on my back.</p>

<p>After making sure there were no more stores I needed to browse through, I came home to get some done and eat lunch.  I heated up a bowl of<strong> <a href="http://lilveggiepatch.com/2009/11/22/dos-and-donts/">Spinach &amp; Rice soup</a></strong> and added lots of <strong>fresh parsley,</strong> and served it alongside a small <strong>sweet potato with brown sugar and cinnamon</strong>.  Perfect mid-Monday comfort food, if you ask me.</p>

<p>The rest of the afternoon was spent writing. Welcome to my &#8220;office&#8221;!  You may recognize it as the kitchen table, but during the day I spread out and use it for reading, writing, researching, and tea-drinking.  I tried the <strong>Sugar Plum Spice holiday tea</strong>&#8230; <em>so</em> good.  I think this might have been the first flavor they came up with, because I remember having it a long, long time ago before they changed their packaging.</p>

<p>After successfully moving to decaffeinated tea, I didn&#8217;t want to go back to drinking coffee so late in the day.  Instead, I moved on to a cup of<strong> Sugar Cookie Sleigh Ride</strong>.  I don&#8217;t know how they do it, but <em>this smells</em> <em>so much like a cookie!</em> It&#8217;s very vanilla-y, but it has a very soft taste without a hint of bitterness.</p>

<p>Tonight was another example of how many secrets this city has to offer, both food-wise and other.  I never would have suspected that a restaurant like this could exist (and thrive!) in Midtown Manhattan, in the heart of corporate offices and tourist attractions.  Was I wrong!  It goes to show that people <em>do</em> want to eat locally and sustainably, the options just have to be made available.</p>

<p>One of the staff members had made an extra <strong>Vitality Berry smoothie</strong> (sweet cherry, açai, blueberry- pomegranate juice, ginger-agave), so Ilena and I split it with our dinners.  It was really good, and helped ease the heat in my mouth leftover from my spicy salad dressing!</p>

<p>&#8230;and were treated to another smoothie sample! This time we tried the &#8220;orange creamsicle&#8221; (it&#8217;s new, and the ingredients aren&#8217;t listed).  As Ilena said, it really <em>did</em> taste like a creamsicle, &#8220;but not in the bad way&#8221;!</p>

			<content:encoded><![CDATA[<p id="top" />Evening! How are you doing on this fine Thursday? Today has been a strange day and I&#8217;ve felt a little out of sorts for most of it! Not in a bad way, just&#8230; different.</p>
<p>This morning I woke up bright and early, eyes-a-burnin&#8217;, ready to work.  I made a pot of coffee (and drank it black, which is unusual for home-brew&#8230; I usually only drink it straight when I&#8217;m out) and got breakfast ready.  It was nutty,fruity, and choco-coconutty.</p>

<p>I worked all morning, got &#8216;er done, and before I knew it, it was almost time to go to physical therapy.  But what about lunch?! I made a <em>very</em> quick salad, and ate it even faster.</p>

<p>When I left the house it had started raining, and kept on for the rest of the day.  I got to the subway and they were doing track work on my line again, so I had to call my PT and push the appointment back. Again.  They must hate me! But I was able to get an appointment at 3:30 instead of 2, even though I probably would have made it on time.  I was scheduled to run five miles today; it would have been too dark by the time my appointment was over and I got back home, but I didn&#8217;t have enough time to go to the gym first.  Quite a conundrum! So I decided to push the run back until <em>tomorrow</em>, but it&#8217;s supposed to rain again so I might just have to tough it out and get wet.  I&#8217;m going to have to figure this out soon, though, because it&#8217;s getting darker earlier and earlier now (4:30) and I don&#8217;t think it&#8217;s a good idea to run in the park at night by myself.</p>
<p>While I was weighing each option, I took shelter from the rain in the subway and snacked on a cup of <strong>Strawberry Oikos</strong>.</p>

<p>My appointment went well; <strong>I did a lot of leg work on the pilates machine</strong> which I have a feeling I&#8217;ll feel tomorrow!  Even though I had recently eaten, my stomach was grumbling the whole time and as soon as I walked out of the office I dug into my purse and found an <strong>Apple Pie Larabar</strong>.  Never underestimate the importance of the &#8220;emergency snack.&#8221;</p>

