Evening! How are you doing on this fine Thursday? Today has been a strange day and I’ve felt a little out of sorts for most of it! Not in a bad way, just… different.

This morning I woke up bright and early, eyes-a-burnin’, ready to work. I made a pot of coffee (and drank it black, which is unusual for home-brew… I usually only drink it straight when I’m out) and got breakfast ready. It was nutty, fruity, and choco-coconutty.

In the bowl:

1/2 cup oats

1/2 cup water

frozen berries

leftover un-balled chocolate snowball dust

flaxy PB

I worked all morning, got ‘er done, and before I knew it, it was almost time to go to physical therapy. But what about lunch?! I made a very quick salad, and ate it even faster.

In the mix:

baby spinach

escarole

grape tomatoes

1/2 Gala apple

celery

Morningstar Farms Pizza Lovers Burger

sesame vinaigrette

When I left the house it had started raining, and kept on for the rest of the day. I got to the subway and they were doing track work on my line again, so I had to call my PT and push the appointment back. Again. They must hate me! But I was able to get an appointment at 3:30 instead of 2, even though I probably would have made it on time. I was scheduled to run five miles today; it would have been too dark by the time my appointment was over and I got back home, but I didn’t have enough time to go to the gym first. Quite a conundrum! So I decided to push the run back until tomorrow, but it’s supposed to rain again so I might just have to tough it out and get wet. I’m going to have to figure this out soon, though, because it’s getting darker earlier and earlier now (4:30) and I don’t think it’s a good idea to run in the park at night by myself.

While I was weighing each option, I took shelter from the rain in the subway and snacked on a cup of Strawberry Oikos.

My appointment went well; I did a lot of leg work on the pilates machine which I have a feeling I’ll feel tomorrow! Even though I had recently eaten, my stomach was grumbling the whole time and as soon as I walked out of the office I dug into my purse and found an Apple Pie Larabar. Never underestimate the importance of the “emergency snack.”

The bar held me over for a while, but when I got home at 5:30, I was already thinking about dinner again. I think it must be the darkness outside that’s throwing off my internal clock. I looked in the pantry, the fridge, and the hanging produce basket to see what I could see.

Brandi‘s pasta-stuffed squash inspired me, so I decided to combine two of my favorites: roasted veggies and loaded macaroni and cheese. I cut an acorn squash in half and rubbed each with olive oil, salt, pepper and cayenne; then I roasted them at 450˚ for about 30 minutes.

Meanwhile, I sipped on a glass of Rosemount Sauvignon Blanc. Sauvignon Blanc is one of my favorite white wines, and from my experience, unless the wine is really cheap (and you remember buying it at the liquor store near your college’s campus), it’s a pretty safe bet.

Rosemount is an Australian-based vineyard. In traditional French Sauvignon Blanc, Sauvignon Blanc and Sémillon grapes are often blended together; Sémillon come from Bordeaux and Southwest France, whereas Sauvignon Blanc can come from Bordeaux, the Loire Valley, southwestern France and Languedoc.(FWFD 19). “Sauvignon Blanc is the dominant grape variety (60 to 100 percent) in most of Bordeaux’s dry white wines, whereas Sémillon dominates the sweeter white wines…. The Sauvignon Blanc part of the wine offers immediate charm; it’s crisp, lively, herbaceous, light0bodied, and develops early” (FWFD 70). Rosemount’s version is also a Sémillon blend.

When the squash was just about done, I made a bowl of macaroni and cheese mixed with tuna, nutritional yeast and chili flakes.

I packed the mixture into the squash halves and baked them for 2 minutes longer.

These were so good! I loved the sweetness of the squash, the saltiness of the tuna and the cheesiness of the pasta noodles. I know I’ve been getting a little crazy with my mac ‘n cheese lately, but it’s so much better that way

I was craving ice cream for dessert, so I started with a Pure Dark Chipotle/ semi-sweet/bittersweet chocolate sauce. A few drops of water, 30 seconds in the microwave, and a quick stir gives you melty freshness that’s far better than Hershey’s.

I added a little Brown Sugar ice cream, and had a nice lil sundae for myself.

I needed to take the night off from thinking about (un)employment, so I climbed in bed with my dessert and popped Wristcutters: A Love Story into the DVD player. It was pretty cute, in a twisted sort of way. I’m going to try to get a quick yoga sesh in and hit the sack. Bed before 10? You betcha!

Honesty is the best policy, and I’ve got to admit that there’s about a 70% chance that my eyes will close and this post will go up tomorrow morning instead. Daylight Savings + changing time zones must be catching up with me!

Today was an absolutely lovely day. I woke up earlyish and met my grandparents downstairs in the breakfast nook.

I had an English muffin with peanut butter, cinnamon and 1/2 banana and a bowl of plain yogurt with fresh raspberries and blueberries.

As I was assembling my breakfast, my grandfather remarked that there were no redeeming qualities to peanut butter. Of course, I loved having the opportunity to launch into my spiel about protein, healthy fats, folic, and plain ole great taste!

After breakfast, I gave myself a little time to digest before hopping on the treadmill and pounding out 2 miles. Luckily, Saved By The Bell was on and I didn’t get bored…

Source

Nothing like a little Zach Morris to keep your heart rate up! (Although, he’s clearly underage in this photo, and that makes me feel a little weird. A little.)

