Thanks so much for your words of encouragement about the running situation… as of now, I’m still planning to run the half-marathon on the 21st, but I’m going to take it one day at a time.

This morning I had some things to do before work so I woke up at 5, headed to the gym for 30 minutes on the elliptical, and came home to git ‘er done. I had a delicious breakfast cookie waiting for me when I got home; I made a similar mixture last week and it was so good that I had to try it again!

1/3 cup oats

1/2 mashed banana

1/2 scoop vanilla protein powder

splash skim milk

1 tbsp chocolate PB2

1 tsp chia seeds

toppings: goji berries, Greek yogurt, pumpkin, dried fig, agave

I brought an orange and apple to work… I’m always paranoid about my apples being too noisy, so today I sliced it beforehand. Did the trick!

I also had a slice of Gluten Free Bran bread… I love more each time I have some! This recipe is a keeper.

My lunch salad did a good job of cleaning out the fridge…

In the mix:

mixed greens

steamed broccoli

celery

grape tomatoes

goji berries

dried cranberries

TJ’s Vegetable Marsala burger (I missed these!)

Goddess dressing (mixed in at work)

Danielle had bought a package of Lemon Poppyseed Heart Thrive bars and wasn’t a fan, so she gave me the remaining bar. I love these! They were great snacks when I was in Russia, and just as good today.

Dinner required little planning, but worked out perfectly.

I made SELF’s Creamy Lemon Shrimp, halving the recipe and making a few substitutions:

Greek yogurt in place of plain yogurt/ sour cream

celery in place of chives

agave in place of sugar

spinach in place of arugula

It may not look so pretty, but I really enjoyed this! It was healthy, voluminous, and filled me right up.

I packed half for lunch tomorrow; I love when I don’t have to think about what to prepare for the next day.

Dessert was Banana Soft Serve with a melted square of Bakers chocolate.

A superoon may have also sneaked its way in

Off to watch Gossip Girl! It’s a lovely, lazy night. Have a great one.

This morning when I woke up, I was not feeling my 7 mile run. I checked the weather: 15 degrees. It seemed like a much better idea to just lie in bed… but I knew I’d feel better about my training plan if I did it.

Before I left I had a slice of whole wheat toast with coconut butter and raspberry jam.

It was really cold. I finally got to the point where the wind didn’t hurt anymore, but when, after 5 miles, I popped back into the apartment for a quick pit stop to answer nature, I found that my legs were completely numb! So… it was quitting time. I may not have gotten 7 miles in, but I made do with 5.

Breakfast was a quick bowl of savory oats; that cute lil’ egg shape is the result by whisking an egg and than microwaving it for 45 seconds.

1/2 cup oats cooked in 1/2 cup water

cottage cheese

1 whole egg

Frank’s Red Hot sauce

black pepper

I also had an orange to help get me through my reading and laundry-folding…

Er… woke up two hours later. So much for that burst of energy! I made a big salad for a quick lunch…

In the mix:

spinach

dulse

tofu (1/3 block)

tempeh bacon (2 slices)

mushrooms

steamed broccoli stems

Rosemary Quackers (from One Lucky Duck)

rice wine/olive oil/mustard vinaigrette

After lunch I made took my grocery list and went to my new favorite supermarket to stock up for the week. I really could have spent hours in there! Unfortunately there was no time for that… when I got back home and put everything away, I plunked back down to work, snacking on a Granny Smith apple with cinnamon and a pinch of cayenne. I like this combination! The extra zing! kept me awake this time.

It was Family Dinner night at our house tonight! (Read about our first Family Dinner here.) My contribution was a big salad with Boston lettuce, radicchio, Fuji apple slices, shaved parmesan, dried figs and parsley.

I also made plantains (sliced and sautéed in marjarine until lightly crispy)… they were so good that we all just ate them out of the pan with our fingers! (Forgot to take a photo of these, sorry.)

Ilana made fettuccine with wild mushrooms and parsley…

… and Chrsitine made a delicious strawberry and blueberry pie! She topped our slices with dollops of Vanilla Chobani.

I’m so impressed with our Family Dinner endeavors… we already have our next date booked. I’m on entrée duty next time… what is your favorite weeknight crowd-pleasing dinner?

Back to the grind. Hope your week is off to a great start!

What a good day. I slept in, saw friends, ate well… what could be better? More hours in the day, but alas.

This morning I woke up a little hazy from last night’s escapades, but made do with a strong pot of coffee and a good breakfast. I ate in parts: Peach Chobani Greek yogurt, sweet potato cranberry coconut muffin, Honeybell orange.

