			<content:encoded><![CDATA[<p id="top" />Morning and happy Monday!  I hope you&#8217;ve had a fabulous weekend.  From what I&#8217;ve been reading, it seems that Spring has sprung around the world!  It was nice and sunny yesterday, and although I didn&#8217;t spend as much time outdoors as I would have liked, I&#8217;m looking forward to taking some nice walks this week before the weather goes to pots again.</p>
<p>Yesterday I woke up nice and early to have breakfast with Beth and Ilana, and Pickles.</p>

<p>I was gearing up for a <strong>12 mile run</strong>, so I had a big bowl of <em>Raisin Bran Crunch with a banana and  1/2 slice of Blueberry bread with peanut butter.</em></p>

<p>After breakfast, I waited about an hour to head out.  As I <a href="http://twitter.com/lilveggiepatch">Tweeted</a>, I was pretty nervous about it.  Luckily I had a great support system to cheer me on!</p>

<p><strong>Unfortunately, 12 miles just wasn&#8217;t in the cards. </strong>As soon as I started running my calves felt tight, my left shin was sore and my legs just felt <em>heavy</em>.  Discomfort aside, my head was not in the right place.  I was in a pretty bad mood, and while sometimes running outdoors helps me focus on something else and clear my head, this wasn&#8217;t the case today.  After about a mile of trying to psych myself up and get into my groove, I knew it wasn&#8217;t going to work. Rather than torture myself, I turned right around and walked home.  My mind was racing, worried about the half-marathon that is in <em>two weeks: </em>I couldn&#8217;t even run 9 miles last week due to pain, so how am I going to run 13.1?!  This was supposed to be my last long run before starting to taper, and I couldn&#8217;t even do it.</p>
<p>That got me thinking.  <strong>This is supposed to be fun.  The only person I&#8217;m running for is me</strong> (&#8230;right?) and it hasn&#8217;t been enjoyable for the last few weeks, with a few exceptions.  Instead, it&#8217;s become a stressful chunk of time that I usually feel guilty about not using for work and <strong>the passion that originally incited me to start this series of races has died.</strong> Moreover, since I choose to broadcast a lot of my life through various mediums on the internet, I felt embarrassed about not being able to complete this goal. Yesterday I felt like a failure, and it was a horrible, horrible feeling.</p>
<p>There are a few things I have been lucky enough to feel truly passionate about (reading, cooking, running) but recently they&#8217;ve felt more stressful than fun, and I&#8217;ve found myself procrastinating doing the things that I used to <em>love</em>.  What&#8217;s with that?  &#8220;Failures&#8221; are usually learning experiences, and I would love to learn a little more about myself while I evaluate:</p>
<p>1) Why it&#8217;s important for me to run long distances, and</p>
<p>2) Why my brain and head seem to be rebelling against it.</p>
<p>What is clear to me is that something needs to change.  I&#8217;m not sure what it is; maybe I need to start my own <a href="http://lilveggiepatch.com/2010/02/16/the-happiness-project/">happiness project</a> and come up with new goals, or maybe I need to find something that <em>doesn&#8217;t </em>have a concrete &#8220;pass&#8221; or &#8220;fail&#8221; award.   <strong>The one thing I do know is that I&#8217;m incredibly hard on myself, and the first thing I probably need to get better at is accepting who I am without thinking about things in terms of success and limitations.</strong></p>
<p>While I was stewing this over in my mind, I made a <strong>big salad</strong> for lunch.</p>

<p>I also had two slices of <a href="http://lilveggiepatch.com/2010/03/07/affordable-eating-in-new-york/">Gluten Free Bran Bread</a>&#8230; even veggie patches need comfort food.</p>

<p>One of my friends tried it out, and before I told her what it was made of she remarked on the moistness, comparing it to a chocolate-chip cookie fresh out of the oven.  The <a href="../2010/02/24/rainy-days/">rye bread</a> was also super moist, so I think it has to do with the almond meal/flax base.  I love it!</p>
<p>I fell asleep while doing some work in bed (never a good idea!) and when I woke up, snacked on an <strong>apple </strong><em>with maca and cinnamon. </em>I wish I could bring this combination to work without making a mess!</p>