<p>The bar held me over for a while, but when I got home at 5:30, I was already thinking about dinner again.  I think it must be the darkness outside that&#8217;s throwing off my internal clock.  I looked in the pantry, the fridge, and the hanging produce basket to see what I could see.</p>

<p><a href="http://branappetit.wordpress.com/">Brandi</a>&#8216;s <a href="http://branappetit.wordpress.com/2009/11/19/vegan-lunch-a-go-go/">pasta-stuffed squash</a> inspired me, so I decided to combine two of my favorites: roasted veggies and loaded macaroni and cheese.  <strong>I cut an acorn squash in half and rubbed each with olive oil, salt, pepper and cayenne; then I roasted them at 450˚ for about 30 minutes.</strong></p>
<p>Meanwhile, I sipped on a glass of <a href="http://www.rosemountestate.com.au/wine_list/diamond_label/sauvignon_blanc/index.htm"><strong>Rosemount Sauvignon Blanc</strong></a>.  Sauvignon Blanc is one of my favorite white wines, and from my experience, unless the wine is <em>really</em> cheap (and you remember buying it at the liquor store near your college&#8217;s campus), it&#8217;s a pretty safe bet.</p>

<p><strong>Rosemount </strong>is an Australian-based vineyard. In traditional French Sauvignon Blanc,  Sauvignon Blanc and Sémillon grapes are often blended together; Sémillon come from Bordeaux and Southwest France, whereas Sauvignon Blanc can come from Bordeaux, the Loire Valley, southwestern France and Languedoc.(<a href="http://www.amazon.com/French-Wine-Dummies-Ed-McCarthy/dp/0764553542/ref=sr_1_1?ie=UTF8&amp;s=books&amp;qid=1258682325&amp;sr=8-1">FWFD</a> 19).  &#8220;Sauvignon Blanc is the dominant grape variety (60 to 100 percent) in most of Bordeaux&#8217;s dry white wines, whereas Sémillon dominates the sweeter white wines&#8230;. The Sauvignon Blanc part of the wine offers immediate charm; it&#8217;s crisp, lively, herbaceous, light0bodied, and develops early&#8221; (FWFD 70). Rosemount&#8217;s version is also a Sémillon blend.</p>
<p>When the squash was just about done, <strong>I made a bowl of macaroni and cheese mixed with tuna, nutritional yeast and chili flakes. </strong></p>

<p>I packed the mixture into the squash halves and baked them for 2 minutes longer.</p>

<p>These were so good! I loved the sweetness of the squash, the saltiness of the tuna and the cheesiness of the pasta noodles.  I know I&#8217;ve been getting <a href="http://lilveggiepatch.com/2009/10/21/this-sedentary-life/">a</a> <a href="http://lilveggiepatch.com/2009/10/25/that-limbo-place/">little</a> <a href="http://lilveggiepatch.com/2009/11/09/back-to-the-microwave/">crazy</a> with my mac &#8216;n cheese lately, but it&#8217;s so much better that way <img src='http://lilveggiepatch.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' /> </p>
<p>I was craving ice cream for dessert, so I started with a <strong>Pure Dark Chipotle/ semi-sweet/bittersweet chocolate sauce</strong>.  A few drops of water, 30 seconds in the microwave, and a quick stir gives you melty freshness that&#8217;s far better than Hershey&#8217;s.</p>

<p>The rest of the morning was spent preparing for an interview.  I went into the city an hour and a half early so, <a href="http://lilveggiepatch.com/2009/11/13/sweet-coconut-nights/">subway problems</a> or not, there&#8217;d be no chance of being late.  I had so much spare time that I went into a deli to go over my notes and read some Canadian snail mail.  To secure a seat, I bought some <strong>fruit salad</strong>.</p>

