Looks like you guys really want to win some nut butter! Keep the entries coming; you have until tomorrow

Yesterday I was up at the crack of 4:50 to get my booty to the gym and log 7 miles before work. I popped an Aleve and grabbed two Clif Peanut Butter Shot Roks (the company sent these a while back) on the way out the door… I liked them! Not two “protein-y” and just hearty enough to satiate me at 5 AM.

Luckily I was so worried about hurting my knee that I didn’t find myself getting too bored on the treadmill.

Warm-up: 5.8 mph

Mile 2-5.5: 6.4 mph

Mile 5.5-6: 7.5 mph

Mile 6-7: 6.2, 5.8., 5.0, 4.5, 4.0, 3.5

Total time: 1:07:55

I dropped my iPod twice while I was running, and the first time after I had to stop and retrieve it and then start up again it really hurt. It was pretty sore on the walk home, too, so while I ate breakfast, I iced.

Breakfast was the first breakfast cookie I’ve had in months!

This was a particularly good one.

1/3 cup oats

1/2 banana

1/2 scoop vanilla protein powder

splash of skim milk

1 tsp Maranatha No Stir Creamy Peanut Butter

1 tsp chia seeds

toppings: goji berries, cinnamon, Greek yogurt, pumpkin, dried fig, agave

As soon as I got to work, I go an ice pack out of the freezer and kept it on my knee for most of the day.

Despite my long run, breakfast held me over really well! I only needed an orange to hold me until lunch (I ate the apple later in the afternoon).

For lunch I had leftover Chopped Coconut Miso Salad and Everything Pretzel Crisps.

One of our coworkers thought Danielle and I were sisters… I don’t really see the resemblance, do you?

In addition to the apple, I also had a Caramel Chocolate Forze Bar in the afternoon.

After work I went to a networking happy hour (hello, $4 Absolut cocktails!) then came home to a delicious meal grace à Daddy-O: sautéed broccoli rabe, roasted tomatoes, octopus braised in red wine, and brown rice.

I also had a small bowl of mushroom and wild rice soup.

For dessert I had a bowl of Ciao Bella’s Blackberry Cabernet sorbet with chocolate sauce… somehow it was a little camera shy Before I got into bed, I took one of my coworker’s suggestions (she’s run three half-marathons) and took a warm bath, then rolled out both IT Bands and glute muscles. My calves are pretty sore today and I have a feeling my knee isn’t going to be much better. I’m instating a “no running until Sunday” rule.

Off to go walk the pooch and get ready for the day. Have a great weekend!

There’s an experiment going on in my neck of the woods tonight, and it’s called Operation Ten P.M. For the past few weeks I’ve gotten an inadequate amount of sleep, going to bed late and waking up far too early to make sure things get done on time. They do get done this way, but the thing is: this can’t go on forever. No one can get by on barely 5 hours of sleep and remain a happy, functioning person forever. So tonight, I’m going to bed early with no regrets, no last-minute chores, no nothing. Operation Ten P.M., baby. It just might change the world.

This morning I got up at 5 and dragged my spandex-clad self over to the gym with my reading. I propped my work on the cross-ramp and sweat it out for 30 minutes, never mind the dark sky outside. The work had to be done, so why not wake my body up while doing it? I did a few ab exercises, then went home to work some more, get ready for the day and have breakfast.

This bowl of oatmeal was almost a little too belly-busting… I finished it, hoping it would hold me over for a longer period throughout the morning, but I didn’t feel so great afterward.

In the mix:

1/2 cup oats cooked in 1/2 cup water

1 banana

pumpkin

1 tsp ground flax

1 HUGE scoop almond butter

stevia

cinnamon

It did hold me over for about 3.5 hours, after which I snacked on an apple (but left the orange).

For lunch, I had leftover chickpeas…

… and a HoneyNana Chobani Champion from Ada. Read my review here!

Lunch held me over really well… must have been all of the fiber in those garbanzos! Beans are champions when it comes to staying-power and fullness. Around 4, I snacked on some baby carrots.

After work, I ran some errands then headed home to make dinner: Quinoa Risotto with Mushrooms and Thyme. I doubled the mushrooms for a certain mushroom-loving guy…

We had it with a little broccoli. To be honest, this wasn’t my favorite recipe… it just didn’t have a whole lot of flavor. Thank goodness for parmesan and salt! Maybe it’ll taste better in a few days, once it’s hd time to stew a little in the fridge.

We had small glasses of chilled Réserve de Villecours Cabernet Sauvignon that my friend Howard gave us.