<p>Dinner was a bit of an experiment.  I knew I wanted to keep my theme of comfort food, and what&#8217;s more comforting than macaroni and cheese?  I wanted it to be really cheesy, and although I usually add all kinds of things to the noodles (nutritional yeast, laughing cow wedge, parmesan) they don&#8217;t usually increase the cheese factor.  This time I mashed about 1/5 of a block of firm tofu, and it worked! I didn&#8217;t add any extra cheese (or cheeze) and it perfectly creamy.</p>

<p>Around 3:30 I dug into the snack drawer for something to chew on (I really need to get some gum!) and came out with a <strong>Caramel Chocolate Forze bar</strong>.</p>

<p>While there wasn&#8217;t a whole lot of &#8220;caramel&#8221; flavor here, it was still yummy!  It tastes like a sweet, chocolatey cookie.  It&#8217;s probably ranked #3 right now out of the flavors I&#8217;ve tried (<a href="http://lilveggiepatch.com/2010/02/01/guess-who-i-found/">Chocolate Peanut Butter</a> and <a href="http://lilveggiepatch.com/2010/01/28/six-at-6/">Chocolate Decadence</a> are tied), but I still have on more to try.</p>
<p>I was zonked when I left work at 5:30 but I had two miles to run (according to my half-marathon training schedule) so I headed to the gym after work. My heart rate monitor took thirty minutes to start working&#8230; I am <em>so</em> close to getting a <a href="http://www.amazon.com/Garmin-Forerunner-Receiver-Heart-Monitor/dp/B000CSWCQA/ref=sr_1_1?ie=UTF8&amp;s=electronics&amp;qid=1265163525&amp;sr=8-1">Garmin</a>.</p>

<p>This was supposed to be an &#8220;easy run&#8221; at a 10:54 pace, but&#8230; on a treadmill, that felt like an eternity, and I wanted to get it done as quickly as possible! So I got a little impatient, but I think I paced myself pretty well and would have been able to carry on a conversation throughout. So, I think that&#8217;s my new definition of an &#8220;easy run&#8221;!  <strong>What is an &#8220;easy workout&#8221; for you?</strong></p>
<p>Dinner was quick and easy:<strong> leftover fettuccine with mushrooms</strong>- <em>to which I added a slice of tempeh bacon to make &#8220;vegetarian carbonara&#8221;</em>- and <strong>steamed cauliflower</strong> <em>with Emeril&#8217;s Original Essence</em>, à la <a href="http://ksgoodeats.wordpress.com">Miss K</a>.</p>

<p>Take some <strong>tempeh</strong> and cook it up with some spices…</p>

Amazing! It was like the perfect tart and sweet ice cream, but as finger food. How have I been living without this for so long? I just packed up the rest of the box and froze them, too. Yummy!</p>

<p>I had a bowl of <strong><a href="http://joannasteven.blogspot.com/2010/01/raw-challenge-day-7.html">Moroccan Gazpacho</a> </strong><em>with pita</em> and a <strong>small salad</strong> <em>with romaine, mushrooms, green beans and tomato </em>(they&#8217;re under there, I promise!).</p>

<p>This soup is a keeper! Instead of using pine nuts (as the recipe calls for),  I used chopped almonds.  And because I&#8217;d made this soup on Monday the raisins were nice and plump, and the sweet spicy flavor was really brought out.</p>

<p>After work, <a href="http://www.thewholeplate.com/">Leslie</a> and I met at <a href="http://www.menupages.com/restaurants/galaxy-global-eatery/">Galaxy Global Eatery</a> for dinner.  I&#8217;ve passed it hundreds of times and had no idea what it was.  Even when inside, Leslie and I couldn&#8217;t quite figure out what kind of atmosphere GBE was going for! It was sort of like a combination dive bar, old-school diner, and health-food restaurant.</p>