On our way out the door to run some errands, my Granny fed me a carrot and told me about her new method for fast-cooking veggies: steam them in the microwave! Make a pouch out of waxed paper, moisten with a few drops of water, fill with veggies, and nuke for 3 minutes or until cooked.

Is this the end of rebel carrots? Maybe, as long as the wax doesn’t break down and seep into the vegetables.

Everyone seemed to still be full from last night’s dinner, so lunch was kind of informal. I grabbed a Pink Lady apple on the way out the door…

… and got a Grande Skim Mocha at Starbucks. Mocha?! Who am I and what have I done with LVP?

I must have been really thrown off my my choice, because I immediately spilled it all over my purse. I’m a bit of a klutz!

An hour or so later, I had my first Nature’s Path product. I’ve seen these Optimum bars all over the blogs, so I grabbed this when I spotted it on sale.

It was good… the taste and texture reminded me a little of a Luna Cookie.

This is my second lunch in a row that’s been supplemented by energy bars. I’m not proud of this, but it happens when you travel.

Granny and I took a special trip to the grocery store to look for Celestial Seasonings’ Sugar Cookie Sleighride tea that y’all seem to love… we searched in vein, but I did find this Sweet Coconut Thai Chai tea that will hopefully taste like the coconut chai tea I love.

I also convinced my grandmother that she needs some POM in her life.

We had an early dinner at Spoonriver, one of my favorite restaurants in Minneapolis. I was really happy when our waitress asked for my ID when I ordered a Moroccan Mojito (mint, lime, rum, cardamom and rose water). I haven’t been carded in a few months, but this must mean my wrinkle is getting smaller! It’s funny… two years ago I would not have enjoyed being IDed at all.

I had a slice of whole wheat potato bread…

… and my grandmother and I both ordered the Broiled Salmon Okisuki in a savory Japanese Ginger Broth with Fresh Udon Noodles. I think Grandpa was jealous… I am definitely going to recreate this at home.

For dessert, we all split a slice of butternut squash-carrot cake with pumpkin-cream cheese frosting. Oh, mama!

After dinner, we went next door to the Guthrie theater to see an evening showing of Faith Healer. It was a really, really powerful play told entirely in monologues. I loved it.

When we got home, I took a deep breath of fresh air for Averie on the way up to bed.

If it weren’t so late, I’d ask Granny to tuck me into bed. I used to visit them every summer when I was younger, and until I was 11 or 12 or so, my grandmother would put me to bed with this nursery rhyme. I have such nice memories of sleeping in this room (when I first started visiting on my own, the floor was covered in a thick pink shag carpet) and being here. Although I went to college in Minnesota as well and visited a lot, my memories from that time are sort of separated from the time I spent here as a kid. Do you have any memories of nighttime rituals? If you‘re a parent, how do you put your kids to bed?

Around the blogs: Starting Monday, I am going to do my best to follow Angharad and Holly‘s lead and practice yoga thrice a week. I am also going to take meal-prepping more seriously, so I don’t stand in front of the fridge with the door open for minutes on end, willing the empty produce drawer to magically refill itself.

Wish Jungwha a happy blogiversary and win big!

Have a great night!

Is it wrong that it’s only 9:15 and I’m considering going to sleep as soon as I Love You, Beth Cooper (one of the silliest movies I’ve seen) is over? When sleep calls, I’m not one to ignore it!

Yesterday I got up early, packed up, had a quick breakfast and headed out. I toasted an Ezekiel English muffin and topped one half with a light Babybell cheese and egg whites and the other with peanut butter and raspberry jam. Fun fact: I lost my first tooth in a Babybel cheese!

I met my mom at our voting station to do my duty, then took care of some paperwork so my visa will be in order for Russia. I still can’t believe I’ll be there in less than a month! I also can’t believe the high will be 9˚ Fahrenheit. Brr!

Mama brought me a Jonagold to help me sign and date papers for the embassy. It was hard work!

When that was all taken care of, we set off in search of a great coat for an even better price. We found a good one at The North Face, but are going to keep checking around some more. Who makes your warmest coat?

We broke for lunch at Le Pain Quotidien. Because it’s a chain restaurant, they’re required to post the calories in all of their dishes. Their meals are really healthy, but it’s nice to be reminded of what’s inside your food!

My mom and I split the seasonal appetizer special: red quinoa with roasted beets and butternut squash.

I only had a couple bites because my entrée was huge! I ordered the shrimp salad with avocado, mango, and salsa. It was mighty fine… I ate every scrap.

We were full, but not too full for dessert We set off in search of frozen yogurt, and bumped into Ada on the way! To celebrate her 19th birthday, she’d just gone on a 13 mile run!
Ada had also just come from The Lite Choice, and told us the flavors were worth the trip. I got a small cup with Oreos ‘N Cream and Espresso Truffle.

After our treat, I left my mom and went across town for physical therapy. I have another appointment tomorrow to see how my therapist thinks I’m doing after my fifteen minutes on the treadmill… I’m very optimistic! In the past month, I have been to four different branches of my gym. The one I went to yesterday was by far the biggest, but it was also the most confusing! I literally got lost in the locker room. Twice. What do you like most about your gym?

