Hello, and greetings from Park City, Utah, home of the Sundance Film Festival! 45 minutes away from Salt Lake City, Park City is a picturesque little ski town filled with funky boutiques and spas. Unfortunately, I don’t have any photos for you yet because, as the title suggests, everyone else in our hotel seems to be trying to get on the internet at the same time! Hopefully I’ll be able to upload them before we leave… we’ve found some really cool things so far.

Anywho, let’s backtrack to Thursday! I started the day with a bombdiddlyicious bowl of oatmeal.

1/2 cup oats

1/2 cup skim milk

Daisy Brand 2% cottage cheese

1 apricot

walnuts

cinnamon

drizzle of agave

The savory/sweet combination was superb… I’ve forgotten how good cottage cheese is in oats!

After a 2 mile run, I went into the city to meet Greg for lunch at the Metro Diner. He’s moving out of state, and this was the last time I’ll see him for a while

I got my usual veggie burger, which was especially good today. I ate half the bun and the pickle, but I’m really not a fan of creamy cole slaw.

As promised, here’s a sexy shot of the girth on this bad boy.

I used almost half the bottle of ketchup. My name is Katie, and I am a Heinz-a-holic.

Since I was in the neighborhood, I took advantage of being so close to my parents’ house and raided their fruit drawer picked up my mail. I had a delicious yellow plum and some blackberries:

When I got downtown, I was so parched that I dashed into Liquiteria and got a 16 oz cup of Ginseng Gingersnap: carrot, apple, ginger, ginseng, Vitamin C & bee pollen. DELISH!

I was really snacky at work (probably because it was so slow) and over the course of my shift, had a Babybell light cheese, an apple, and a fig bar.

I couldn’t take a picture of my dinner, but I had a mixed green salad with apples, beets, tomatoes and walnuts. Another winner. The chefs at the restaurant are the best!

Anyway, I’m off to get ready for the wedding. Apologies again for the tardiness of the posts… hopefully the internet traffic will clear up soon.

Have a great weekend!

Yep, just one 10-page paper standing between me and my diploma. Such a small thing, but that’s what makes it so hard to do! I’m just going to stay up all night tonight and get it done… blaaaaah. Anyway, enough whining!

My grandparents and I had a really nice time at their club’s Mother’s Day Brunch. There were so many good things spread out on the buffet table; I loaded plate #1 with mixed greens, beets, cucumbers, carrots, asparagus, salmon and sundried tomato & feta orzo pasta salad.

I ordered a side of whole wheat toast, but it was so buttery! I only ate half of it, which I didn’t even really want, but I wanted bread.

Plate #2: grapes, blackberries, blueberries, raspberries, strawberries, pineapple.

Plate #3: More fruit and two small squares of nutty chocolate fudge.

I came home and took a turbo nap (2+ hours), woke up and made snack: sesame rye cracker with peanut butter, cinnamon and 1/2 banana.

Aside from one frozen banana in my freezer, there is no fruit in my apartment! I only have to get to Thursday, but I need some healthy snacking options so I think I’m going to need to get to the store. I’m going out to dinner with some friends tonight (and then writing my paper, I swear) but it’s kind of a burger joint so I have a feeling I might have a little trouble with the menu. I still have the bowling-ball-in-belly feeling leftover from last night’s beer/cereal-fest, but tomorrow’s the first day of “Senior Week” so I have a feeling maintaining healthy habits like diet and exercise is going to be a bit of a challenge. We shall see!

Hope you had a fabulous weekend and are enjoying the last dregs of Sunday

Good morning! It was nice to wake up in a different bed this morning… I almost believed I was on vacation. When I went down to breakfast this morning, the usual spread was already laid out:

I made a bowl of oatmeal (everyone still gets such a kick out of how many toppings I put on… and this was a tame one!):

1/2-3/4 cup oats, made with skim milk

1/2 banana

raspberries, blueberries, blackberries

cinnamon

honey

1-1/2 tsp chunky peanut butter

And of course I wouldn’t be able to call myself a true member of the _______ family without partaking in the morning baguette, which I enjoyed with whipped butter, honey and fig jam.

My grandpa needs some help figuring out Skype, and then I’m headed back to campus because, unfortunately, I have class. I’m glad I got to have a little break and see my family, though!