For dessert, I had a bowl of Mint Galactica Coconut Bliss Ice Cream with cardamom chocolate sauce and hazelnut butter. Then I went back for more. And I did not feel bad about it.

Sometimes, without realizing I’m doing it, I put a lot of pressure on myself to juggle many things at once and just deal with it. I don’t always acknowledge how stressed out I’m feeling, and before I know it: BOOM! It goes to the bad place. Sometimes I just need to remind myself that I don’t have to do everything, and I shouldn’t waste my energy feeling guilty when I give myself a break. So tonight, in honor of Operation Ten P.M., I will not feel guilty.

I will not feel guilty about returning a Netflix movie unopened.

I will not feel guilty about leaving work at work and giving myself time to sleep.

I will not feel guilty about being moody from time to time.

I will not feel guilty that I’m not returning every owed phone call all in one night.

I will not feel guilty about ignoring my Blackberry and e-mails.

I will not feel guilty about leaving my closet in a bit of disorder until tomorrow night. (Okay, maybe just a little…)

I will not feel guilty about that extra ice cream.

What won’t you feel guilty about today?

Right now I’m in bed, under the covers and watching Spanglish… and I have nothing to do tonight! Life is good

I loved my oatmeal combination so much yesterday that I made the same thing today (minus the jar)! Oatmeal with cinnamon, stevia, pumpkin, pumpkin butter, lemon curd and chunky peanut butter. Sorry to bore you, but this may make a reappearance tomorrow, too!

I was too tired to make lunch last night, so I got up a little earlier to pack it today: carrots, orange, blueberry Chobani and a big salad.

In the salad bowl:

spinach

small Granny Smith apple

1/3 block tofu

grape tomatoes

walnuts

dried cranberries

feta

Herbs de Province salad dressing borrowed from Danielle… someone pilfered the bottle I keep in the fridge at the office!

Around 3:30 I dug into the snack drawer for something to chew on (I really need to get some gum!) and came out with a Caramel Chocolate Forze bar.

While there wasn’t a whole lot of “caramel” flavor here, it was still yummy! It tastes like a sweet, chocolatey cookie. It’s probably ranked #3 right now out of the flavors I’ve tried (Chocolate Peanut Butter and Chocolate Decadence are tied), but I still have on more to try.

I was zonked when I left work at 5:30 but I had two miles to run (according to my half-marathon training schedule) so I headed to the gym after work. My heart rate monitor took thirty minutes to start working… I am so close to getting a Garmin.

Mile 1-1.25: 5.8 mph

Mile 1.25-1.95: 6.5 mph

Mile 1.95-2.0: 5.8 mph

Total distance: 2.0 miles

Total distance: 20:00

Average heart rate: 165

Maximum heart rate: 189

Calories burned: 213

This was supposed to be an “easy run” at a 10:54 pace, but… on a treadmill, that felt like an eternity, and I wanted to get it done as quickly as possible! So I got a little impatient, but I think I paced myself pretty well and would have been able to carry on a conversation throughout. So, I think that’s my new definition of an “easy run”! What is an “easy workout” for you?

Dinner was quick and easy: leftover fettuccine with mushrooms- to which I added a slice of tempeh bacon to make “vegetarian carbonara”- and steamed cauliflower with Emeril’s Original Essence, à la Miss K.

Then I had a long-lost favorite: a dessert plate! My lovely Jess reminded me that it’s been a while since I had one, so I re-stocked my dried fruit stash. This plate had two Medjool dates, a dried peach half, dried apricot, dried fig, prune, almond butter, and Peppermint Chocolove. Have you ever made a dessert plate? How do you make it?

Spanglish is a-callin’… I really like it!

And in honor of Groundhog Day, one year ago today: February 2, 2009!

Hi all. I have not been the busiest of bees since last I wrote… which means I’m sort of in “cruch time” mode and this is going to be a bit of a quickie.

I tried my last True Delights flavor today: Honey Roasted Cashew Mixed Berry.

Ingredients

WHOLE GRAIN ROLLED OATS, DRIED SWEETENED CRANBERRIES (SUGAR, CRANBERRIES), CORN SYRUP, CRISP RICE (RICE FLOUR, SUGAR, MALT EXTRACT, SALT), INFUSED DRIED CHERRIES (RED TART CHERRIES, SUGAR, RED TART CHERRY JUICE), CASHEWS, BROWN SUGAR, HONEY, OLIGOFRUCTOSE, SUNFLOWER OIL, INVERT SUGAR, GLYCERIN, COCONUT OIL, CORN SYRUP SOLIDS. CONTAINS 2% OR LESS OF FRUCTOSE, SEA SALT, SORBITOL, SUGAR, WATER, SOY LECITHIN, NATURAL AND ARTIFICIAL FLAVOR, SALT, CARAMEL COLOR, VANILLA EXTRACT, MALTODEXTRIN, NATURAL MIXED TOCOPHEROLS (ANTIOXIDANT), WHEY, SODIUM CASEINATE.