<p>We shared an order of <strong>sweet potato tamales </strong><em>with cilantro butter</em>, which came out less than two minutes after we ordered them.  They were okay, but I definitely prefer <a href="http://lilveggiepatch.com/2009/12/27/a-holiday-weekend/">Peacefood</a>&#8216;s. The cilantro butter definitely made the dish!</p>

<p>I was more than ready for dessert when I got home, and headed straight for the freezer before I even took off my coat.  I had <a href="http://lilveggiepatch.com/2009/12/30/coconut-bliss-ice-cream-review-and-giveaway/"><strong>Naked, Mint Galactica, and Chocolate Hazelnut Fudge Coconut Bliss Ice Cream</strong></a>, eaten straight out of the carton, topped with c<strong>hipotle and cardamom hot fudge</strong>.</p>

<p>Last night I made a <a href="http://fitnessista.com/?page_id=507">breakfast cookie</a> for this morning using <strong>chia seeds</strong>!  I figured they&#8217;d have time to plump up and turn into the &#8220;gel&#8221; if they soaked over night.</p>

<li>toppings: cinnamon, 1 almond nose, 2 prune eyes, goji berry smile (makes Jim look a little bit creepy!)</li>

<p>I made Ari one, too, but added more oats and left out the chia.  (He must not have been feeling this particular mixture; there were only two little spoonfuls missing when I got home from work.)</p>

<p>Around 11, I snacked on a <strong>tangerine</strong> (and ate another one at 3).</p>

<p>For lunch, I had the last of the <a href="http://lilveggiepatch.com/2010/01/04/better-than-steak/"><strong>Tomatoey Spiced Chickpeas</strong></a> <em>with mixed greens and pita bread</em>.   I actually ate with my coworkers and not at my desk,  but since I&#8217;m still new I didn&#8217;t want to explain the blog to a big group of people all at once (although some do know).</p>

<p>When I got home, the band was packing up and getting ready to leave for <a href="http://theupwelling.com/tour-dates/">tour</a>.  I helped load the van (no need to strength train when you date a musician&#8230; music gear is <em>heavy!</em>) then made dinner.  I&#8217;ve been wanting to make Heidi Swanson&#8217;s <a href="http://www.101cookbooks.com/archives/sushi-bowl-recipe.html"><strong>Sushi Bowl</strong></a> for ages, and I did!  I made a few adjustments for time and taste, starting with substituting her tofu for <a href="http://glidingcalm.wordpress.com/gliding-calm-tofu/">Gliding Calm&#8217;s</a>.  I also added <strong>sesame seeds</strong> to the marinade.</p>

<p>Instead of cooking a new batch of rice, I used up the last of the <a href="http://lilveggiepatch.com/2010/01/04/better-than-steak/"><strong>Harvest Grains blend</strong></a>.  This is a keeper! You don&#8217;t even really need to use the recipe (although the dressing is mighty fine).</p>

<p>Anticipating the next month&#8217;s Arilessness, I made myself a <em>huge</em> bowl of <strong><a href="http://lilveggiepatch.com/2009/12/30/coconut-bliss-ice-cream-review-and-giveaway/">Coconut Bliss</a> ice cream</strong> (Mint Galactica, Naked Coconut, Chocolate Hazelnut Fudge) with <strong>homemade chocolate sauce</strong> <em>(two kinds of melted chocolate chips + water)</em>.</p>

<p>Lately I&#8217;ve been admiring <a href="http://jesslikesithot.wordpress.com/">Jess</a> and <a href="http://www.thehealthyeverythingtarian.com/">Holly</a>&#8216;s breakfast pancakes, and couldn&#8217;t remember the last time I made one myself.</p>

<p>I used the KERF recipe for <a href="http://www.katheats.com/?page_id=289"><strong>Oatmeal Pancakes</strong></a>, adding both <em>mashed banana</em> and<em> pumpkin purée</em>.  If I&#8217;m making pancakes, I&#8217;m making <em>pancakes</em>.</p>