After taking my sweet time getting ready and lazing around, I met Caitlin for lunch at Sacred Chow, an organic vegan (and Kosher) cafe downton.

We both got the Souper Hero Combo (soup + 1/2 sandwich); I got a bowl of Sweet Potato and Cassava Soup with dill and Orange Blackstrap Seitan (orange-molasses seitan w/ red-hot onions and Thai ginger bbq sauce on a whole wheat baguette).

This was so good. My babysitter used to use cassava in her soups and I forgot how much I love it! The sandwich was quite hearty as well, and left my mouth burning (in a good way!).

We also hit up the In God We Trust sample sale, where I fell in love with this beret. I’ve never been a “beret person”, but this was too cute to pass up!

Caitlin and I parted ways, and I met my friend Levi to see the new Mel Gibson movie, Edge of Darkness. I really liked it! It reminded me a lot of Michael Clayton, with more blood. We snacked on gummies in the theater.

I had big plans to do some work while using the bike at the gym, but it was 7:15 by the time I got home and I was just ready to wind down the day. No biggie, but I really need to start being smarter about cross and strength training… I feel like I’ve taken a sort of lackadaisical approach to this half-marathon I’m supposedly training for. I have a 7 mile run scheduled for tomorrow but my knee still hurts from Thursday’s… if it gives me trouble in the morning, I’m just going to run myself over to the gym and get on that bike instead.

So, in place of gym tales, I present you with a tasty treat:

Sweet Potato Falafel Salad

I’ve been thinking of ways to recreated One Lucky Duck’s Falafel Salad at home without a dehydrator or pricey ingredients. I’d planned on making a sweet potato version of baked falafel with chickpeas, but lo and behold: no chickpeas in the pantry! I made do with black beans instead, and it turned out mighty fine if I do say so myself.

Sweet Potato “Falafel”

Inspired by this recipe

1 handful parsley or cilantro, chopped

Juice of 1/2 lemon

1 sweet potato baked or microwaved until fully cooked, mashed

1 clove garlic, crushed

1/2 cup cooked black beans

1/2 tsp ground coriander

salt

garnishes: paprika, sesame seeds

Preheat oven to 375. Mix first 6 ingredients together, gently mashing beans with a fork. Season with salt, to taste.

Coat baking sheet with cooking spray. Form balls out of 1 tbsp worth of sweet potato mixture and sprinkle with sesame seeds and paprika. Bake for 30 minutes, turning once.

Makes about 12 balls.

Tahini Sauce

1/2 cup sesame tahini

1/2 cup water

juice of 1/4 lemon

1 tbsp olive oil

1 tbsp agave nectar

salt to taste

Mix ingredients together in a bowl. Lick spoon.

Raw “Tabouli”

1 red bell pepper

1/3 head of cauliflower (about 2 handfuls)

1 handful parsley/cilantro

Pulse cauliflower in food processor until finely chopped. Pulse in red pepper. Pulse in parsley until the mixture resembles confetti.

Not a bad alternative, I’d say! My version is on the left… and doesn’t cost $17.

For dessert, I made strawberry banana soft serve with chocolate chips. However, I got a little impatient and didn’t wait for the fruit to fully freeze; it ended up being more of a smoothie!

It’s 10:30, but I really want to get some work done before I go to bed, so I’m going to shower, make the bed, and read 100 pages or so. Big plans for a Saturday night at home!

Thanks for all of your movie suggestions! Here’s what’s on the running list:

Lars and the Real Girl

Up In The Air

The Soloist

Away We Go (I just saw this… loved it!)

The September Issue

In The Loop

Inglourious Basterds

I watch a lot of movies, so keep those suggestions coming!

Whew, this day has been long! Still going strong, though

I knew I was going to have to work from home after leaving the office at the end of the day, so I woke up at 5:45 to get my 6 mile training run in. Somehow, even though I’d laid out all of my clothes the night before, I didn’t end up leaving the house until 6:15! This was partly because my heart rate monitor wasn’t working and I was waiting for it to kick in… I think this weekend I will cave and finally pick up a Garmin. Coincidentally, my former boss just e-mailed me to tell me he’s fallen in love with the Garmin he got for the holidays!

Before I headed out, I fueled up with a mini Clif bar.

I haven’t wanted to run early in the morning because I was concerned about safety; it’s dark when I wake up and my route takes me through the park. This morning I stayed in populated areas, wore my neon reflective running jacket, and strapped on my RoadID. By the time I was halfway through my run the sun had risen and it was starting to snow! There is something immensely satisfying and calming in being out and about while people are just waking up and starting their day.