This bar was very sweet. A little salt would improve the flavor a lot, but then again I like my trail mix (this tastes very trail mix-y to me) to be both sweet and salty. It’s not as much of a pleasure to chew as the other two flavors were. Overall, the bar is still good, but I probably wouldn’t buy it myself.

Other Quaker True Delights bars I have reviewed:

Dark Chocolate Raspberry Almond

Toasted Coconut Banana Macadamia Nut

I’ve been having a bit of a love affair with Veganomicon recently. Tonight, I made my own version of Terry & Isa’s Spicy Tempeh and Broccoli Rabe With Rotelle.

Take some tempeh and cook it up with some spices…

Add a little braised spinach…

Toss it with pasta and voila! Delicious and healthful meal.

I don’t have time right now to type out the recipe, but if you’d like it, let me know and I’ll put it up as soon as I can.

For my “pre-dessert,” I took Sarah’s advice and had some frozen grapes. Amazing! It was like the perfect tart and sweet ice cream, but as finger food. How have I been living without this for so long? I just packed up the rest of the box and froze them, too. Yummy!

I’ll probably have a little chocolatey something while I study a little later. And maybe some tea. With caffeine. This Patch is T-I-R-E-D.

I just started listening to a new audiobook that my dad gave me for Christmas. It’s a book called I See You Everywhere, by one of our favorite authors, Julia Glass. What do you listen to in the car?

Night night!

This morning when I woke up, I was not feeling my 7 mile run. I checked the weather: 15 degrees. It seemed like a much better idea to just lie in bed… but I knew I’d feel better about my training plan if I did it.

Before I left I had a slice of whole wheat toast with coconut butter and raspberry jam.

It was really cold. I finally got to the point where the wind didn’t hurt anymore, but when, after 5 miles, I popped back into the apartment for a quick pit stop to answer nature, I found that my legs were completely numb! So… it was quitting time. I may not have gotten 7 miles in, but I made do with 5.

Breakfast was a quick bowl of savory oats; that cute lil’ egg shape is the result by whisking an egg and than microwaving it for 45 seconds.

1/2 cup oats cooked in 1/2 cup water

cottage cheese

1 whole egg

Frank’s Red Hot sauce

black pepper

I also had an orange to help get me through my reading and laundry-folding…

Er… woke up two hours later. So much for that burst of energy! I made a big salad for a quick lunch…

In the mix:

spinach

dulse

tofu (1/3 block)

tempeh bacon (2 slices)

mushrooms

steamed broccoli stems

Rosemary Quackers (from One Lucky Duck)

rice wine/olive oil/mustard vinaigrette

After lunch I made took my grocery list and went to my new favorite supermarket to stock up for the week. I really could have spent hours in there! Unfortunately there was no time for that… when I got back home and put everything away, I plunked back down to work, snacking on a Granny Smith apple with cinnamon and a pinch of cayenne. I like this combination! The extra zing! kept me awake this time.

It was Family Dinner night at our house tonight! (Read about our first Family Dinner here.) My contribution was a big salad with Boston lettuce, radicchio, Fuji apple slices, shaved parmesan, dried figs and parsley.

I also made plantains (sliced and sautéed in marjarine until lightly crispy)… they were so good that we all just ate them out of the pan with our fingers! (Forgot to take a photo of these, sorry.)

Ilana made fettuccine with wild mushrooms and parsley…

… and Chrsitine made a delicious strawberry and blueberry pie! She topped our slices with dollops of Vanilla Chobani.

I’m so impressed with our Family Dinner endeavors… we already have our next date booked. I’m on entrée duty next time… what is your favorite weeknight crowd-pleasing dinner?

Back to the grind. Hope your week is off to a great start!

Evening! How was your weekend? For the first time in a while, I’m not sad to see Sunday go. Don’t get me wrong: today wasn’t a bother by any means, but quite the opposite! Since Friday night, this weekend has been filled with goodness. I’ve seen my parents and my friends, I’ve planned out the next week (read on!), I’ve read and finished a great book for pleasure, read for work, cleaned and done laundry, and even practiced some yoga! I’m finally starting to feel organized and on top of things. It’s a good feeling

This morning I woke up, naturally, at 8, and instead of rolling over and going back to sleep, took advantage of being awake in the early hours. I finished watching Jackie Brown while enjoying a nice bowl of oatmeal.