When I got home Ari had some errands to run so I tagged along. I brought an apple with cinnamon for the ride, and for the second time in a row, Ari ate half of it! I think I’m rubbing off on him

Since The Upwelling is going to be on the road for the next month, Ari and I decided to go out to dinner to spend a little time together to get away the craziness of packing. He had a few things to do before we could go, and my stomach couldn’t wait. I ripped into Josh’s bag of barbecue-flavored pretzel thins… I’m not a huge fan of bbq-flavored chips, but I could have eaten the whole bag. I don’t know what it is about flat pretzels, but they really get me going!

Ari was craving chicken parm so we went to the diner for dinner. Now, while I love going there for eggs, something feels a little off about eating there for a meal other than breakfast. It turns into a more upscale restaurant, but I’m just not a fan of their post-brunch fare. We still had a very nice time.

All dinner entrées come with soup or salad, and I went with salad. Hello, onions! (Sorry, boyfriend.)

Nibble at the dinner roll… starting to feel those pretzels!

For my main, I ordered the pecan-crusted ahi tuna in a balsamic-fig reduction with Mediterranean orzo and cherry tomatoes. It was good, but very filling. Orzo is such a confusing (but delicious!) grain… it looks just like rice but I always forget it’s actually pasta! I also forget how much I like it. I’m going to see if I can find a whole wheat variety at the grocery store.

I ate about 2/3 of this and boxed the rest up.

For dessert I had a bowl of Ben & Jerry’s Everything But The… ice cream with a warmed up Edgie brownie. No one will ever accuse me of not knowing how to indulge!

Now that Ari’s gone for a little while, I’m going to be cooking a lot more and eating out a lot less. We like to eat home-cooked meals when he’s home, too, but we’re on such different schedules that it’s often hard to coordinate dinner. It’s a goal of mine to cook more frequently when we’re both around… I’m pretty sure that any dish with mushrooms in it is a safe bet

Hope you had a fabulous day. Bonne nuit

Good morning and happy Friday! Are everyone’s Halloween plans cemented? I’d love to hear what you’re all doing! Dressing up? Going to a party? Last year my roommate and I had a party, and even though I hopped around on crutches the whole time, it was a lot of fun! The year before was my first year having real trick-or-treaters, and it was so much fun! I lived on “Halloween Street,” and over 700 kids came by that night. We had to make multiple trips to the grocery store, and even gave away some of our own treats! I grew up living in an apartment, and while some kids do go trick-or-treating in apartment buildings (I used to go to a really big building, and always came home with a lot of candy!), ours never had too many kids so no one came by.

Yesterday when I woke up I was craving cereal. Cold and filling, I made a big bowl with Kashi GoLean, Smart Start, granola, a banana, and skim milk.

I didn’t have too much time to waste in the morning because I had physical therapy at 1:30, but I got some things done. I broke for a quick and easy lunch: leftover Roasted Corn Pudding in Kabocha Squash, a grapefruit, and Trader Joe’s Nonfat Vanilla Greek Yogurt. It was a little random, but it hit the spot.

My appointment went well! Allison gave me a few exercises that I can do on my own while I’m in bed, and as a result, my side glutes have been so sore the past two days! The foam roller feels unbelievable. She wants me to wait until next week to try running; in the meantime I can use the elliptical (which I am brainwashing myself into “liking”). My next appointment isn’t until Tuesday, so I have some time to work on the moves.

I snacked on a Honey Cashew YouBar on the way to the gym from PT. There will be a formal review of these products coming in the next few days, but until then, you can use the code Lilveggiepatch for a 5% discount at checkout.

At the gym, I stretched, climbed onto the Cross Ramp, cranked up the Gaga, and pounded away for 30 minutes. I like the Cross Ramp more than the elliptical because, judging from the statistics on my heart rate monitor, it’s almost as “efficient” as running and about twice as efficient as the recumbent bike. I cheated a little and started my cool down after 27 minutes… it’s entirely psychological, but I really hate staying on that thing after my time is up! I went uptown, showered, and rolled out on my dad’s foam roller. I’m going to be near Paragon today so I’ll pick up my own; Allison wants me to use it not only to loosen my muscles but for balancing ab exercises.

I snacked on a Jonagold apple from the orchard upstate… I used the honeybear for scaling purposes. Hugely delicious!

My mom and I went to a reading last night at The Center for Fiction (formerly known as The Mercantile Library). It’s a really nice space; the first floor is a great bookstore, and the second houses a membership library and readings. If it wasn’t so out of the way, I would certainly join! I love going to the library; as soon as I finish the book I’m reading now, I’m going to check out some new titles at the NYPL. Now, if only there were a lending library for clothes…

My dad made us a delicious dinner last night based around salmon steaks he picked up at Bouley Market. The fish is the same that is served in his restaurants, but he sells it to go at a really great price. Good to know! Maybe I can upgrade from my Trader Joe’s frozen salmon patties…

We snacked on crudités…

And ate avocado halves with balsamic vinegar, olive oil, sea salt & pepper…

Cajun-rubbed salmon, steamed swiss chard & brown rice…

… and drank big mugs of milk.