During the last few blocks I started getting pain in my right knee (what I think I can now safely refer to as “Runner’s Knee”… probably no meniscus damage) so I had to take a few walking breaks. I ended up running through most of the pain, though, so I wouldn’t be late to work! It felt great to have 6 miles under my belt before the day even started, and not have to crank it out on the treadmill later on.

I didn’t have a whole lot of time to eat breakfast, but I managed to have a nice, filling bowl of oatmeal.

1/2 cup oats cooked with 1/2 cup water

1 tsp chia seeds

Gala apple, microwaved with cinnamon for 90 seconds

1 tbsp almond butter

stevia

The snow was really coming down while I walked to work.

Snacked on an orange at work…

My mom met me for lunch at the Atrium, a Greek cafe in the Onassis Towers in Midtown.

I was ravenous when we sat down, and ordered just what I was craving: spanikopita (spinach and phylo pie) with Greek salad.

No scrap was left behind!

I was still hungry when I got back to the office… must have been that run! I tore into the Forze bars I won from a contest Melissa hosted…

My sweet tooth demanded Chocolate Decadence.

I really liked this! It tastes just like candy… must be a new trend in energy bars! The texture reminded me of a delicious European cookie, crunchy and sweet. It had an almost Nutella-like taste… must be the roasted almonds used in the bar! Can’t wait to try the other flavors.

I stayed at work a little late to maximize what I did in the office so I would have less to do at home. An apple held me over until I got home, although honestly, I was still really hungry after that bar! I don’t know what’s going on with my appetite…

I was excited to use my new toy to make dinner.

Finally got a spiralizer! I’ve actually had this for a couple weeks, but haven’t had time to give it a test run. I had a little trouble with it at first (which may or may not have resulted in a slew of profane mutterings), but finally my zucchini was given new life.

I should have just made a really simple sauce for this, but since I’ll be out for dinner tomorrow I wanted to use up the leftovers in the fridge. And when I say “leftovers,” I mean all of the leftovers. Oh lordy.

Yep, that would be grape tomatoes, broccoli, teriyaki-glazed tofu, mushrooms and broccoli pesto. And if that wasn’t enough?

I dipped it in crab soup! This was a definite “What was she thinking?!” moment. It’s never a good sign when you already have a fiber belly from nibbling on veggies before you even begin your dinner. Oofdah. But, after I gave myself some time to spend some horizontal time on the couch, I was ready to devour a homemade peanut butter cup. It was so good that I almost made another one, but I was all out of the dark chocolate I like so I just had an orange.

Back to work I go… it’s going to be a late night, and an early morning. I’m very behind in the Reader… I guess I’ll just have to catch up with ya over the weekend.

Have a great night! Bonne nuit

Happy almost weekend! Thursday just kind of snuck up on us, yeah? And, from your responses about stress, it seems like we could all use a little weekend rejuvenation. How do you plan to relax on your days off?

I did not, as planned, practice yoga last night. Instead I caught up with my little red-headed, snuggling in bed with the phone. It felt just like high school again! Some friendships will always stay strong. I set my alarm for 6:30 and got up to do a 20 minute hip opening flow on Yoga Download. I was still pretty tired so I kept my eyes shut the whole time; it felt amazing! My hips have been really tight from sitting in a chair all day.

Breakfast was a big bowl of oatmeal, eaten in bed while watching Grey’s Anatomy.

1/2 cup oats made with 1/2 cup water

warmed frozen berries

1 banana

1 tsp chia seeds

1 scoop almond butter

stevia

cinnamon

After I finished eating, I peeled back the covers and “slept” for another 10 minutes. It probably didn’t do anything to take away my drowsiness, but it was too comfy to resist.

I acted as courier and dropped a package off for my boss for someone in my neighborhood; I’d anticipated getting to work late as a result, but I arrived only 20 minutes later than usual! I love when the subways run on schedule. Running around seemed to stimulate my metabolism, so I snacked on an orange to soothe my hunger.

It worked… for about 30 minutes. Then to the snack drawer I went! I had a mini Chocolate Brownie Clif Bar.

Luckily lunch was filling.

Salad with kale, spinach, goji berries (soaked to plump!), carrots, grape tomatoes, feta, blush champagne vinaigrette

Moroccan Gazpacho

Fuji apple (saved to eat as an afternoon snack)

I was scheduled to do speedwork at the gym today, and I’ll be honest: I really didn’t think I was going to make it. As I’ve mentioned, it’s incredibly difficult for me to stay focused and motivated while on the treadmill, and even if I cover the screen with a towel, I keep peeking to see how much time has gone by. Tedius! But, I made it through the session and logged my miles. Speedwork is great because it forces you to keep changing things up!