In the bowl:

1/2 cup oats cooked in 1/2 cup water

1 TJ’s flattened banana

frozen pineapple, warmed

1 tsp chia seeds

1 scoop flaxy PB

cinnamon

1/3 packet stevia (this is growing on me!)

And because it was Sunday and I didn’t have to function quite as highly as usual, I had a mug of green tea in place of coffee.

I lounged around, practiced some light yoga, and went into the city to meet Liz at One Lucky Duck for lunch.

We both had S+M salads: greens with avocado, hemp seeds, dulse, rosemary crackers and argon-lemon dressing.

Although I recently made a similar version, it makes such a difference to have the real ingredients, like Rosemary Quackers! I splurged and bought some for home… as well as a treat for later in the evening.

Liz and I chatted for a while, then went on our merry ways. I had some important grocery shopping to do (3 buck chuck, anyone?), and she had to fly home. I spent the rest of the afternoon doing some work in bed, napping, and snacking on this yogurt. I’d never tried Trader Joe’s “French Village” variety before, but I liked it! Fruit-on-the bottom yogurt always feels comforting to me; I ate it all the time growing up.

For dinner, I had a bowl of Porcini Mushroom Soup (made last night), toasted bread with Asiago cheese, and steamed carrots.

Washed it down with carrot water and TBRM…

… and for dessert: a raw “oh-reo” from One Lucky Duck. The cream was dead-on! Nabisco should be worried

It was quite a productive day. To keep this up throughout the week, I made myself a meal plan so I wouldn’t have to scramble at night after a long day at work.

It’s already been adjusted a little bit as my dinner tonight was slightly different, but it’s nice to have everything all laid out.

Speaking of which… as I tweeted Friday morning, I got into the NYC Half Marathon! It’s on March 21. Training starts TOMORROW. I haven’t been able to run as much lately (and haven’t run seriously since the 15K) but this is the incentive I needed to get back in the game. It’s still going to be a struggle for me to figure out what time works best for me in terms of training, but I’ll do it. Here’s my training schedule, customized by Smart Coach:

On days when cross-training (XT) is scheduled and I can’t make it to the gym, I’m going to practice yoga at home. I’m confident I can make this work!

On that note, I’m off to shower, finish my reading, and go to sleep. Have a great night!

Evening and happy Sunday! I hope you’ve all had wonderful weekends, whether you celebrated the holidays or simply enjoyed the days.

My Saturday was quite festive, starting with a morning spent at the soup kitchen. I haven’t been able to go as much as I would have liked in the past few months, but it was so nice to be back there again. There were many “regulars” I’ve known for almost 10 years!

After volunteering, my parents and I went to Peacefood Café for lunch.

This was their first time at an all-vegan restaurant. I really appreciate how supportive my family has been of my diet!

We ordered an appetizer to split: vegetable tamale with jalepeño and tomatoes.

The last time I ate at Peacewood, I enjoyed Caitlin‘s sandwich so much that I had to order it! My dad and I split the Roasted Japanese Pumpkin Sandwich with mashed and seasoned with a little sea salt, ground black pepper and extra virgin olive oil, topped with caramelized onions, ground walnuts, vegan goat cheese and seasonal greens. It was even better than I remembered!

We also shared the Pan-Seared French Horn Mushroom Panini with sun-dried tomatoes, arugula, artichoke aioli, mint & basil pesto. It was good, but we both agreed the pumpkin was the best.

My mom ordered the special of the day: Kidney Bean Chili with rice, mixed greens and homemade cornbread. This wasn’t her favorite; I loved it, however, and was the lucky recipient of the leftovers.

It was only my second time at Peacewood Café, but it’s already become one of my favorite restaurants on the Upper West Side. There are tasty, healthy options that carnivores, vegetarians, vegans, raw foodists and foodies alike can enjoy!

Last night when I got home I was quite the domestic goddess. I set to work in the kitchen, making Gena’s Cashew Cheese with Meyer Lemon and Dried Cherries.

I enjoyed it today with a Gala apple, whole wheat and flax pita bread, and tabbouleh. Delicious!

It was a cold and rainy day; I wanted to have a cozy and comforting dinner and came up with this soup.

Miso Soup with Salmon and Soba

Serves 2-3

I used salmon in this soup, but feel free to substitute any other protein source such as tofu, seitan, soft-boiled egg or whatever you choose.