We had a dessert tasting with LaLoo Black Mission Fig Goat Milk ice cream and Bouley‘s fresh Rhubarb Sorbet. They complemented each other perfectly.

When I got home, Ari and I watched part of I’m Not There. Has anyone else seen it? It came out while I was in France, and I’ve never seen the whole thing all the way through. A lot of my favorites starred in the film, which I’d support even if it weren’t about Bob Dylan.

Well, I’m off to squeeze in glute-rolling some gym time before I meet George for lunch. Have a great day!

Good morning and happy Thursday! It’s going to be a good day, I can just tell How has your week been going? What was the most surprising or thing that brought you the most happiness?

The rolled oats stash still hasn’t been replenished, and I haven’t gotten a new batch of steel-cut whipped up yet, so I had to think a little about what I wanted for breakfast yesterday. I opened the fridge, pulled out the almond butter, and…

Oh no! Take me to a Trader Joe’s and make no stops on the way! Well, I don’t know when I’m actually going to get to TJ’s, so I tried to leave a little nut butter on the sides to make oats-in-a-jar when the time is right. That wasn’t enough for breakfast, though, so I pulled out a sample of Sunbutter that I’ve had lying around for a few months.

When squeezed out, it looks likes this:

One Ezekiel English muffin half had almond butter and TJ’s pumpkin butter, the other Sunbutter and raspberry jam.

The Sunbutter definitely tastes like sunflower seeds. I think I still prefer almond and peanut butters, but this was a nice change. I don’t know if I would buy a whole jar of this, but if I had more travel packets I would use them for on-the-go snacking.

I took all of my new vitamins with breakfast (except the melatonin, which is only for when I really can’t sleep at night).

Unfortunately I didn’t read the label carefully when I was at the store and bought the powdered Ester-C (which aids iron absorption) instead of the capsule, which means I have to drink it. And let me tell you, this is one of the worst tastes I’ve ever known.

I worked and researched most of the morning, and broke for lunch around noon before I had to leave for physical therapy. I made a big salad through my session:

In the mix:

1/2 head of romaine

grape tomatoes

1 orange

leftover roasted Brussels sprouts

julienned carrots

Trader Joe’s Vegetable Masala Burger

Trader Joe’s Three Layer Hummus

Cayenne pepper-spiked agave- cinnamon dressing

It was a big salad! I almost couldn’t finish it, but I’m not usually one to leave greens on my plate. I went into the city to get my H1N1 flu shot (seasonal flu shot has already sold out almost everywhere), then went across town to my physical therapy appointment. I was early, so I popped into Tasti to get a treat and read a little. I got a small cup of chocolate raspberry mousse:

My appointment went really well. I really like my therapist; she’s a former marathoner and current Half-Iron Man-er, and just seems to know what she’s doing (a welcome change). She worked with me for over an hour, and came to the same conclusion as the first PT: my muscles aren’t strong enough to support the kind of running I’m doing. If I want to be an endurance athlete and compete in races, my quads, glutes, calves, etc. have to be really strong. I need to work on strength moves, increasing my flexibility (stretching, rolling out with the foam roller) and core moves every day. My knees do point in (the first PT diagnosed me with “squinting patellae”) but strengthening my quadraceps will force them back into place. And the even better news? I can start back up again (slowly) in the next few days, and can run the 15K in December!!!

She asked if I’d be okay with running on the treadmill for a few minutes to analyze my gait, and you should have seen the way my eyes lit up. Running? Now? Even though I hate the treadmill, I felt like I was flying. I do pronate, and my hips do come out and come forward when they shouldn’t (which has caused tightness in my IT band that I didn’t even know about until she worked it through with her fingers), but it can all be corrected. Woohoo!!!! I’m going back today; she wants to see me twice a week for a month or so. Thank the lordy. If I had a job right now, I wouldn’t have this kind of flexibility!

On the ride home, I was hungry again so I snacked on a Trek Mix bar.

When I got home, I did some more searching and researching, and started to think about dinner. It was going to take a couple hours to make, so when Ari ordered sushi for himself and Josh I politely requested my very own sweet potato roll.

Seriously, I don’t know how I didn’t know about these until now. What would I do without Ilana and Ari? Amazing!

My own dinner was based on this recipe. When I went to the produce store, I found a squash I’d never seen before. It started with a G… Galaban? Galabaga? When I looked it up on this handy squash glossary, however, I discovered that it was one of the most popular squashes with bloggers: the kobucha!

These were sold already halved; each half was about 70 cents.

I changed the recipe a little bit; I halved the “pudding” recipe, only used egg whites (I don’t have whole eggs), didn’t use anise, and used red onions instead of scallions.

It took a long time to cook (about an hour and a half), but the results were worth it.

I ate one half of the squash and saved the rest for another day. It was really satisfying, and so good that I ended up eating the skin, too! Oops.

For dessert, I smeared a pumpkin bar with peanut butter. It wasn’t worth it: still tasted bad. Into the trash they go!

Ari and I took Carlye‘s suggestion and watched the pilot of Psych. We thought there would be a few more episodes on the first disc, but it was just the one! So off I go to the mailbox… must make sure there’s a Halloween movie here for Saturday!