Total time: 48 minutes

Celebrate the tiny victories!

When I got home, I went straight to the kitchen to start making dinner. The upside of your boyfriend being gone a lot of the time? No one cares if you’re a sweaty mess! Unfortunately, no one was here to eat this dinner with me.

I’ve gotten several e-mails asking me about tempeh! How to eat it, does it need to be cooked, my favorite recipes, etc. Tempeh is one of my favorite proteins, but I didn’t even really start eating it until about a year ago! Now, I eat it all the time: in salads…

In sandwiches…

Or just plain grilled!

But what is tempeh, exactly?

Tempeh is made from fermented soybeans and is often produced with other grains.

It has a firm texture and a slightly bitter taste; if the taste bothers you (I don’t mind it), you can always boil it in water for a few minutes. Boiling it allows it to more easily absorb the flavors of whatever sauce you choose to marinate or top it with, if any.

It’s a protein powerhouse! One serving of tempeh can have as much as 18g of protein (not to mention it’s free of cholesterol).

How I eat tempeh

Like tofu, I often just dice it up and eat it as is on top of a salad. I realize this isn’t for everyone and I didn’t love it at first, but now it’s one of my favorite proteins! It technically is already “cooked”, so you don’t have to “do” anything to it. Again, the taste can be a little strong, but I find a good salad dressing with a good mix of sweet and spicy components really compliments this bitterness.

Grill it! Simmer the tempeh for about 10 minutes, then marinate in your sauce of choice (Gliding Calm’s tofu rub works wonderfully) for anywhere from 20 minute to 1 hour, depending how much time you have. Then plop your tempeh on the grill (or Geoge Foreman, if you’re an apartment dweller like me) and cook until grill marks form. Switch sides.

Toss it in a stir fry or curry!

Coconut Tempeh Curry

Inspired by this recipe.

1 small sweet potato

2 small yukon gold potatoes, or other potato of choice, peeled and diced

1-1/2 t salt

2 T coconut oil

1 small yellow onion, peeled and chopped

8 oz tempeh, diced

1/4 t turmeric

1 t allspice

1/2 t garam masala

1/2 t ground ginger

1/2 t cayenne

1-15 oz can crushed tomatoes in thick purée

2 handfuls spinach

2 T plain nonfat yogurt

optional garnishes: cilantro, mint, or parsley (whatever you have on hand), shredded coconut, agave nectar

Bring a pot of water to boil. Place potatoes in steamer basket and sprinkle with 1 tsp salt; steam until they are tender, 20-30 minutes. The sweet potatoes may take a shorter length of time; if this happens, remove them from the basket when they are done and continue to cook the yellow potatoes.

Meanwhile, heat coconut oil in a large skillet until it shimmers. Add onion and sauté over low 5 minutes, or until tender. Add spices. Stir. Add tomatoes and remaining 1/2 tsp salt. Stir in yogurt until mixed well. Add tempeh and cook 5 minutes, stirring occasionally. Add spinach and cover about 5 minutes or until leaves begin to wilt. Once potatoes finish cooking, add them to the skillet and remove from heat, stirring to combine.

Serve, garnishing with agave nectar, cilantro (or other fresh herb), and shredded coconut.

Serves 4.

I enjoyed my curry with Turkish rice. It was fabulous! I definitely recommend a light drizzle of agave or maple syrup… it really brings out the flavor.

Do you like tempeh? What is your favorite way to eat it?

Dinner was enjoyed with a glass of “3 Buck Chuck” from Trader Joe’s. It was delicious! I would have had no idea that it only cost three dollars. I’m glad I know it’s good… I’ll have to stock the wine rack with it!

I had last of the Easy Chocolate Mousse for dessert. It may have been even better today, three days after I made it! I sprinkled my bowl (AKA Tupperware container ) with cinnamon and chocolate chips.

While I ate, I watched Away We Go. I loved it! It might make my top 10 list.

Now, it is far past my bedtime. Have a great night! I’m going to be out tomorrow night, so if I don’t “see” you tomorrow, have a lovely weekend

Evening! This post is going to be so quick, it’ll be over before it’s done. It’s 11:45 and I’ve been home less than an hour, and am only now climbing into bed. Old biddy strikes again!

This morning I woke up a few minutes earlier than usual, spandex-ed myself in hyperspeed, and tore out of the house for a 2 mile run before work. I didn’t even remember my watch (or RoadID), but I know I was fast today. When I got back, I kept the fast track going and got all ready with enough time to enjoy breakfast without leaving for work a minute late than usual.

Breakfast was a big bowl of yogurt, granola, banana + cinnamon.