<p>My body must have needed sleep because I nodded right off after lunch! Today is the fourth consecutive day I&#8217;ve gotten up significantly earlier than I&#8217;m used to, and the rest of the week will be no different.  Hopefully in the next few weeks there will be more early mornings and regular hours, if you catch my drift! When I woke up, I made some <strong>coffee</strong> and snacked on these <strong>Jalepeño Honey Mustard Pretzel Sticks</strong> from <a href="http://www.kaysnaturals.com/">Kay&#8217;s Naturals</a>.</p>

<p>These are my favorite of the Kay&#8217;s products I&#8217;ve tried; they&#8217;re satisfying, and didn&#8217;t leave me with horrible garlic breath the way the <a href="http://lilveggiepatch.com/2009/10/27/five-minutes-or-less/">protein</a> <a href="http://lilveggiepatch.com/2009/09/18/the-big-6/">chips</a> <a href="http://lilveggiepatch.com/2009/10/03/22/">did</a>.</p>

<p>The rest of the afternoon and evening was spent working.  When it was getting close to dinner time, I simmered and marinated some <strong>tempeh</strong> using the recipe for <strong>Hot Sauce-Glazed Tempeh</strong> from <em>Veganomicon</em>.</p>

<p>A reuben sandwich is <a href="http://en.wikipedia.org/wiki/Reuben_sandwich">traditionally</a> made with corned beef, Swiss cheese, saurkraut, and creamy salad dressing.  I don&#8217;t remember eating one even when I <em>did </em>eat meat, but my version is much more appealing to me.  It&#8217;s based on one of my all-time favorite sandwiches: grilled cheddar with Granny Smith apple slices on Peppridge Farm Cinnamon Raisin Swirl bread.  Tonight, I went a step further&#8230;</p>

I topped mine with roasted almonds and walnuts.</p>

<p>After dinner I finished my reading, and just as I was about to e-mail my notes to myself (I type everything out on my Blackberry&#8230; it&#8217;s an odd habit), the memo deleted itself.  I searched IT message boards, asked people I knew with Blackberries if there was any way to retrieve data that wasn&#8217;t backed up on a computer&#8230; nothing.  Seven hours of work has been LOST.   So&#8230; tomorrow will be another early morning.  It&#8217;s not the end of the world.</p>

<p>Last night, once again, hunger pangs dragged me from bed.  I grabbed an apple and snuggled back under the covers.</p>

<p>I think it&#8217;s because I&#8217;ve been eating dinner earlier than I&#8217;m used to&#8230; growing up, we ate dinner between 8 and 9, but now when I cook for myself, I eat around 7. Interesting!</p>
<p>This morning I got up early to finish some work for my internship, and by the time I was ready for breakfast I&#8217;d worked up quite the appetite.  I made my first batch of oatmeal in a couple weeks, and it did not disappoint.</p>

<p><strong>I microwaved 1/2 cup water, 1/2 cup oats, pumpkin and frozen berries all together at the same time.</strong> Saves time, and I didn&#8217;t have to wash an extra dish.  I topped the dish with <strong>brown sugar</strong> and a scoop of <strong>flaxy peanut butter</strong>.</p>
<p>Things were a little busier at the office today, and before I knew it it was time to meet my mom for lunch.  We went to <a href="http://www.aocnyc.com/">AOC</a>, a cute French bistro in the West Village.</p>

<p>We had some <strong>buttered bread </strong>while we waited for our orders to arrive.</p>

<p>I ordered the <em><strong>Salade Nordique,</strong></em> which was not only beautifully presented&#8230;</p>

<p>&#8230;but it was fully loaded with delicious ingredients!  <strong>Poached salmon, smoked salmon, jumbo lump crab meat, a poached egg with grainy mustard, grapefruit, mixed greens, and tomatoes</strong>.</p>

<p>It was delicious.  My favorite bites were forkfuls of <strong>smoked salmon-wrapped grapefruit</strong>&#8230; I really have to try this at home.   I didn&#8217;t come close to finishing the salad, and took a lot of the salmon home.  It&#8217;ll make a delicious lunch tomorrow!</p>
<p>We each drank a cup of coffee, then went to <strong>The Lite Choice</strong> for dessert.   <strong>I got a small cup of frozen yogurt with half Fluffernutter, half Dark Chocolate Truffle</strong>.</p>