Have a great day

Bonjournée et bon lundi, mes amis! How is your day going so far? I still can’t believe that it’s a) not summer, b) fall, c) October, and d) a month and a half away from THANKSGIVING?! WHAT? Ari and I made the happy mistake of watching Reality Bites on Saturday night (which, embarrassingly, I used to watch about 5 times a month during my Junior year of high school); I also read a letter my mom wrote to a friend on her 22nd birthday. Well? Everyone seems to feel a little “lost”, a little broke, a little… malformed… after graduation and before they find a career. My experience is not unique or exceptional and, well, it kind of helps to know that. Moving right along….

I got up bright and early on Sunday morning to go on a long run. I ate half a Chocolate Chip Clif bar, drank some water, and bagged up my gummies.

I ran at a snail’s pace. Shouldn’t I be getting faster, and not slower, as I keep doing this? I think it was my worst time ever. I’d planned on running 6.5 miles, but ended up stopping after 4.5 and didn’t end up needing my gummies. However, this didn’t bother me at all! It was not even 9 in the morning on a Sunday, and I’d already knocked out a decent run before breakfast. Not bad.

Total distance: 4.5 miles

Total time: 48:59

Maximum heart rate: 201 (102%)

Average heart rate: 164 (83%)

I had brunch plans with Kalle, Lisa, and Lizzie, so I grabbed an apple on the way out to keep the hunger beasts at bay.

We ate at City Bakery, and by the time we got there I was so thirsty and so hungry that I wanted to eat everything and it ended up taking me so long to actually pick out my food. Don’t you hate that?

I ended up loading my plate with smoked salmon, roasted cauliflower and butternut squash with Asian pears and hazelnuts (must make this):

I also got a bowl of fruit.

Black coffee and water was a must…

I also grabbed a bite of Lizzie’s cornbread/jalepeño/white cheddar sandwich. Great in theory, but strangely sweet in execution.

It was very nice to catch up with my ladyfriends… I do not do this nearly enough. On the way home, I stumbled upon a street fair and picked up cups of lemonade for me and my mom.

I was still parched… I’m usually very good about rehydrating after a run, but I was in such a rush to get out the door that I didn’t think about it. This will be a lot easier soon (hint, hint)! I was also, somehow, still hungry, so I made an open-faced sandwich with peanut butter, banana, honey & cinnamon when I got home.

A little later, George and Judy came over. My mom set out tomatoes with sea-salt and Maker’s Mark… that’s how we do it chez LVP.

I wasn’t feeling the whiskey, so I went for a nice glass of Riesling.

Ari came over, and we got the party started. My dad made us a feast! We had spicy ginger potatoes… who doesn’t like fancy home fries?

We also had spicy corn chowder (see a theme?), which I’ve been begging for for years.

Fresh-baked bread to sop it all up…

Sweet and spicy scallops…

It was a delicious meal, rounded out with wasabi-spiced cucumber salad.

My aunt, uncle and cousins sent a very special Edible Arrangements presentation:

My dad also made one of my favorite cakes…

Chocolate Hazelnut Cake, from this cookbook. It’s made without butter or egg yolks, but is so rich and flavorful.

I enjoyed my slice with quite a bit of fruit.

It was a fabulous birthday weekend, and I’m pretty sure I sailed through it on a constant sugar high. But wait! The treats will continue indefinitely; there are still a couple cupcakes left, and George and Judy gave me some fancy dark chocolate as well.

I also enjoyed some snail mail from my long-lost lovelies, Carlye and Luke, great new running gear, fashion items… very spoiled, I am.

Hope you had a wonderful weekend as well! I’m off to do more reading and job searching. Have a fabbity fab day!

Good morning and happy Wednesday! I can’t believe the week has flown by so fast… and I’m that much closer to being 22. I think I’ve turned a little anti-birthday, but maybe not. How do you feel about your birthday?

The night before last, I’d planned a really unique breakfast as I was lying in bed, trying to fall asleep. When I woke up, though, I was doubting my creative abilities and sent a frantic Tweet asking for some breakfast suggestions. A few minutes later, though, I went with my gut, and am I glad I did! I present you with: The Fall Smoothie.

This is made with:

homemade raw almond milk

1 banana

1/3- 1/2 cup puréed butternut squash

nutmeg

cinnamon

granola for garnish

Uh-MA-zing! If you make this and don’t have almond milk you’ve made yourself, I suggest throwing in a few whole almonds for thickness and added flavor.

As usual, I puttered around for a few hours before I was ready to go for a run. To hold myself over, I snacked on the last piece of butternut squash banana bread with a smear of peanut butter:

The run itself was uneventful, but I did have some lovely new music to keep me going.

Total distance: 4.5 miles

Total time: 43:46

Maximum heart rate: 186 (93%)

Average heart rate: 172 (86%)

Calories burned: 494

Lunch was exactly the same as dinner (hence the re-used photo). Blegh. Soup is finally all eaten up, though!

I made a pineapple spritzer using the juice that was left in the can and a little seltzer.

Both the run and lunch were starting to put me to sleep, so I brewed up some “Magic Feeling” tea that I got in Berlin (only in Germany, eh?).