Mid-morning, I snacked on a navel orange.

Lunch was over a pound of chili and cornbread. I was full for the rest of the afternoon!

My new water container was quite a hit today… it stands up all by itself, and holds 16 oz of liquid, more than the average bottle!

Sadly, while at work I missed The Upwelling‘s interview on Fearless Radio… did anyone happen to catch it?

When the workday ended, I met my parents at Turkish Cuisine in Hell’s Kitchen for an early pre-theater dinner. We toasted Tuesday; my mom had a glass of Chardonnay while I had Pinot Grigio.

Before my dad arrived at the restaurant, my mom and I split an order of Zucchini Cakes with tzatziki sauce. These were so good. Dr. Praeger, you’ve got nothing on these little fellas! We raved about them so much that my dad had to order them for himself.

We ate it with warm pita. I wasn’t too hungry for it at the time, but don’t worry… the remaining pieces came home with me!

For my entrée, I ordered grilled salmon with salad. The salad dressing was fantastic; it had all kinds of spices in it, like cumin and coriander! I’ll have to try this. I ate all of the salad but filled up about halfway through the salmon. Dads are good at times like these.

Before the play, I popped across the street to The Lite Choice for a small cup of almond butter frozen yogurt with chocolate chips.

The play we saw was the third and final in the Orphans Home Cycle series. It was my favorite of the three, and I was sad to see it end! I even stayed awake for all three acts.

I’m off to dreamland. Have a fabulous Wednesday!

This morning started a little rockily… I just could not get myself out of bed! I set my alarm early with high hopes of practicing yoga, but soon I had maxed out my Snooze-es and had to rush to get ready. Not good. I clearly haven’t found my 9-to-5 groove yet; I know there are so many of you out there who get to bed early, wake up and go to the gym before work, and get a lot done during the day itself. What are your secrets? I already make my lunch the night before (which takes a lot longer than it probably should), I lay out my clothes… I really haven’t been able to find the time (or the energy) to exercise regularly, and I’m suffering both physically and mentally. What are your secrets for establishing a good schedule?

I had a quick breakfast of granola with a banana and skim milk.

Mid-morning I snacked on an apple; I saved my pumpkin yogurt (Stonyfield fat free plain yogurt + pumpkin puree + cinnamon) for after lunch.

I packed a stellar salad for lunch: mixed greens with 1/4 avocado, 1 orange, grape tomatoes, sesame tofu, almonds, and toasted seaweed.

Second try using a spice jar to carry my citrus salad dressing (leftover from the sushi bowl)… this time I just packed it right into my salad container. No spillage!

After work, I met my friend Lisa for dinner at Blockheads, a Mexican(ish) restaurant that has several locations around the city. Sorry about the dim lighting!

We started with festive drinks: she ordered their special, a frozen margarita with a tipped Corono. It was surprisingly tasty! I stuck to Negro Modelo, one of my favorite beers.

Blockheads steams their burritos (as opposed to frying the tortilla) and can make anything vegetarian. They are also very accommodating about substitutions. I ordered a vegetable burrito in a whole wheat tortilla with brown rice, sautéed veggies, and plenty of hot sauce! I asked for tofu sour cream because I’d never tried it… I really liked it! I actually couldn’t tell whether it was real sour cream or not… I guess I eat a lot of ‘fu. Lisa confirmed it was definitely not dairy.

Can you believe this was a mini burrito?! I was quite full when I finished! It was delicious… I always forget how easy these types of dinners are to make at home.

When I got home, I had a Godiva chocolate-caramel-peanut cluster leftover from Christmas. (A chocolate caramel sneaked out of the camera’s eye.)

My gym bag is packed, and I’m sleeping in my clothes to make sure I go to the gym tomorrow. My alarm is set for 6, and if I hustle, I’ll have enough time to get a decent workout in, shower, get to work on time, and not have to worry about it for the rest of the day. To make that happen, my plan is to do a quick Lunar Flow and be in bed by 10:30. It can be done!

Whew, today was long! For some reason I couldn’t sleep at all last night. I woke up about five times, and about an hour before my alarm was supposed to go off (at 6:30), I woke up for good. Humbug! At least the Reader and I were able to spend some quality time together, and I have somewhat of an inkling of what you’ve all been up to.

This morning I was all set to make a yogurt mess for breakfast, but alas… the yogurt had gone funk! So I used the closest white and creamy substitute: silken tofu.

I loaded up a batch of Sarah‘s pumpkin cakes…

This belly-bursting bad boy had:

pumpkin puree

eggwhites

1/2 banana

Trader Joe’s flaxy PB

Stonewall Kitchen lemon curd

mashed silken tofu

pumpkin butter

nutmeg

cinnamon

It was delicious, but almost a little too filling. It did hold me over until 11, though, when I snacked on an apple.