4 oz soba noodles

4 tablespoons white miso paste

2 cups roughly torn broccoli florets (about 1/2 large bunch)

1/2 inch fresh ginger, thinly sliced

3 scallions (green onions), thinly sliced

soy sauce

salmon or protein of choice, such as fresh tofu, soft-boiled egg, or seitan

optional: Sriracha sauce

Cook noodles according to package directions. I used a package of green tea soba that I received from Asian Food Grocer, a Foodbuzz affiliate.

Drain and rinse with cold water; set aside. Bring 4 cups water to a boil. Add ginger and miso, stirring until miso is dissolved.

Add broccoli and scallions (reserving some for garnish), cooking until broccoli is crisp-tender. Remove from heat.

Stir in soba and divide into bowls. Top with salmon (grilled, poached, etc. to your liking), drizzle with soy sauce and Sriracha (if using) and serve!

After dinner, I spent the rest of the night on my hands and knees… scrubbing the floors! Since starting my job, I’ve been slacking a bit in the cleaning department, so I made up for it by sweeping, polishing, dusting and wiping into the wee hours of the morning. I felt a bit like Kath! It was actually pretty satisfying, and got my heart rate right up.

Now Ari and I are relaxing in bed, watching Gone With The Wind and sipping “The Big Red Monster”, a blend of Syrah, Zinfandel and Petit Sirah.

What was the best part of your weekend? Did you lay low or were you busy?

Don’t forget to send me your questions!

Have a great night!

Are you an “all or nothing” type of person? My body seems to be. My internal clock is so out of whack right now! For the past week, I’ve alternated between going to bed early and getting more than a full night’s sleep (10+ hours) and getting less than 6 and feeling completely wiped. This morning was the latter. Last night, even though I was exhausted, I could not get myself to drift off. I knew I had to get up early to get ready for an interview, and the pressure of knowing I needed to sleep only made it worse. I dragged myself out of bed, bleary and blurry eyed (I’m blind as a bat), not even stopping to put on my glasses. I had one mission, and one mission only.

Our house guest left this as a parting gift when he left. I’m sure it’s delicious, but I really didn’t pause to smell or taste it before throwing it back. I’ll let you know about that tomorrow

I replenished my supply of POMx to dissolve my Ester-C into. I’m still so proud of myself for discovering this works! (For new readers: I drink a little bit every day with breakfast to dissolve Ester-C, which aids the absorption of an iron supplement I take for low energy, but don’t photograph it every morning.)

I was excited to try out a new product with breakfast: Stonewall Kitchen’s Lemon Curd. I’ve been curious about this for years, and my mom was nice enough to buy it for me this weekend.

Breakfast was a double portion of Sarah‘s pumpkin “cakes”, topped with a heaping cloud of 0% Fage, cinnamon, walnuts, and a scoop of lemon curd. Lemon Meringue Pumpkin Pie before 7 AM? Yes, please!

I had two back-to-back interviews starting at 9 (which I think went well); afterward I needed to unwind a little with some teasing retail therapy (AKA touch everything, buy nothing) at J.Crew and Anthropologie. How is it that a store (or two) can be filled with only perfect things? But my bank balance remained stable, and I left satisfied with the clothes on my back.

The tree is going up in Rockefeller Center…

I sat in the plaza and ate my Criterion apple. Sometimes it’s okay to be a tourist in your own city.

After making sure there were no more stores I needed to browse through, I came home to get some done and eat lunch. I heated up a bowl of Spinach & Rice soup and added lots of fresh parsley, and served it alongside a small sweet potato with brown sugar and cinnamon. Perfect mid-Monday comfort food, if you ask me.

I thought I deserved a treat, so I had some 55% Dark Chocolate Peppermint Chococolove.

The rest of the afternoon was spent writing. Welcome to my “office”! You may recognize it as the kitchen table, but during the day I spread out and use it for reading, writing, researching, and tea-drinking. I tried the Sugar Plum Spice holiday tea… so good. I think this might have been the first flavor they came up with, because I remember having it a long, long time ago before they changed their packaging.

After successfully moving to decaffeinated tea, I didn’t want to go back to drinking coffee so late in the day. Instead, I moved on to a cup of Sugar Cookie Sleigh Ride. I don’t know how they do it, but this smells so much like a cookie! It’s very vanilla-y, but it has a very soft taste without a hint of bitterness.

I finished up my work, then went into the city to meet my friend Ilena at 5:30 for an early dinner at FreeFoods NYC.

Tonight was another example of how many secrets this city has to offer, both food-wise and other. I never would have suspected that a restaurant like this could exist (and thrive!) in Midtown Manhattan, in the heart of corporate offices and tourist attractions. Was I wrong! It goes to show that people do want to eat locally and sustainably, the options just have to be made available.