Have a great day

Afternoon! Another warm(ish) but gray day here… might be an excuse for a little nap! I had a great run today, and did exactly the same route that my mom and I did yesterday (although without her lovely company, sadly). I took K and Sarah’s suggestion and tried Map My Run again. It got the job done (I know how far I went) but there are still some frustrating glitches that I would probably be able to get rid of if I decided to use something other than the free version, but that’s not going to happen.

Distance: 4.3 miles

Time: 48:05 minutes

Maximum heart rate: 192 (86%)

Average heart rate: 175 (88%)

I ran the whole time, with a short pause to stretch and peel off unnecessary layers at the turn-back point. It was fantastic! I’m getting over my fear of running outside, and I love that the ground isn’t all one level and the scenery changes. I think part of the reason I never run more than 2 miles on the treadmill is that even if there’s a movie or something on the TV, it’s so boring to run in place!

Before I left, I had 1/3 of a new bar that I’ve had in my “bar drawer” for a while now: Promax Nutty Butter Crisp.

Pros:I was expecting to taste pretty bad, but it was delicious! Sort of like a chewy Butterfinger. It smells a little protein-y, but it doesn’t have that horrible taste or aftertaste at all. It would probably be great warmed up.

Cons: Expensive (almost $3). But, if you eat half at a time (300 calories is a little much for just a snack in bar form, especially since I’d need to eat something else to round it out), you get two. The packaging kind of weirded me out (I can’t decide if it’s very 80s or very futuristic), but I still bought it.

Would I buy this again? Yes, probably.

After my run, I was all set to cook something up in the kitchen… I even took all the ingredients out! But then… I spied the leftover Scallop Pasta in the fridge and what started out as some minor tasting ended in a quest for dignity and I just plated the whole bag. The portion was kind of massive, but I was hungry.

I also had some 0% Fage with strawberries, blueberries, blackberries, cinnamon, walnuts and honey.

Time to walk the pooch and take a nap. I just found out Ari is coming home a day earlier than I’d thought… woohoo! Have an excellent day.

This Saturday is already going mahvahlously, namely because I slept in until 10! Woohoo. I also had one of the best batches of oatmeal EVER, which I attribute to stove-top cooking and steel-cut oats. I love having the time to do that! (What I do not love is that “I” has already appeared three- no, FOUR- times in this post.)

I made a big vat with 3-4 portions:

2 cups water

2 cups soy milk

1 cup steel-cut oats

1 banana

3 T flax meal

I topped my bowl with mixed nuts (walnuts, hazelnuts, cashews, almonds), strawberries, blackberries and agave nectar. Superb.

We’re going to scour the house until it sparkles, then I’m going to get my boot-ay to the gym and get back on schedule. Have a happy Saturday!

Good morning(ish)! How did you sleep? I slept alright; luckily my knight in shining armor rescued me from horrible, horrible dreams this morning so we could iChat. What a thoughtful boy.

I ended up eating until about 5 minutes before my head hit the pillow last night… just one of those days, I guess.

Juicy Gala:

TJ’s Oatmeal Chocolate Chip Cookies.

I made my breakfast cookie a little differently last night; instead of plain ole vanilla banana I made Banana Pumpkin Blackberry.

1/2 cup oats

1/2 banana

1/2 scoop vanilla protein powder

pumpkin

1 tsp PB

soy milk

blackberry eyes/mouth, cashew almond nose

And a big pot ‘o tea.

I’m not sure what I’m going to do today… I’m feeling better but still sluggish so, although I really want to run a mile or two, I’ll probably abstain and hang around the house. Unfortunately, schoolwork has a habit of not getting done when I do that… we shall see.

Have a lovely Friday! Any fun weekend plans? I’m going to see Lykke Li on Sunday if all goes as planned… love her little voice!

I woke up way before my alarm this morning, so I treated myself to a movie morning and watched L’Avventura. Oh the fashion, the hair, the accents!

For breakfast, I had a big bowl of Greek yogurt with a Gala apple, Fiber One and some blackberries.

A couple hours later I had an orange, to hold me over until the English department luncheon that’s in an hour.