<p>My mom went back to work, and I went home to get some things done.  I went for a <strong>2 miles </strong>run as my <a href="http://lilveggiepatch.com/2009/11/15/a-wedding-in-connecticut/">training schedule</a> directed, then did some<strong> ab work</strong> and played around on the<strong> foam roller</strong>.  Sweet pain.</p>
<p>I wanted to make something fast, easy, delicious, and comforting for dinner, and came up with a new twist on an old favorite.  It&#8217;s low in fat, high in flavor and smells like heaven.</p>
<p><strong>Sweet and Spicy Sweet Potato Leek Soup</strong></p>
<p><em>Serves 1-2</em></p>
<p>Ingredients</p>
<ul>
<li>1 medium-sized sweet potato, peeled &amp; chopped</li>
<li>1 leek, finely sliced</li>
<li>1/4 onion, diced</li>
<li>2 cloves garlic, minced</li>
<li>1/2 inch ginger, minced</li>
<li>1 T olive oil</li>
<li>1 bay leaf</li>
<li>2 cups vegetable broth (I made my own using <a href="http://www.superiortouch.com/retail/products/better-than-bouillon">Better Than Bouillon</a>)</li>
<li>3 cloves</li>
<li>1 tsp curry</li>
<li>1 tsp cinnamon</li>
<li>1/4 tsp nutmeg</li>
<li>parsley (optional)</li>
</ul>

<p>Heat oil over medium heat.  Add onions and garlic and cook, stirring occasionally, until onions are near-transparent,  about 5 minutes.  Add ginger and cook 1 minute more, being careful not to let the ingredients burn.</p>
<p>Add leeks, potato, stock &amp; bay leaf.  Bring to a boil, then cover and reduce to a simmer until vegetables are tender, about 20 minutes. Remove bay leaf.</p>

<p>Transfer to a food processor or blender and pulse until soup reaches desired texture.  I prefer mine smooth, but you can easily leave a few chunks of potato.</p>
<p>Add spices and pulse until cloves are ground and incorporated.  Salt and pepper to taste.  Garnish with parsley and additional spices, if desired.</p>

<p>I enjoyed a bowl of soup with a toasted Ezekiel English muffin.  One half had almond butter and raspberry jam, the other had melted cheddar and Bragg&#8217;s.</p>

Natural candy, if you will.   I have a little trouble with portion control when I eat these&#8230; they&#8217;re so good that I can&#8217;t help going back into the kitchen to make more!</p>

<p>Last night, after we got back from the wedding, I hunkered down to do some reading and prepare for my interviews.  All of that brain stimulation must have shot my metabolism into overdrive, because only a couples hours after dinner,  my tum was a-grumblin&#8217; something fierce! I thought I might just be thirsty, but that didn&#8217;t seem to be it.  Finally, I put down my book and headed into the kitchen to make a bowl of <strong>Kashi GoLean and Smart Start</strong>. Problem solved!</p>

<p>This morning, I woke up bright and early to see Ari off.  As I mentioned, he&#8217;s going <a href="http://theupwelling.com/tour-dates/">Vigilante </a>through December, and had to leave at 7:30 this morning.  I tried to go back to sleep, but my mind was already up and ready to go.  I had to be at physical therapy at 10 anyway, so I just got up and made breakfast.</p>
<p>Taking <a href="http://jesslikesithot.wordpress.com/">Jess</a>&#8216;s advice, I heated up half of a <strong>Trader Joe&#8217;s Berry Mango Bran Muffin</strong>, crumbled it up, and tossed in on top of <strong>0% Fage </strong>with some <strong>warmed frozen berries</strong> and a scoop of <strong>flaxy PB</strong>.  I <em>really</em> like this <a href="http://lilveggiepatch.com/2009/11/13/sweet-coconut-nights/">peanut butter</a>, by the way.   It&#8217;s both crackly and crunchy and adds great texture!</p>