<p>I usually like to dip pancakes and French toast in syrup rather than drenching them before eating; this way they don&#8217;t get too sweet or soggy, and I don&#8217;t end up putting away the whole bottle.  This was so good! Much better than I remembered it being: filling but without leaving me feeling bloated and just decadent enough.</p>
<p>Since it was the first day in a few weeks that everyone would be back in the office, I got to work a little early to get myself organized so I&#8217;d have time to get a little &#8220;zen.&#8221;  It worked.  Although there was a lot to do, I was cool as a cucumber!</p>
<p>Around 11, I whipped out a <strong>juicy grapefruit.</strong></p>

<p>By the time I was ready to go to lunch, it was almost 1:30 and I was <em>starving</em>.  I had some errands to run so I took my lunch out of the office; luckily I&#8217;d had time to prepare a decent meal last night.  I had a <strong>big salad</strong> with<em> mixed greens, one Fugi apple, grape tomatoes, dried cheries, walnuts and Annie&#8217;s Lite Gingerly Vinaigrette</em>.</p>

<p>Turns out my mom and I both got each other <a href="http://www.builtny.com/">Built</a> lunch bags for <a href="http://lilveggiepatch.com/2009/12/27/happy-christmas-to-all-and-to-all-a-good-night/">Christmas</a>!  She&#8217;d read on the blog that I wanted one; I thought it would be motivating for her to bring her own lunch to work.  I&#8217;m going to embarrass my mother here and say that<strong> sometimes all she eats for lunch is trail mix! </strong> I love trail mix as much as <a href="http://caretoeat.net">this girl</a>, but you can&#8217;t go from 8 &#8211; 7 without a meal.  Hopefully this post will shame MVP into packing food.  I need some help!</p>
<p>While grocery shopping yesterday, I lingered at the organic bread booth and finally picked up this <a href="http://www.the-baker.com/products/details/european-baker-style-organics/sunflower-european-style/22"><strong>European-style sunflower seed bread</strong></a>.   I&#8217;ve eaten this kind of bread many times before (mostly in Europe) and always enjoy them, but for some reason never buy them for myself.  It&#8217;s very dense, nutty, hearty, and moist. I love it!</p>

<p>Work was finished with promptly at 5, and I hurried home to catch <a href="http://myspace.com/theupwelling">Ari</a>.  He had some errands to run in the evening, but I wanted him to be able to have a nice dinner (instead of a slice of pizza on the go) before he left.  He&#8217;s leaving in a couple days and, with the risk of being corny, I really cherish every hour we have together.</p>
<p>Ari requested <a href="http://lilveggiepatch.com/2009/11/10/my-knight-in-blue-adidas/"><strong>Tomatoey Spiced Chickpeas</strong></a>, which has become one of his favorite recipes.  Not all of cooking is quite to his taste, but he says this one is as good as a steak dinner.  (Trust me, the boy likes <a href="http://lilveggiepatch.com/2009/08/07/roaaar/">his</a> <a href="http://lilveggiepatch.com/2010/01/03/tour-belly-goes-to-dos-toros/">meat</a>!)  I&#8217;m by no means trying to &#8220;turn him vegetarian&#8221;, but it&#8217;s nice when we can share and enjoy some of the same foods.   I served it with <strong>Trader Joe&#8217;s Harvest Grains Blend</strong> (<em>Israeli couscous, baby garbanzos, red quinoa</em>) which I <em>cooked in vegetable broth&#8230; </em>it really brought out the flavor. <em> </em></p>

<p>My Saturday was quite festive, starting with a morning spent at the soup kitchen. I haven&#8217;t been able to go as much as I would have liked in the past few months, but it was so nice to be back there again.  There were many &#8220;regulars&#8221; I&#8217;ve known for almost 10 years!</p>
<p>After volunteering, my parents and I went to <a href="http://www.peacefoodcafe.com/">Peacefood Café</a> for lunch.</p>