I felt a little too magical, because I conked out for the next two hours. Whoops! When I woke up, I was ready to get cookin’. I snacked on three chunks of energy to get me moving again…

I’ve had the ingredients to make Veganomicon‘s Corn and Edamame-Sesame Salad for a while now, and at the very last minute I decided to add some diced grape tomatoes to the mix as well.

I also whipped up SELF‘s White Bean Consommé with Almond Milk, and halved the recipe so I wouldn’t have another soup sitch like last week!

It was lacking a little something, so I “remixed” it with alfalfa sprouts, chili flakes and Bragg‘s. Much better!

For dessert, I tried out my last new flavor of Vitamuffin, Deep Chocolate.

I crumbled it on top of a container of Trader Joe’s nonfat Organic Vanilla Greek Yogurt, and topped the whole thing with homemade almond milk. I don’t know if I’ve expressed how much I enjoy this yogurt before, but it’s amazing! You can actually see the specs of vanilla bean.

Well I’ve literally got to run out the door so I’m not late for my internship. Have a great Wednesday!

Good evening! I’m so sorry about the posting delay; I spent the weekend with older that, while it still works, is just not up to blogging speed. No matter! Today’s will just be Doublemint style; double the pleasure, and most definitely double the fun

On Friday morning, I made one of the best breakfasts I’ve had in a long time: Butternut Oatmeal Pie. The combination of flavors and textures really did taste like a Fall dessert!

In the bowl:

1/2 cup steel-cut oats, soaked overnight

butternut squash purée

Greek yogurt

walnuts

agave

cinnamon

nutmeg

I spent a lot of time puttering around, catching up on e-mails and cleaning. I ended up leaving the house pretty late, so my time at the gym was minimal! I did manage to get a total-body workout in, though: 10 minutes on the stairs, arms/lazy abs (one ab machine), and 10 minutes on the bike. It’s very efficient, if you only have half an hour. On the way in, I gobbled down a Trader Joe’s Mixed Berry Fiberful bar.

After making myself moderately presentable, I headed uptown to meet Caitlin for lunch at Alice’s Tea Cup.

I’m a creature of habit, and always order the Light Fare: small salad, soup & bread. I was very excited when I heard they were serving butternut squash soup… but, of course, it was made with chicken stock. Instead I ordered the lentil soup, which bummed me out a teensy bit because a) it seems like always have lentil soup, and b) I still have a big vat of leftover lentil sitting in the fridge! But it was still good, and their bread was amazing as usual.

The warm pear + endive salad with carmelized onions and roquefort cheese was, as always, very good…

I think I’m just a little burned out on the Tea Cup. Never thought that day would come? Neither did I. After lunch, Caitlin and I wandered around, hit up some sample sales, and wandered around trying to figure out what kind of tasty treat we were craving. Turned out to be… nothing! We couldn’t make up our minds, which I think was because we were actually pretty full from lunch. On my walk home, however, I stopped and bought an apple from a vendor on the street (and scored last month’s issue of SELF for $1!). Hit the spot!

A little while later I met up with Greg for dinner, and we stopped at our favorite Middle Eastern hole-in-the-wall for take-out falafel. The restaurant has undergone some ownership changes and is now lit with bright flourescents and features a Maoz-style logo. Strange. I ordered the falafel/hummus plate, which came with pita and about a pound of yummus. I ate all of the falafel (which was a little cold by the time we ate it, but still good) and a piece of pita, and saved the rest of the bread and hum for later.

We then went back out for drinks and chat…

… which led to this.

I don’t even really like Ben & Jerry’s, but Peanut Butter Cookie Dough? Half-Baked Frozen Yogurt? I couldn’t say no. I felt a little sick afterwards, to say the least… oops.

When I woke up the next morning, my mama was ready to RUN! We fueled up with coffee, and headed out for a leisurely 2 mile walk-run. When we got back, I dug into my hummus and pita leftovers, topping them with a microwaved egg, salt & pepper.

This was a delicious combination, and I’ll have to re-create it soon.

I also had 0% Fage, an apple and cinnamon.

Finally, my mom and I headed out to take on the day and run some errands. On our walk downtown, we got distracted by the delicious smells coming out of Georgia’s Bake Shop and stopped inside. I munched on a chocolate almond croissant to better fuel my shopping tasks. Scrumptiously decadent

We crossed everything off our our lists in record time, and did a stellar job shopping the sales. On the walk home, we munched on Gala apples.

I also introduced her to chunks of energy… she was a fan!

Since I never ate a formal “lunch”, I snacked pretty much throughout the entire day… when I was little, I followed the “six small meals” plan completely unknowingly! I like to sample, what can I say.

We had some surprise guests for dinner (Judy and Caitlin!), so I helped my dad get dinner ready. While we were prepping ingredients, I sipped on a glass of Black Box Wine Sauvignon Blanc.

Whenever we have company, everyone gravitates towards the kitchen!

My mom set out dried apricots, walnuts, and rosemary-baked bread sticks.

Dinner was superb. We started with avocado halves dressed with fresh lemon juice, olive oil, balsamic, salt & pepper.

And for the main event: mango/onion/green pepper salad with chili-infused dressing, shrimp stir-fry with homemade Italian egg noodles, and steamed asparagus.