FreeFoods serves fresh soups, sandwiches and salads; they have raw, vegan and gluten-free options.

I built my own salad with arugula, avocado, spiced mango, shittake mushrooms, spicy shrimp and Manchego cheese with Thai basil dressing.

One of the staff members had made an extra Vitality Berry smoothie (sweet cherry, açai, blueberry- pomegranate juice, ginger-agave), so Ilena and I split it with our dinners. It was really good, and helped ease the heat in my mouth leftover from my spicy salad dressing!

Ilena and I sat for a while catching up…

…and were treated to another smoothie sample! This time we tried the “orange creamsicle” (it’s new, and the ingredients aren’t listed). As Ilena said, it really did taste like a creamsicle, “but not in the bad way”!

Since we dined early, I was back home by 7:30 to get some things done before Gossip Girl. Sadly, it seems like most TV shows have already had their holiday finales, so I did some more work instead. I did, however, make a fabulous dessert to fill my Chuck Bass-sized void…

My dad found a great deal on takeout containers of Tasti D-Lite, so he picked me up some peanut butter frozen yogurt. I added frozen berries and Dark Chocolate Dreams peanut butter.

Another sweet end to a good day.

Good morning and happy Sunday! Ari woke up at 6 thinking it was 7… we completely forgot about Daylight Savings! I had a hard time falling back to sleep, and puttered around a little before getting in bed again. THe next time I opened my eyes it was 10:30, and I’d gotten almost 12 hours of sleep! It was delicious.

We slept in yesterday morning as well. I got up first, talked scary movies with this girl, then woke the boy up. We went to the diner for the first time in a long time; I was finally ready for an omelet again! I ordered an omelet with 1/2 egg whites and 1/2 egg, spinach, tomato, feta and mushrooms. After my order, Ari gave me the you’re-being-a-pain-in-the-bum look… I know it was kind of an obnoxious order, but I wanted it to be just right. It was pretty big, and I only had room for one bite of home fries.

Toast was enjoyed as well… diner meals are pretty much the only time I like my toast buttered. It must be something about it mixing with HFCS-filled grape jelly, but it’s just delicious! Unfortunately the toast came dry, and by the time I added my own butter the bread was cold so it didn’t melt. It was still good, though!

After brunch, Ari carved our pumpkin…

… while I toasted the pumpkin seeds.

Salty-Sweet Toasted Pumpkin Seeds

seeds from 1 pumpkin

1 tablespoon olive oil

1 tablespoon brown sugar

1 teaspoon cinnamon

1/4 teaspoon nutmeg

6 cups of water

3-1/2 teaspoons salt

Preheat oven to 400. Thoroughly remove stringy insides from seeds. Rinse well; the seeds should be completely free of orange pulp. Put seeds in pot with water and salt over medium-high heat until water boils. Lower heat and simmer 10 minutes. Drain seeds.

Mix oil, sugar, cinnamon and nutmeg together in a bowl. Add pumpkin seeds and hand-toss to coat. Spread seeds evenly in a glass baking dish or cookie sheet. Put dish in oven and toast until crispy, 30-40 minutes. Enjoy!

We ate almost all of those while we worked around the house… I definitely ate the lion’s portion, but they’re so good! Soon, we heard a knock. Fitting that our first trick-or-treaters should be part of the veggie and fruit patch!

This tomato was sassy.

Would you let us operate on you?

Dr. Ari started to look a little sick by the time dinner rolled around…

… but he treated me to sushi. What a nice zombie!

Bentos two nights in a row?! Lucky me! It came with sashimi, shrimp shumai, a California roll, rice (which I didn’t eat), and salad.

It also came with honeydew.

Ari and I brainstormed about what would make the perfect Halloween dessert cocktail. If you’re an old-school reader, you may remember the hot cocoa/marshmallow debacle of Halloween 2008. Not pretty. Well, I based this year’s Halloween Scream on the same Martha Stewart recipe, but added some personal touches.

Ari requested butterscotch chips (I’m not a huge fan, but that’s love!), and we added Kahlua. The colors are a little Halloween-ie, yes?

We topped the finished product with cinnamon and marshmallows. (I’d thought marshmallows went on Ari’s “white and creamy veto list” –he’s going to have to do his own post on this someday soon– but it turns out he likes them! What a breakthrough.) This photo doesn’t show it, but the cocoa was red!

I drank about a third, but it was too rich for me. It reminded me a lot of the drinking chocolate we had in Paris! I switched to an apple instead… I wasn’t really hungry for it, but I needed something to munch while watching Halloween H2O!