<p>The last time I ate at Peacewood, I enjoyed <a href="http://manhattancupcake.blogspot.com">Caitlin</a>&#8216;s sandwich so much that I had to order it! My dad and I split the <strong>Roasted Japanese Pumpkin Sandwich</strong> <em>with <cite></cite>mashed and seasoned with a little sea salt, ground black pepper and extra virgin olive oil, topped with caramelized onions, ground walnuts, vegan goat cheese and seasonal greens. </em>It was even better than I remembered!</p>

<p>It was only my second time at <a href="http://www.peacefoodcafe.com/">Peacewood Café</a>, but it&#8217;s already become one of my favorite restaurants on the Upper West Side.  There are tasty, healthy options that carnivores, vegetarians, vegans, raw foodists and foodies alike can enjoy!</p>
<p>Last night when I got home I was quite the domestic goddess.  I set to work in the kitchen, making Gena&#8217;s <strong><a href="http://www.choosingraw.com/raw-holiday-cocktail-treats-sweet-cheese-and-crackers/">Cashew Cheese with Meyer Lemon and Dried Cherries</a>.</strong></p>

<p>It was a cold and rainy day;  I wanted to have a cozy and comforting dinner and came up with this soup.</p>
<div id="TixyyLink"><strong>Miso Soup with Salmon and Soba</strong></div>
<div><strong><em>Serves 2-3</em><br />
</strong></div>
<div><em>I used salmon in this soup, but feel free to substitute any other protein source such as tofu, seitan, soft-boiled egg or whatever you choose. </em></div>
<ul>
<li>4 oz soba noodles</li>
<li>4 tablespoons white miso paste</li>
<li>2 cups roughly torn broccoli florets (about 1/2 large bunch)</li>
<li>1/2 inch fresh ginger, thinly sliced</li>
<li>3 scallions (green onions), thinly sliced</li>
<li>soy sauce</li>
<li>salmon or protein of choice, such as fresh tofu, soft-boiled egg, or seitan</li>
<li><em>optional: Sriracha sauce</em></li>
</ul>
<p>Cook noodles according to package directions.  I used a package of <strong>green tea soba</strong> that I received from <a href="http://www.asianfoodgrocer.com/">Asian Food Groce</a>r, a Foodbuzz affiliate.</p>

<p>Drain and rinse with cold water; set aside.   Bring 4 cups water to a boil.  Add ginger and miso, stirring until miso is dissolved.</p>
<p>Add broccoli and scallions (reserving some for garnish), cooking until broccoli is crisp-tender.  Remove from heat.</p>
<p>Stir in soba and divide into bowls.  Top with salmon (grilled, poached, etc. to your liking), drizzle with soy sauce and Sriracha (if using) and serve!</p>

<p>After dinner, I spent the rest of the night on my hands and knees&#8230; scrubbing the floors!  Since starting my job, I&#8217;ve been slacking a bit in the cleaning department, so I made up for it by sweeping, polishing, dusting and wiping into the wee hours of the morning.  I felt a bit like <a href="http://www.katheats.com/chicken-fried/">Kath</a>!  It was actually pretty satisfying, and got my heart rate right up.</p>

<h3><strong>MERRY CHRISTMAS! </strong></h3>
<p>There are few things more exciting and anticipatory for me than Christmas morning&#8230; I hope that feeling never goes away!  Everyone else is still sleeping, and, <a href="http://www.imdb.com/title/tt0044008/">&#8220;as giddy as a schoolboy,&#8221;</a> I am up and ready to bring on the holiday!  But I&#8217;ll be a nice daughter and girlfriend and can wait a <em>little</em> bit longer.  Let me tell you about Christmas Eve!</p>
<p>I had the best of intentions yesterday&#8230; I really <em>was</em> planning to go to the gym before work.  I even made breakfast the night before to take with me and eat at the office!  <a href="http://fitnessista.com/?page_id=507">Jim</a> really is the best of all portable breakfasts.</p>

<li>1/2 packet Tera&#8217;s Whey Bourbon Vanilla protein powder (I think this made my cookie fluffier than usual)</li>