For dessert, we had fresh figs dressed in lavender honey served with Haagen-Dazs’ Vanilla Swiss Almond ice cream.

It took a couple tries to get the ice cream right, though…notice anything funny?

The carton on the left was missing the chocolate-covered almonds, and they’re the best part! I’ll be calling the company tomorrow. Once, I bought a box of Oreos that were missing the cream filling! What’s the goofiest product blunder you’ve ever come across?

Regular posting will resume tomorrow. I hope you had a great weekend!

Good morning and a happy Friday! I am so excited for the weekend. For one of the first times in a long time, I feel like a weight has been lifted from my shoulders and everything really will be okay. Thank you so, so much for your kind comments on yesterday’s post. Leaving my job was a really hard decision for many reasons, but I smiled every time my phone buzzed with an e-mail yesterday. It’s incredible to know how supportive our community is!

Yesterday I’d planned to do another- my second- 6.4 mile run. I fueled up with a piece of peanut butter-topped butternut squash banana bread.

I was still really stiff from the 30/60/90 class, so I warmed up with Yoga For Runners. With loose mussels, I laced up and stuffed the Hammer Gel my dad gave to me into the tiny pocket of my running shorts for mid-run fuel.

Do you bring energy snacks for long workouts?

I ran to the same soundtrack I used on my first 6.4 miler… I’m a little superstitious about things like that. I didn’t have a problem with stitches until I was about 30 minutes into the run, but it wasn’t so bothersome. It got really bad during the last 1/2 mile, but since I could literally see my house I pushed myself through it. Erin gave me some great suggestions about belly-breathing, but I don’t seem to be able to puff out my stomach while inhaling! When I try, I sort of default into a double-inhale-gasp thing. Overall, the run was a success. I had to stop more than usual for traffic (which is a good thing, since I forgot to wear my RoadID), but now that I’ve done it twice I know that the first time wasn’t just a fluke! It’s very exciting for me

Total distance: 6.4 miles

Total time: 1:09:53

Maximum heart rate: 184 (92%)

Average heart rate: 171 (86%)

Calories burned: 773

I soaked some steel-cut oats in the fridge on Wednesday night, so when I came back from the run I dove into them.

Steel-cut oats expand a LOT; I had 1/2 cup of soaked oats with Greek yogurt, a banana, and cinnamon.

When stirred, they turn in to a sweet, tangy and delicious mess.

Paula made a return around lunchtime, when I enjoyed a bowl of leftover lentil soup.

I also gobbled up the last of my mom’s brown sugar Brussels sprouts. I LOVE Fall produce!

I packed up the last of my chunks of energy to snack on during my last wait shift ever (I hope).

I left a little early so that I could make two important stops.

Stop #1: Sephora! Ladies (and gentlemen), if you are not yet apart of the Beauty Insider Club, what are you waiting for?! I am not in any way affiliated with Sephora, but this perks club is the best. You get great online discounts, free goodies every time you earn a certain number of points, and birthday presents!

My birthday is still a week away, but they let me pick up it up early. Pretty sweet, hmm? I also took advantage of being in the store to play around with the makeup a little bit… killing time at Sephora is one of my favorite things to do. I can experiment in really silly ways without having to commit to actually buying a product (although I do that too, from time to time). ALSO, if you want to try out any of their skincare items, just ask! They’ll make you a nice little to-go sample.

Stop #2: Liquiteria for some Grasshopper Juice (pineapple, pear, apple, wheatgrass & mint). This is definitely not cheap, but it was my gift to myself for my last day of work. And lordy lord, is it tasty!

Before I went into work I decided that I was going to make this day one of my best. I was going to have fun, enjoy the company of my co-workers, and not let any restaurant stress get in the way. Behold the power of positive thinking…. It worked! I left on a very good note.

My dad came in for dinner, and after Judy joined him I got off early and we all went out to ice cream. I think I’ve successfully hooked them all on Stögo! From left to right:

Judy’s: Coconut Vanilla Bean/ Coconut Strawberry; Dad’s: Banana’s Foster/ Chocolate Hazelnut; Mine: Bananas Foster.

Now that I know how to make ice cream, Bananas Foster should be a cinch! This is made with banana “ice cream”, cinnamon, rum and caramel.

On the ride home, I dug into dinner (for some reason whenever I go to Stögo, I eat dessert first!). For my last meal, Ramón had hidden some of the scallops from our dinner special under my salad. He is so sweet.

I came home to an adorable goodie kit from April at Sweet Leaf Tea. I can’t wait to try out their different flavors! And I’m sure Ari can’t wait to try out those guitar pics

I slept hard last night, and now I’m off to the gym. What are your weekend plans? I’m looking forward to catching up with a lot of my best friends!

Have a great Friday

Edited to add: Congratulations to my friends Shannon and Fredo, who welcomed baby Lucia into the world yesterday afternoon!!!

Good afternoon, all! I hope your mornings have gone splendidly. Mine was excellent, and I’ve already got a lot accomplished. Like some other bloggers, I have some big news to share… not nearly as exciting as theirs, but it’s what’s best for me. Read on!