It was a low-key Halloween, but it was a really nice day. Hope you had a good one, too!

Congratulations to Melissa and all of the other NYC Marathoners!!!

Happy Halloween! I hope you are all having a wonderful night, whether you’re at a party, parade, or staying at home watching movies. Ari and I decided to do the latter, although we’ve been sitting in our costumes all day waiting for Trick-or-Treaters!

Yesterday I started the day with my first (ever!) batch of Oats in a Jar.

I added 1/2 cup of oats and 1/2 cup of water to the almond butter jar and microwaved it for one minute.

I topped it with 1/2 banana, 2 chopped prunes, 3 walnuts, a little skim milk and brown sugar. It was delicious! I may or may not have rescued an empty jar of peanut butter from the trash so I can make this again…

My mom gave me an idea about how to solve the Ester-C powder problem… try mixing it in something else! I put a scoop into a little bit of plain yogurt.

It’s still really disgusting, and I had to down a cup of coffee right away after I ate it. But… it did the trick, and it went down a lot faster than if I’d had to drink it. I’m out of yogurt, though, so I’ll have to find some more creative ways to eat this.

I wanted to get an early start to my day, so I said goodbye to the hair this guy and headed to the gym.

Time was limited, so I just did some arms, abs, PT stretches (which I will post at the end for Melissa) and 18 minutes on the elliptical. Short and sweet. Afterward, I met George for lunch at Pizza Gruppo. Always one for deals, I ordered the salad + 1/2 sandwich special. The salad was bigger than I’d expected, and came with mushrooms!

My panini came with goat cheese, pesto, and roasted vegetables. It was really good! I haven’t had a sandwich I didn’t make myself in a looong time.

After lunch I stopped by Paragon to pick up a foam roller. There was so much pre-marathon mania going on… very exciting to be around! When I got home, I sprinkled 1/4 packet of YouBar‘s YouShake Blended Bliss into the last of my yogurt.

I also split an apple with cinnamon with Ari (who proudly told me he had green juice for lunch!) while we ran some Halloweenie-errands.

For some reason I was snackier than usual, so I had some chunks of energy while getting ready to meet my little redheaded friend for dinner.

Kalle and I found a Japanese restaurant with a great dinner special. It’s so easy to spend a lot of money when ordering sushi, so the specials are imperative. I ordered the Sashimi+Roll combination, which came with miso soup and salad.

The sweet potato roll was delicious… and my second in one week!

The sashimi was beautifully presented.

It came with two pieces of cucumber-wrapped fish… what a great alternative to rice!

The special also came with shrimp shumai and edamame.

Kalle’s rolls were also creatively presented and looked delicious.

After dinner, we went back to her apartment to talk and drink Malbec out of black goblets. I broke the cork in half, but managed to get it out of the bottle! Looks like my waitressing skills are falling by the wayside…

I got home pretty late and didn’t end up going to bed until almost 3… the night was definitely worth it, though.

And now, onto the physical therapy!

One exercise that I’ve been working on with my PT is called the clamshell, which strengthens quads. Lying on my side in bed or on the floor, I stack my knees at a 90 degree angle. Clenching my glutes and quads, I slowly raise one knee while keeping my feet together. I repeat this twenty times, then switch to my other side. Repeat series.

Another exercise that strengthens quads and calves is done by sitting on a chair or on the edge of the bed. Extend one leg straight out and flex glutes, quads, calves and toes. Twist leg to the side, then back to center. Repeat until leg is fatigued, and switch legs.

Around the blogs: Jungwha is giving away a Sodastream!

Happy Halloween from the Upwelling and LVP… have a great night!

Good morning and happy humpday! I’m so sorry: I forgot to wish you a HAPPY SEPTEMBER! It’s really starting to feel like Fall around here… a couple days ago I had to wear two sweaters to yoga! Luckily it’s not quite as brisk as it is in Michigan… lady, you keep that weather to yourself!

Yesterday, in honor of said Midwesterner, I had a PB2/VitaTop parfait, using a Fudgy Peanut Butter Chip VitaMuffin.

I made chocolate honey peanut butter mousse with TJ’s Organic Nonfat Honey Greek yogurt, then fancied it up with layers of peach and crumbled muffin.

By the time I’d finished catching up on my morning things- what is your routine like in the morning between when you wake up, breakfast and lunch? - I didn’t have enough time to go to the gym as originally planned. I’d wanted to run on the treadmill so I could build some mileage, but decided to try it outside instead. You may recall a certain killer run I went on with Ari’s brother (a four-time marathoner) a couple weeks ago… well, that was the run I set out on. I laced up my shoes, bought some new headphones at the dollar store (my Clean & Clear ones were long dead), pressed play, and took off.