Work was busybusy, but I had time to eat lunch with a friend. I packed an S&M-inspired salad made with mixed greens, 1/2 avocado, grape tomatoes, European-style bread, dulse, sesame seeds, and homemade lemon juice/rice vinegar/mustard/oil vinaigrette.

I also had a plain Chobani.

I snacked on an orange later in the afternoon… it made my office smell really nice for the rest of the day!

Although I’d brought my gym bag, I almost convinced myself to just carry it on home again without working out. I was exhausted, it was cold, I wanted to get home and see Ari before he leaves for tour tomorrow… I thought of pretty much every excuse, but finally decided that I would do something nice for myself and give myself a little release. I have so much more energy when I’m training for a race (and supposedly I’m training for a 1/2 marathon in March and the NYC marathon in November); it helps me sleep; it gives me endorphines… the positives obviously outweighed the negatives.

After I made my decision, I didn’t even think about it: I went to the gym, got on the treadmill and ran 3.0 miles between 5.8- 8.0 mph. (I really don’t like running on the treadmill, and interval courses make the time go by a little faster).I did compromise, however, and put my work clothes back on after my run without showering! Naughty, I know, but I just wanted to go home and be in my own shower.

It was almost 8 when I got home, so i made a quick dinner: leftover Tomatoey Spiced Chickpeas and Harvest Grains…

… topped with a poached egg and Emeril’s Original Essence.

I loved this one-bowl meal! It was quick, comforting, and perfect for a chilly night. Desert was also low-maintenance, since I made it last night!

Yep, that would be Averie’s Raw Vegan Chocolate Peanut Butter Cup.

I made mine a little differently; for the filling, I used equal proportions of peanut butter and almond butter, nooch, a drop of agave and a sprinkle of sea salt.

Ari bit his first, but I wanted to try out my fancy new knife.

DELICIOUS! We both thought they tasted just like Reese’s. Well done, Averie! Ari’s not a huge dark chocolate fan so next time I’ll make his with milk; for my own, I used Pure Dark‘s 57% chocolate and it was absolutely heavenly. This could be dangerous now that I know how easy they are to make!

Which recipe are you fawning over? Do share!

Thanks to Miss Blue for giving me the Happy 101 award!

10 things that make me happy:

1. My family

4. Racing!

5. Date nights

9. And now that the photographic evidence has been, congratulate Joe & Carlye! I’m so excited!!! These two are some of my favorite people in the whole world, and I couldn’t be happier for them.

Thanks for the award! What’s been making you happy lately?

I’m off to make lunch for tomorrow and then hit the sack. I’m beat! Have a great night

Good evening and happy Sunday! How was your weekend? I just got back from Westbrook, Connecticut, where The Upwelling’s former tour manager got married. The boys were part of the wedding party so they came back from tour and we all went together.

While this is going to be more of a “greatest hits” post, I want to share a new dressing with you: coconut mint.

Coconut Mint Dressing

1/2 tsp shredded unsweetened coconut

1 small handful fresh mint, chopped

juice of 1/2 lemon

2 tbsp rice vinegar

1 tbsp olive oil

“Muddle” the mint, coconut and lemon together before adding the rest of the juices. This releases the flavors and lets them really pop! I drizzled the dressing over a tempeh/sweet potato/apple/feta salad…

… but it would make a great marinade for fish, shrimp, or tofu as well. I’m getting so much mileage out of this bunch of mint!

In the car, I had the healthiest and most delicious “candy bar” imaginable: dried fruit stuffed with roasted almonds and bittersweet chocolate chips. These are so good.

Ari bought me a slightly more processed version, but still a favorite nonetheless. There’s no wrong way to eat a Reese’s.

When we got to the hotel, I took advantage of the time the groomsmen spent rehearsing to go to the gym. I ran 3.1 miles (5K), walked another .4, and stretched. As the Gina always says, no one wants to miss out on the fun, so I try to plan timely activities (like workouts and… ahem… the time I spend getting ready to go out) while everyone else is either sleeping or doing something else.

The bride and groom are both Jewish, and because the rehearsal dinner fell on Friday, we had a traditional Shabbat dinner. The challah abounded! Somehow I ended up with three pieces of bread on my plate, but Josh and Ari picked at most of it.

The entrée choices were Vegetable Risotto with Arugula Pesto or Cappelini Rustica; I wasn’t sure which (if any) option was vegetarian, but figured the risotto was a safer bet. They both turned out to be meat free, and I loved the risotto! It was very rich, though, so I only ate about half of it. And the flower. Which I’m pretty sure wasn’t of the edible variety. Whoops!