<li>2 T skim milk</li>
<li>toppings: prunes, goji berries, cinnamon</li>
</ul>
<p>This was a winning combination.  The sweet spicy peanut butter was excellent, and the <span style="color: #800000;">goji berries</span> plumped up over night and were soft and chewy, not hard and gummy as they usually are on their own.</p>
<p>Anyway, as you&#8217;ve probably guessed by now, I didn&#8217;t make it to the gym.  I just snoozed, and snoozed&#8230; and snoozed! I ended up getting up an hour later than I do on regular days!  Good thing I packed my breakfast.  At work, I also snacked on an <strong>apple</strong>.  (Skirt by J.Crew, tights  by Trina Turk for hue.)</p>

<p>After dinner, we all watched <a href="http://www.imdb.com/title/tt0097958/"><em>Christmas Vacation</em></a>.  We couldn&#8217;t find our copy last year (very sad), but this year was a success.  The only Christmas movies Ari had seen are <em>It&#8217;s A Wonderful Life</em> and <em>The Santa Clause</em> (one of my favorites), and I think he really liked it!  After the movie, we migrated back to the Christmas tree to continue with our Christmas Eve tradition&#8230;</p>

<p>Last night, <strong>Ari decided he wanted a bowl of oatmeal!</strong> This is actually pretty shocking, because he&#8217;s not a huge fan of my breakfast creations (although <a href="http://lilveggiepatch.com/2009/06/29/manic-monday-at-home/">he&#8217;s eaten Jim</a> once once or twice), favoring bagels or bacon-egg-and-cheese breakfast sandwiches instead. To each his own! Anyway, I wanted him to like his snack, so I mixed a scoop  each of <strong>pumpkin butter</strong> and <strong>Dark Chocolate Dreams peanut butter</strong>.   This combination got the thumbs up!</p>

<p>This morning I made myself one of <em>the best</em> bowls of oats.  Seriously!</p>

<p>This breakfast was tropical and festive, and reminded me of a <strong>piña colada in a bowl</strong>.  We used to go to Guadeloupe this time of year, and it reminded me of traditionally cold months spent in a warmer climate!</p>
<p>As I&#8217;ve mentioned, there really weren&#8217;t too many people in the office today&#8230; mostly other assistants who are holding down the fort while their supervisors are away.  I took advantage of the downtime to sort out some glitches with IT; the highlight of my day was actually when the computer technician and I spoke for almost half an hour about our favorite things to eat and cook!  All of that talk made me hungry, and after some embarrassingly tummy growls I finally went to the office kitchen to retrieve my <strong>snack</strong>: <em>plain yogurt with pumpkin butter, almond butter and cinnamon</em>.</p>

<p>I split my lunch hour into two parts to get the most out of it.  My hair is in that in-between stage where I can definitely wait another month or two to get it cut, but my bangs were starting to resemble a curtain. I&#8217;m going to a wedding next week, and thought it would be nicer for everyone if I cleaned myself up a bit.  So 20 minutes and $15 later, my bangs were neat and tidy!  I know <a href="http://peasandthankyou.com/">some</a> <a href="http://masteringmanhattan.wordpress.com">of you</a> have master skills and can trim them yourselves; if you&#8217;d like to do a tutorial on this for us lesser folk, I would <em>greatly</em> appreciate it.</p>
<p>When I got back from the salon, I gobbled down my lunch while manning the phone.  I&#8217;m trying to eat up the (scant) ingredients in my fridge, so I made a <strong>salad</strong> with r<em>omaine, raw red cabbage, and two types of WF tofu (&#8220;balsamic baked&#8221; and &#8220;Sal&#8217;s special&#8221;)</em>.</p>

<p>Then I journeyed back outside to <a href="http://www.westerlynaturalmarket.com/retailer/store_templates/shell_id_1.asp?storeID=QWCSN3N89ASR2JS000AKHMCCQAB04FN2">Westerly Natural Market</a> for a juice run with a coworker.  He treated me to his favorite green juice, <strong>green lemonade </strong>(not 100% positive about the ingredients, but I think it was made with <em>romaine, kale, apple, lemon and ginger</em>).  It was so refreshing, and great to know there&#8217;s a good health food store within walking distance!  This could, of course, be dangerous for my wallet&#8230;</p>