Since I was planning on a longer run than I’ve been doing, I kept my pace slow, concentrating on breathing easily, listening to the music, and watching the scenery. I made the trip to the park- which, in itself, is almost the 2-mile distance I’m used to running in our neighborhood- ran the length of the park, and ran home. I didn’t rush, but I got a rush (hehe ) because of how pleasant the run was. Before I knew it, I was back home. The funny thing is that for this distance- about 4 miles- the length of Ari’s CD is perfect! I started running during “American Girls”, and stretched during “New Streets”. I have to remember to keep my playlists fresh; having music really makes such a difference to me in terms of the length and quality of my workout. Luckily, I have these ladies to keep me on my toes! I really want to start running longer distances. The 5K is on September 13, and we’ll see where it goes from there. It’s really important for me not to get too cocky about training, however, because I don’t want to end up with another injury. I’m going to try to keep going to yoga in between long runs, and make sure to cross-train and strength train throughout the week. But, I have to say, I’m excited! I never thought I really had it in me to be a runner.

Total distance: 4(ish) miles

Total time: 44:40 minutes

Maximum heart rate: 192 (96%)

Average heart rate: 178 (89%)

Calories burned: 540

The distance is only an approximation… I really need a Garmin.

After a quick shower, I downed some carrot juice, my new recovery drink of choice. For those of you who asked: I do not make this myself. I wish I had a juicer, but I do not wish I was cleaning it every day! I got a 32-oz jug of Organic Carrot Juice at Trader Joe’s for $3.99 (non-Organic is $2.99).

Then I hustled into the city to meet my long-lost love and blogger, Miss Sarah, at the Candle Cafe.

There were so many things that I wanted to try, so I gently forced the waitress to choose for me. At restaurants, I usually try to stray from having things I can (and would) make at home, but going against my rule, I ended up ordering one of the daily specials, soba salad.

It was very good! The dressing reminded me a lot of Woodstock Dressing, which I haven’t had in a while.

Sarah ordered the Aztec salad: bi-colored quinoa, black beans, red onion and corn topped with spicy pumpkin seeds and barbeque grilled tempeh. Served over mixed field greens with a toasted cumin vinaigrette.

I think she won that round… but it’s okay! I’ll just have to go back I will also have to go finish this girl in Russia… she’s leaving for Moscow in five days! What a life.

We needed to end things on a sweet note, so we split the chocolate mousse pie. Pure, chocolatey heaven at 2 PM. Again, what a life

After Sarah and I figured out how to get her to the airport, we parted ways and I went home to run some errands (stencil-shopping at Home Depot!) with Ari. On the way back, we stopped at Starbucks for a Pumpkin Spiced Latte. Jenna really talked this up this year!

The last time I remembered ordering one was when I was college visiting, at Wellesley. I’d been out late at a Beastie Boys concert the night before, and thought the caffeine/pumpkin mix was just so very collegiate. Yeah, big dork, I know.

I spent part of the evening doing work, then broke to make dinner.

I used the George Foreman (which I should really be utilizing more, it’s fabulous) to grill us up two swordfish steaks. I tossed each steak in a quick salmoriglio sauce that I whipped up; there are many variations of this, but the basic mixture is equal parts lemon juice (I used lime) and olive oil. Then add herbs of your choosing (oregano), salt and pepper. It goes on just about anything, and can help quell that strong “fishy” flavor that’s prevalent in a lot of seafood.

On the side, I braised some spinach and dried mushrooms (Ari’s choice) in vegetable stock, reduced the broth down, and drizzled the mixture with a little sesame oil.

We also split a sweet potato with butter and agave.

I got the swordfish steaks in the frozen section of Trader Joe’s; they were perfectly portioned out! One baby steak and one man steak I added more salmoriglio sauce to the fish once it was plated, and drizzled a little on the spinach and mushrooms as well. I wish I’d made more, because it’s such a versatile sauce. Thanks for teaching me, Mom and Dad!

I had some vino and a nectarine for dessert, and we settled back for a mini staycation with For Your Consideration (genius!) and In Treatment. It was a lovely night.

Well, off to pack my lunch, get my yoga on and go to work.

Before I go: if you’d like to sponsor me in the race 5K Race For the Cure, you can do so here. I appreciate the support!

Also, the lovely Lauryn, formerly of Making Moves, has started a new blog, Mastering Manhattan, about her tradition to NYC living. Woohoo! That’s right, she’ll now be a New Yorker, so expect some awesome collaborations