<p>My therapy session went well&#8230; <strong>I still have a <em>lot </em>of tightness in pretty much each muscle in my legs</strong>, so I have to keep working on that.  Repeat after me: yoga, rolling and stretching, okay!  When I got back, I briefly chatted with the guest who is staying with us, made myself an <strong>apple-cinnamon</strong> snack, and retreated to my room to be interviewed (via phone) with the HR department for the company I&#8217;m interviewing with.</p>

<p>It shaped up to be one of those days where I was constantly hungry, so I made something as soon as the clock showed that it was even remotely close to lunchtime.  <a href="http://insideiamdancing.wordpress.com/">Ellie</a> reminded me yesterday about the beauty of the <strong><a href="http://peasandthankyou.com/">crack wrap</a></strong>, so I made one with a <strong>whole wheat wrap, three-layer hummus, and a slice of Jarlsberg cheese.</strong></p>

<p>I ate it with half a can of <strong>Progresso&#8217;s Fat Free Lentil soup</strong>.   This isn&#8217;t the tastiest of the canned variety, but I had a hankering for soup.  I&#8217;ll definitely be making my own in the near future!</p>

Turning off my phone would probably be a good start!</p>
<p>I heated up some leftover <a href="http://lilveggiepatch.com/2009/11/13/sweet-coconut-nights/"><strong>Coconut Barley Pilaf</strong></a> <strong>and made a quick salad with kale, broccoli slaw, grape tomatoes, sesame oil and rice wine vinegar</strong>.</p>

<p>Honestly, as much as I love my <a href="http://lilveggiepatch.com/2009/10/24/pumpkin-salad-dressing/">fancy</a> <a href="http://lilveggiepatch.com/2009/11/15/a-wedding-in-connecticut/">salad</a> <a href="http://lilveggiepatch.com/2009/11/02/gym-class-heroes/">dressings</a>, I could probably make a sesame vinaigrette every night and be happy.  It&#8217;s simple, but so delicious.  I don&#8217;t even use measurements or mix anything together&#8230; the vinegar and oil just get drizzled on.</p>
<p>I made another quick dessert, starting with a<strong> tri-flavored chocolate sauce</strong> using Pure Dark cardamom chocolate, semisweet and bittersweet chocolate chips.</p>

<p>Today was an absolutely lovely day.  I woke up earlyish and met my grandparents downstairs in the breakfast nook.</p>

<p>I had an <strong>English muffin with peanut butter</strong>, <strong>cinnamon and 1/2 banana </strong>and a bowl of <strong>plain yogurt with fresh raspberries and blueberries</strong>. <img class="alignnone size-large wp-image-5864" title="Breakfast" src="http://lilveggiepatch.files.wordpress.com/2009/11/img_1833.jpg?w=1024" alt="Breakfast" width="504" height="378" /></p>
<p>As I was assembling my breakfast, my grandfather remarked that <em>there were no redeeming qualities to peanut butter</em>.  Of course, I loved having the opportunity to launch into my <a href="http://www.youtube.com/watch?v=FZFG5PKw504">spiel</a> about protein, healthy fats, folic, and plain ole great taste!</p>
<p>After breakfast, I gave myself a little time to digest before hopping on the <strong>treadmill</strong> and pounding out <strong>2 miles</strong>.  Luckily, <em>Saved By The Bell</em> was on and I didn&#8217;t get bored&#8230;</p>

<p>Nothing like a little Zach Morris to keep your heart rate up!  (Although, he&#8217;s clearly underage in this photo, and that makes me feel a little weird.  A little.)</p>
<p>On our way out the door to run some errands, my Granny fed me a carrot and told me about her new method for fast-cooking veggies: steam them in the microwave! <strong>Make a pouch out of waxed paper, moisten with a few drops of water, fill with veggies, and nuke for 3 minutes or until cooked.</strong></p>

<p>Is this the end of <a href="http://lilveggiepatch.com/2009/05/28/joe-turner-may-have-come-and-gone-but-its-never-too-late-to-get-ready-for-summer/">rebel carrots</a>?  Maybe, as long as the wax doesn&#8217;t break down and seep into the vegetables.</p>
<p>Everyone seemed to still be full from last night&#8217;s <a href="http://lilveggiepatch.com/2009/11/06/three-days-grace/">dinner</a>,  so lunch was kind of informal.  I grabbed a Pink Lady apple on the way out the door&#8230;</p>