Strawberry sorbet for dessert…

… and a fun-size Cookies ‘n Cream Hershey’s bar. This is one of those weird LVP-isms; I really don’t like white chocolate, but a couple times a year I get cravings that can only be quenched by this particular bar. The bride and groom must have known this when they stuffed it in our goodie bag!

Also in the bag were these personalized M&Ms; they had the wedding date, photo, names and words printed on them. Very creative!

We may or may not have gone to a casino late that night (this girl’s first time) to further my blackjack education and lose $5 on the slots. It was a strange, strange place, I tell ya! It was HUGE, and the lights are pretty dim and there aren’t any windows so there’s really no way to tell if it’s 4PM or 4AM. Drinks are free, and you can walk everywhere with them! People also smoked inside; it’s strange that a few years ago that was the norm everywhere. The stores were opened past midnight, so Ari and I split a Godiva pumpkin truffle.

We got to the hotel really late, and with the exception of Stew, all slept in past noon. We woke up famished, so we set out in search of brunch. Where did our journey take us, you ask? To the Grand Slam at Denny’s. Yes, you read that correctly.

The Grand Slam is a magical deal that lets you pick four breakfast items for only $5.99. For an extra $.49 per item, you can choose from three “premium selections” like yogurt, granola or fruit. We were all very excited.

We placed our orders, then set to work. When was the last time you colored at an eatery?

Ari ordered a festive pot of peppermint tea (which came with an unsolicited squirt of peppermint syrup):

I drank my coffee black.

The food arrived: I ordered (dry) whole wheat pancakes, egg whites, oatmeal and a cup of fruit.

I ate all the fruit and eggs (which were buttery but delicious), half of the pancakes and left all of the oatmeal. Even had I not been an oatmeal snob, I don’t think anything else would have fit in my stomach.

Brunch understandably held me right up through the wedding, and left me with more than enough time to shower, dress (Hollywood Tape did not come through for me as I’d hoped)…

… and watch three hours worth of Married With Children episodes.

The ceremony was beautiful, and while it was traditional in some respects, there were some nice personal touches: the groomsmen walked down the aisle to Semi-Charmed Life, the bridesmaids to Bittersweet Symphony, the bride to Do You Realize?, all performed by a string quartet. There may have been some tears in my corner.

At the dinner reception, the guest seated to my right taught me a helpful trick to remembering where your bread and drinks go in relation to your place setting.

Make the “OK” signal with both of your hands. Your left forms a lower-case “B” (for bread), and the right forms a “D” (for drink). How handy!

Speaking of bread, this roll was particularly tasty…

… and where drinks are concerned, I stuck to vodka- sodas.

While we were eating our smoked mozzarella and pesto ravioli appetizer, Josh and Ari played an acoustic version of A-Ha’s “Take On Me” for the bride and groom’s first dance. This was really good, but I let it get cold and only had a few bites.

I didn’t leave a scrap of arugula salad with toasted walnuts, shaved parmesan, and mandarin oranges, however. The couple next to me thought it was too big, but I would have gladly alleviated them of their portion! This was my favorite part of the meal.

The entree was grilled salmon with mashed potatoes, green beans and carrots. It was good, but I was pretty full by the time this came around and only ate about half of the fish (but all of the veggies!) and gave my taters to Ari.

We danced around on the floor for a bit, but really just enjoyed being with friends and each other. The band is booked through February with a short break in December, so it was nice to be able to spend the weekend together.

The cake was sliced and brought around: chocolate with strawberry and vanilla buttercream. I ate about half, then went back out to tear up the rug.

Our eyelids started drooping around midnight, and we were asleep by 1. We had to hustle in the morning to get back to the city, but we had enough time to have a nice brunch with the wedding party. I had half of a sesame bagel with cream cheese, eggs, fruit (plus some unpictured grapes), and half a slice of French toast. Coffee abounded, as usual.

It was such a nice weekend. I really cannot express how grateful I am to have been able to spend a weekend- more like a mini-vacation, actually- with people I love. The next few days will be pretty busy… The Upwelling goes back on tour tomorrow, and I have a couple interviews for potential jobs. My healthy habits have been slacking a bit, but one month from this morning (Sunday, December 13) is my 15K race. I’ve updated my training plan, and will stick to it… I went on a 4.5 mile run late this afternoon.

Regular posting will resume tomorrow. I hope you had a fabulous weekend, and congratulations to the newlyweds!

Good morning and happy Thursday! It’s going to be a good day, I can just tell How has your week been going? What was the most surprising or thing that brought you the most happiness?