Breakfast yesterday was excellent. I love to taste as many things as possible, so I had my meal was both savory and sweet. I heated up an Ezekiel English muffin and topped one half with a mustard, a poached egg, and asiago cheese. The other half had almond butter and TJ’s pumpkin butter… I think I’m going to have to stock up on this stuff! Mmm.

While I got ready for work, I popped a loaf of butternut squash banana bread into the oven that I’d prepped the night before. I was completely taken with Liz‘s version of this, but I was too impatient to wait for the recipe! (Rumor is that she will post it tomorrow.) Instead, I used Veganomicon‘s recipe for Lower Fat Banana Bread and mixed in half a can of Organic Butternut Squash Purée (available at Trader Joe’s). I brought half a loaf to m boss at work, saved some for the house, and took a slice with me that I picked at throughout the day. This baby is dense! For some reason, the squash seems to bring out the bread’s spices more than regular banana bread. My boss later sent me an email describing it as “BANANA FUDGE!” It was so good.

The day before, I’d made another Veganomicon recipe (move over, Isa!) to get me through the week: Ancho-Lentil Soup with Grilled Pineapple.

While I didn’t make my own chili powder (I subbed in 1 tsp chili flakes) or blend half of the lentils (I prefer my soups chunky), this was divine.

I grilled up some canned pineapple slices on the George Foreman…

To make them transportable, I put two slices and a wedge of lime into a baggie.

There wasn’t too much for me to do at the office yesterday, so I left a little bit after 12. On my way out, I noshed on two vegan carob/nut/agave “chunks of energy” that I picked up last week at the health food store. I didn’t know if I would like them so I only got a few, but they were so good! I bought 7/$1.33, so the price is more than right.

Although I’d lugged my heavy gym bag through two boroughs, two trains and a long walk, I decided to just head uptown to my parents’ house. I cannot tell you how many times I’ve done this before! But I’d missed my yoga class, and I was too sore from a run and cardio class to work out any other way.

When I got home, I assembled my soup. Jim‘s got a little competition! Meet Paula.

The grilled pineapple was such a fresh twist on an old classic like lentil soup.

I loved it! I’m going to try to experiment more with sweet + savory from now on.

A little later, I snacked on a cup of Fage 0% (thanks for stocking this, Mom & Dad!) with an apple and cinnamon. Truly one of the greatest munchies around.

I decided to stay and have dinner with my parents… as my mom reminded me, I can’t remember the last time we all ate together.

Don’t you love Fall centerpieces?

Dinner was a joint effort: my dad made a fabulous Asian-inspired swordfish with basmati rice, and my mom made her famous brown sugar Brussels sprouts (just sauté cooked Brussels in butter and brown sugar).

For dessert, we split three Whole Foods petit fours three ways…

We also had squares of Côte d’Or’s dark chocolate with pistachios and sesame that my dad brought back from France.

This chocolate can be found in pretty much any supermarket and bodega in France, but don’t let that fool you! It’s AMAZING. The chocolate is rich and smooth, and filled with the most interesting ingredients. It’s my uncle’s favorite chocolate ever (and he’s a serious chocoholic), and my friends and I ate it all.the.time when we were in Paris. Look how thick it is!

When I got back to my apartment, I crashed into bed, stretched my aching bones, relaxed and watched The Secret Lives of Dentists. Has anyone seen this? What did you think? I love Hope Davis, and Campbell Scott always makes me think of Singles!

So, onto my news. I’ve tried to leave my work life at work, but, as you probably know, I work in a restaurant as a waitress. I’ve worked at this particular place for the past three summers, starting in May after my sophmore year of college. That first summer was probably the best: I felt exhilarated after finishing half of college, I met some really great people (through the restaurant), and Ari and I started dating. Last year was fun as well; I’d just come back from a great semester in Paris and I was beginning to feel more like an adult. This year, however, after having graduated, has been more of a reality check. I wasn’t in school anymore, and this wasn’t just a “summer job.” Because of the recession, business has been incredibly slow and I had nights where I came home with literally $1. Customers treated me with unbelievable rudeness; there were two instances when I had to call the police. I was working crazy hours and not getting any rest, crying myself to sleep more than I’d like to remember. (Ari has been so, so great throughout all of this; without him, I never would have been able to hold out this long.) I was expending all of my energy on a job that made me utterly miserable. I haven’t been able to do what I love because I haven’t even had time to think about what that might be. And, as silly as it sounds, I don’t want to turn still be working there when I turn 22.

So, last week, I informed the restaurant that I would be leaving the following week…. today is my last day. On the one hand, I feel bad about leaving the people that I’ve come to really enjoy spending time with. On the other, I’d rather spend time with them in a stress-free setting. This is what’s best for me. It’s scary, because while I’m searching for a “real” job, I won’t be earning any income. Lucky for me, my parents are amazing and are going to help out a little bit. I will definitely be budgeting like a madwoman and putting my all into finding a job. I don’t expect to find my dream job right away, but I know I have to get out of the service industry. I have so much respect for the millions of people who work in service, retail, and manual labor. I just can’t do it anymore.

On another happy note, I finally tracked down the Fuze Heroes For Hope photo Ilana and I took at the 5K Race For the Cure.

Off to go make my last day my best. Have a great Thursday