<p>Someone came by my office at 4 saying we were all desperately in need of a sugar high and brought us each <strong>iced sugar cookies</strong>. These aren&#8217;t normally my style, but oh my lordy, they were good! It literally tasted like eating sweet butter.  Trust me, that&#8217;s better than it sounds.</p>

<p>I&#8217;d planned on going to a spin class at 5:45, but after almost 8 hours of not much action at work, we had a borderline crisis at 4:30.  So, no spin.  I was exhausted by the time I finally left the office and didn&#8217;t feel like going to the gym for any kind of exercise, so I just went home to relax.</p>
<p>Ari and I had <em>nearly</em> matching dinners: <strong>Whole Foods minestrone soup</strong> and a slice of <strong>Ezekiel Cinnamon Raisin bread with a Morningstar Farms Pizza Burger and melted cheddar.</strong> Ari was a bit of a pansy and wasn&#8217;t feeling the veggie burger love.  He <em>did</em>, however, ask for &#8220;hippie juice&#8221; when I offered (what I refer to Bragg&#8217;s as).  Baby steps.</p>

I think it deserves a 6.5/10.  Not bad, but not great either.   I had the last of the <a href="http://lilveggiepatch.com/2009/12/22/have-you-seen-my-tunes/"><strong>pineapple</strong></a> (recycled photo) for dessert, which was still incredibly sweet and juicy.</p>

<p>My food has been pretty boring for the last week or so (excepting the <a href="http://lilveggiepatch.com/2009/12/21/il-mulino/">amazing</a> <a href="http://lilveggiepatch.com/2009/12/21/weekend-review/">dinners</a> out), but hopefully I&#8217;ll have a little time on my hands to whip some fun things up.  I have to work tomorrow (although we close at 3 PM) and Monday, but I&#8217;m off Tuesday, Wednesday and Thursday. I can&#8217;t wait!</p>

<p>The subways were running smoothly and I got off the train with enough time to stop by my mom&#8217;s hair salon to say hello.  It was a nice way to start the day!</p>

<p>I had leftover <a href="http://lilveggiepatch.com/2009/12/14/the-3-oclock-buzz/"><strong>tofu nabe and rice</strong></a> and a cup of S<strong>tonyfield Chocolate Underground yogurt</strong>.  Saved the apple for my afternoon snack <img src='http://lilveggiepatch.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' />   Last night, I put a handful of f<strong>rozen shrimp</strong> into a Ziplock bag and refrigerated it.  By the time lunchtime rolled around, it was ready to eat!</p>

<p>Remember my new trick of drinking coffee in the early afternoon?  Well, today we were out of cups!  I&#8217;d brought my coffee to work this morning as well, but couldn&#8217;t get the top of the thermos off.  So, this girl was running on ZERO caffeine!  <em>Not</em> ideal.</p>
<p>I had to stop by HR today, and while there took a <strong>Mary-Jane</strong> to spike my energy.  (That egg-shaped thing is my new <a href="http://www.evolutionofsmooth.com/">Eos</a> chapstick&#8230; isn&#8217;t it cute? It moisturizes pretty well, too!)</p>

<p>There was a minor crisis as I was getting ready to leave the office, but we solved it and left by 5:30.  It was a rare night when Ari was free for dinner, so we went out for Thai.  We shared an order <strong>shrimp spring rolls</strong> as an appetizer&#8230; I don&#8217;t usually like fried spring rolls, but these were actually pretty good.</p>

<p>For my entrée, I ordered the &#8220;Healthy Ginger&#8221;: <strong>vegetables and shrimp sautéed in a fresh ginger sauce</strong>.  I half with <strong>brown rice</strong>, and packed up the rest to take home.  This was my third time having shrimp in one day!  Wonder if I could get a job at <a href="http://www.imdb.com/title/tt0109830/">Bubba Gump</a>?</p>