My posting yesterday was totally out of whack so I’m going to just copy and paste my question from yesterday. I have crazy dry skin all year round, but it gets particularly terrible in winter. I just discovered A+D Original Ointment REALLY helps (yes, it’s for diaper rash…). Do you have any health or beauty remedies that you swear by but, by “normal” standards, most people would think are weird?

Have a great day!

Ha! Wouldn’t that be nice. But I did just watch The Core in class… and I’m getting credit for it. Yep, you read that right.

This morning my breakfast didn’t hold me over for too long… I kept staring at the clock to see when an appropriate time to have a snack would be! I had this banana. (I think I’m turning into a monkey; I eat so many of these!)

Lunch was a little funky, but it tasted good so bear with me. I know by now Snobby Joes are the last thing anyone wants to see, but I had them today… in a new and different way!

I heated the lentils on a skillet in some cooking spray and then added… egg whites! I plopped the whole mixture on top of a piece of toasted Ezekiel bread with arugula, and smeared it with a laughing cow wedge.

What with my oatmeal, flax, banana, LENTILS, etc., I apparently didn’t think I had eaten enough fiber, so I finished my meal off with a Gala apple, strawberries and blackberries.

After class and before the gym, I had half of my baggie full of almonds. I should start a thread about the weird places I’ve photographed my almonds.

I had a pretty good workout today… the hardest part was walking to the gym in the freezing cold!

Ants on a log!

I’m sad to report that the once all natural (only salt & peanuts) and organic peanut butter has been replaced with Jif. Hmpf! Hopefully this is just because of the salmonella outbreak, and will go away as soon as that’s cleared up.

I also had a bowl of curried cauliflower soup, which I garnished with crushed peanuts and parsley.

While watching The Core in class (yes, it’s as cheesy as it looks, but Aaron Eckhart is hard to turn my nose down at), I finished my almonds and had this Luna.

I don’t know why I’ve been so snacky today, but I’m about to eat this grapefruit as well. It’s probably the cold… my hair was in hard, ice-like ringlets after I showered and left the gym (stupid me), my HRM strap froze (shouldn’t wash it before I get home from now on), and my hands were in so much pain as I drove home tonight. Dang you, Minnesota!

Have a great night!

I’m starting to get a little sad… in 24 hours I’ll be on my way to the airport to go back to Minnesota. I guess that’s the downside of having such a long winter break: it makes it that much harder to go back when it’s over. I’m excited to see my friends, though, and get back to Wednesday night Project Runway… and last semester senior year is exciting, right? Um… I’m just going to move on to my eats, okay?

Yesterday I snuck out of the house for a piece of greasy, cheesy New York pizza. You Chicago kids will forever be at war with us but come on, deep dish is just not where it’s at.

I found blackberries for $1.50 a carton! They were good, too: sweet and juicy and just smushy enough.

I was still feeling snacky so I had a date and a prune, each stuffed with peanut butter and two chocolate chips. This combination should be immortalized.

We went out to Japanese with one of Ari’s friends. The place we went to, Shima, was having a special: edamame and either hot saki or draft beer for $3. THREE DOLLARS! Hot sake it is. I also ordered the sashimi platter, but the picture does not seem to be on my camera. Bah.

It came with 5 types of fish, with 2- 3 pieces in each, and a bowl of rice . I ate all the fish and only a little rice, so I didn’t feel stuffed for once.

16 Handles, a make-your-own frozen yogurt bar, was just across the street, and since I can’t end any dinner (especially a dinner out) without a dessert, off we went .

All of the flavors are either fat free or have less than 1g per serving, so I loaded up on flavors: peanut butter, pistachio, NSA chocolate, and Original Tart (like the Pinkberry flavor). I topped it with Reese’s PB cup, strawberries, and chocolate syrup. Mm-mm good.

We went out to the Mercury Lounge last night to see The Orion Experience, which is just about the cutest band ever and might be my new favorite. I had a vodka soda there, then we took a LONG subway ride home and watched movies.

Last diner breakfast for awhile…

I got an egg white omelet with spinach, tomato, mushrooms and feta.

Mmm… toast.

I’m packing up all my stuff at Ari’s (sniff) and lugging it to my parents’ house (home #1? #2? ). We’re making our famous dinner tonight… my poor parents are probably pretty sick of it by now! Catch ya later, sugarpies.