The rolled oats stash still hasn’t been replenished, and I haven’t gotten a new batch of steel-cut whipped up yet, so I had to think a little about what I wanted for breakfast yesterday. I opened the fridge, pulled out the almond butter, and…

Oh no! Take me to a Trader Joe’s and make no stops on the way! Well, I don’t know when I’m actually going to get to TJ’s, so I tried to leave a little nut butter on the sides to make oats-in-a-jar when the time is right. That wasn’t enough for breakfast, though, so I pulled out a sample of Sunbutter that I’ve had lying around for a few months.

When squeezed out, it looks likes this:

One Ezekiel English muffin half had almond butter and TJ’s pumpkin butter, the other Sunbutter and raspberry jam.

The Sunbutter definitely tastes like sunflower seeds. I think I still prefer almond and peanut butters, but this was a nice change. I don’t know if I would buy a whole jar of this, but if I had more travel packets I would use them for on-the-go snacking.

I took all of my new vitamins with breakfast (except the melatonin, which is only for when I really can’t sleep at night).

Unfortunately I didn’t read the label carefully when I was at the store and bought the powdered Ester-C (which aids iron absorption) instead of the capsule, which means I have to drink it. And let me tell you, this is one of the worst tastes I’ve ever known.

I worked and researched most of the morning, and broke for lunch around noon before I had to leave for physical therapy. I made a big salad through my session:

In the mix:

1/2 head of romaine

grape tomatoes

1 orange

leftover roasted Brussels sprouts

julienned carrots

Trader Joe’s Vegetable Masala Burger

Trader Joe’s Three Layer Hummus

Cayenne pepper-spiked agave- cinnamon dressing

It was a big salad! I almost couldn’t finish it, but I’m not usually one to leave greens on my plate. I went into the city to get my H1N1 flu shot (seasonal flu shot has already sold out almost everywhere), then went across town to my physical therapy appointment. I was early, so I popped into Tasti to get a treat and read a little. I got a small cup of chocolate raspberry mousse:

My appointment went really well. I really like my therapist; she’s a former marathoner and current Half-Iron Man-er, and just seems to know what she’s doing (a welcome change). She worked with me for over an hour, and came to the same conclusion as the first PT: my muscles aren’t strong enough to support the kind of running I’m doing. If I want to be an endurance athlete and compete in races, my quads, glutes, calves, etc. have to be really strong. I need to work on strength moves, increasing my flexibility (stretching, rolling out with the foam roller) and core moves every day. My knees do point in (the first PT diagnosed me with “squinting patellae”) but strengthening my quadraceps will force them back into place. And the even better news? I can start back up again (slowly) in the next few days, and can run the 15K in December!!!

She asked if I’d be okay with running on the treadmill for a few minutes to analyze my gait, and you should have seen the way my eyes lit up. Running? Now? Even though I hate the treadmill, I felt like I was flying. I do pronate, and my hips do come out and come forward when they shouldn’t (which has caused tightness in my IT band that I didn’t even know about until she worked it through with her fingers), but it can all be corrected. Woohoo!!!! I’m going back today; she wants to see me twice a week for a month or so. Thank the lordy. If I had a job right now, I wouldn’t have this kind of flexibility!

On the ride home, I was hungry again so I snacked on a Trek Mix bar.

When I got home, I did some more searching and researching, and started to think about dinner. It was going to take a couple hours to make, so when Ari ordered sushi for himself and Josh I politely requested my very own sweet potato roll.

Seriously, I don’t know how I didn’t know about these until now. What would I do without Ilana and Ari? Amazing!

My own dinner was based on this recipe. When I went to the produce store, I found a squash I’d never seen before. It started with a G… Galaban? Galabaga? When I looked it up on this handy squash glossary, however, I discovered that it was one of the most popular squashes with bloggers: the kobucha!

These were sold already halved; each half was about 70 cents.

I changed the recipe a little bit; I halved the “pudding” recipe, only used egg whites (I don’t have whole eggs), didn’t use anise, and used red onions instead of scallions.

It took a long time to cook (about an hour and a half), but the results were worth it.

I ate one half of the squash and saved the rest for another day. It was really satisfying, and so good that I ended up eating the skin, too! Oops.

For dessert, I smeared a pumpkin bar with peanut butter. It wasn’t worth it: still tasted bad. Into the trash they go!

Ari and I took Carlye‘s suggestion and watched the pilot of Psych. We thought there would be a few more episodes on the first disc, but it was just the one! So off I go to the mailbox… must make sure there’s a Halloween movie here for Saturday!

Have a great day