<p>This morning when I woke up at 8:30, I panicked for a few minutes before remembering that my boss (at my internship) had canceled work for the day. I was up and ready to go, though, which things to do and people to see!</p>
<p>I was excited to try these<strong> goji berries</strong> with my breakfast.  I&#8217;ve only ever tasted these chopped up and mixed into other things, but when I snatched them right up when I spotted this bag on sale for $2.19 at the food co-op <a href="http://lilveggiepatch.com/2009/11/22/dos-and-donts/">this weekend</a> (they&#8217;re usually almost triple that price).  <a href="http://altmedicine.about.com/od/completeazindex/a/goji.htm">Goji berries</a> are rich in antioxidants, and among their many benefits they are touted to improve eyesight (they&#8217;re rich in beta carotene), boost immunity, and spice up your sex life <img src='http://lilveggiepatch.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' /> </p>

<p>I tossed them in with <strong>Greek yogurt, 1/2 toasted Trader Joe&#8217;s Berry Mango muffin, warmed frozen berries and flaxy peanut butter. </strong>The goji berries are firm but chewy; the texture really complemented the rest of the mess.</p>

<p>This held me over for a <em>really</em> long time.  The rest of the morning was spent reading, researching, and waiting until I was digested enough to go for a run.  I warmed up with a 20 minute <a href="http://www.yogadownload.com/OurClasses/OurClassDisplay/tabid/183/prodid/142/default.aspx">hip opening flow</a>, then set out for an easy 2 mile run.</p>

<p>Most of my runs are going to have to be in the morning now that it&#8217;s getting dark earlier; I&#8217;ll have to crank out some long runs on the treadmill when I&#8217;m in Russia, however.  I&#8217;m a little nervous that I won&#8217;t be able (psychologically) to run 7 miles on a treadmill&#8230;. <strong>What are you tips for making it through a long treadmill session?</strong></p>
<p>Lunch was pretty basic (and very <span style="color:#003300;"><strong>green</strong></span>): the last of the<strong> <a href="http://lilveggiepatch.com/2009/11/22/dos-and-donts/">spinach and rice soup</a></strong> and a <strong>crunchy salad</strong> (spinach, broccoli slaw, celery, roasted almonds; sesame oil/rice vinegar/sesame seed dressing).</p>

<p>My interview was at 3:30; when it was over I hopped right back onto the subway and headed home.  I had 1/3 of a <strong>Key Lime Pie Larabar</strong> on the ride back:</p>

<p>I found myself in one of the rare instances when I didn&#8217;t have anything to read on the subway&#8230; it was completely disorienting.  I <em>always</em> have a book with me (sometimes two!); I would have brought one to prom if it had fit in my clutch!  <a href="http://theupwelling.com">Ari</a> calls me his <strong>word nerd</strong>.</p>
<p>When I got home, I went straight to the kitchen to unwind and get dinner started.  I&#8217;ve had my eye on <a href="http://www.marthastewart.com/portal/site/mslo/menuitem.76d5d3769e1fc1611e3bf410b5900aa0/?vgnextoid=c479cf380e1dd010VgnVCM1000005b09a00aRCRD">Martha Stewart</a>&#8216;s recipe for <strong>Roasted Cauliflower with Pasta and Lemon Zest</strong> (in the November 2009 issue) for quite some time&#8230; a little <em>too</em> much time, because the head of cauliflower I&#8217;d bought in anticipation a couple weeks ago had started to mold.  But have no fear! I just sliced off the offending areas. I&#8217;m frugal, what can I say?</p>

<p>While slicing onion, I remembered what one of my cooking teachers always said: always cut out the middle greenish part of an onion.  I can&#8217;t quite remember why that is; I think it has something to do with it not being fully developed yet and causing stomachaches.</p>

<p>There wasn&#8217;t too much room in my tum for dessert, but in the words of Tim Gunn, I made it work.  Dried figs and prunes stuffed with dark chocolate chips are <em>so good</em>&#8230; and they just keep me going back for more.  They kind of look like frogs, right?  I seem to have successfully eaten nuts in some form or other for every meal and snack today.</p>