<p>&#8230; and got a <strong>Grande Skim Mocha</strong> at Starbucks.  Mocha?! Who am I and what have I done with LVP?</p>

<p>I must have been really thrown off my my choice, because I immediately spilled it all over my purse.  I&#8217;m a bit of a klutz!</p>

<p>An hour or so later, I had my first <strong>Nature&#8217;s Path</strong> product.  I&#8217;ve seen these <strong>Optimum</strong> bars all over the blogs, so I grabbed this when I spotted it on sale.</p>

<p>It was good&#8230; the taste and texture reminded me a little of a Luna Cookie.</p>

<p>This is my second lunch in a row that&#8217;s been supplemented by energy bars.  I&#8217;m not proud of this, but it happens when you travel.</p>
<p>Granny and I took a special trip to the grocery store to look for <strong>Celestial Seasonings&#8217; Sugar Cookie Sleighride</strong> tea that y&#8217;all seem to love&#8230; we searched in vein, but I did find this Sweet Coconut Thai Chai tea that will hopefully taste like the <a href="http://www.gnc.com/product/index.jsp?productId=3295947&amp;CAWELAID=293853578">coconut chai tea</a> I love.</p>

<p>We had an early dinner at <a href="http://www.gnc.com/product/index.jsp?productId=3295947&amp;CAWELAID=293853578">Spoonriver</a>, one of my favorite restaurants in Minneapolis.  I was really happy when our waitress asked for my ID when I ordered a <strong>Moroccan Mojito</strong> (mint, lime, rum, cardamom and rose water).  I haven&#8217;t been carded in a few months, but this must mean my <a href="http://lilveggiepatch.com/2009/10/18/chocolove-product-review/">wrinkle</a> is getting smaller!  It&#8217;s funny&#8230; two years ago I would <em>not</em> have enjoyed being IDed at all.</p>

<p>&#8230; and my grandmother and I both ordered the <strong>Broiled Salmon Okisuki in a savory Japanese Ginger Broth with Fresh Udon Noodles.</strong> I think Grandpa was jealous&#8230; I am <em>definitely </em>going to recreate this at home.</p>

<p>For dessert, we all split a slice of butternut squash-carrot cake with pumpkin-cream cheese frosting.  Oh, <em>mama!</em></p>

<p>After dinner, we went next door to the <a href="http://www.guthrietheater.org/">Guthrie</a> theater to see an evening showing of <a href="http://www.guthrietheater.org/whats_happening/shows/2009/faith_healer"><em>Faith Healer</em></a>.  It was a really, really powerful play told entirely in monologues.  I loved it.</p>
<p>When we got home, I took a deep breath of fresh air for Averie on the way up to bed.</p>

<p>If it weren&#8217;t so late, I&#8217;d ask Granny to tuck me into bed.  I used to visit them every summer when I was younger, and until I was 11 or 12 or so, my grandmother would put me to bed with this <a href="http://lilveggiepatch.com/2009/02/08/wynken-blynken-nod/">nursery rhyme</a>.  I have such nice memories of sleeping in this room (when I first started visiting on my own, the floor was covered in a thick pink shag carpet) and being here.  Although I went to college in Minnesota as well and visited a lot, my memories from that time are sort of separated from the time I spent here as a kid.  <strong>Do you have any memories of nighttime rituals? If <a href="http://peasandthankyou.com/">you</a>&#8216;re a <a href="http://loveveggiesandyoga.com/">parent</a>, how do you put your kids to bed?</strong></p>
<p>Around the blogs: Starting Monday, I am going to <em>do my best</em> to follow <a href="http://eating-for-england.blogspot.com/2009/11/yogi-bear.html">Angharad</a> and <a href="http://www.thehealthyeverythingtarian.com/">Holly</a>&#8216;s lead and practice yoga thrice a week.  I am also going to take meal-prepping more seriously, so I don&#8217;t stand in front of the fridge with the door open for minutes on end, willing the empty produce drawer to magically refill itself.</p>
